Oatmeal Chocolate Chip Cookie Bars are thick and chewy and a great treat for potlucks and parties. They have the flavor you love from a great chocolate chip cookie, baked into easy and delicious bars!

1 cup butter (, room temperature)
1 cup light brown sugar (, packed)
1/2 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1 1/2 cups all-purpose flour
2 cups old-fashioned rolled oats
2 cups chocolate chips (semi-sweet, milk chocolate, or a little of both!)

Steps:

  • Preheat oven to 350 degrees F. Lightly grease a 9 x 13 inch pan with cooking spray or line with parchment paper.
  • In a large mixing bowl beat together the butter, brown sugar, and white sugar until smooth and light.
  • Add the eggs one at a time, mixing after each addition. Add the vanilla.
  • In a separate bowl combine the dry ingredients: salt, baking soda, baking powder, flour and rolled oats.
  • Add dry ingredients to the creamed mixture and stir until combined. Stir in chocolate chips.
  • Press into prepared ban and bake for 25 to 30 minutes or until golden brown. Allow to cool completely before cutting.

Among Mother's old newspaper clippings and recipes scribbled on the back of envelopes, I came across this treasured recipe. It always gives me a warm feeling when I go through her recipe box, and I have fond memories of her baking these cookies.

1 cup butter, softened
1 cup sugar
1/2 cup packed brown sugar
1 large egg, room temperature
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1-1/4 cups quick-cooking oats
1 cup Grape-Nuts
1 teaspoon baking soda
1 teaspoon baking powder

Steps:

  • In a large bowl, cream butter and sugars and fluffy. Beat in egg and vanilla. Combine the flour, oats, cereal, baking soda and baking powder; gradually add to creamed mixture and mix well. , Roll into 3/4-in. balls. Place 2 in. apart on ungreased baking sheets; flatten with a fork. , Bake at 375° for 10-12 minutes or until lightly browned. Cool for 3 minutes before removing to wire racks.

2 sticks (8 ounces, 1 cup) unsalted butter, melted
1 cup light brown sugar, packed
1/2 cup granulated sugar
2 large eggs plus 1 egg yolk, at room temperature
2 tablespoons milk
1 tablespoon vanilla extract
1 and 2/3 cups all-purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
1/2 teaspoon ground cinnamon
2 cups rolled oats
1 and 1/4 cups chopped dark chocolate OR your mix-in of choice (see post for ideas!)
1 teaspoon flaky sea salt, optional

Steps:

  • Preheat oven to 350 degrees (F). Line an 9x13-inch baking pan with parchment paper or aluminum foil. Spray lightly with non-stick spray and set aside.
  • In a saucepan over medium heat, melt the butter, then continue to cook it, stirring occasionally, until golden brown. Keep an eye here, you don't want burnt butter! Remove from heat and scrape the butter into a large heat proof mixing bowl.
  • Whisk in both sugars and mix until well combined. Stir in the vanilla. Then add in the eggs and egg yolk, beating until combined. Stir in the milk.
  • Using a rubber spatula, add in the flour, baking soda, salt, cinnamon, and rolled oats, mixing until just combined. Finally, fold in the chocolate chunks. Scrape the batter into the prepared pan.
  • Bake for 24 to 30 minutes, or until the edges are firm and golden. Press extra chocolate chunks on top of the warm bars, if desired.
  • Cool in pan for at least 1 hour before cutting. Sprinkle with flaky sea salt before serving, if desired.

2 dozen oatmeal cookies (Dad's by Nabisco)
1/2 cup butter, divided
3 semi-sweet chocolate baking squares
1 teaspoon vanilla
1 egg
1 1/2 cups powdered sugar (icing)
1/2 cup chopped nuts

Steps:

  • Crush 2 dozen cookies in the blender and add 1/4 cup melted butter.
  • Mix together, reserving 1/4 cup for topping.
  • Pat in greased 8 x 8 pan and bake for 10-15 minutes at 350°.
  • Let cool.
  • Melt together in double boiler 3 squares semi-sweet chocolate and 1/4 cup butter.
  • Add 1 teaspoon vanilla and 1 egg and mix well.
  • Remove from heat and add 1 1/2 cups icing sugar and 1/2 cup chopped nuts.
  • Put on top of cooled crust and sprinkle remaining cookie mixture on top of filling.
  • Place in fridge and let cool before slicing.

1 c all-purpose flour
1 tsp salt
1/2 tsp baking soda
3 c dry oatmeal
3/4 c crisco
1 c brown sugar, packed
1/2 c white sugar
1 large egg
1/4 c water
1 tsp vanilla
OPTIONS, ADJUST AMOUNTS TO TASTE OR USE ANY COMBINATION
1/2 c raisins, more or less
1/2 c craisins (cranberry raisins)
1/2 c chocolate or butterscotch chips
1/2 c flaked coconut
1/2 c chopped walnuts

Steps:

  • 1. Preheat oven to 350 degrees F. Grease or spray cookie sheets.
  • 2. Put the dry ingredients (flour, salt, baking soda, and oatmeal) in a medium bowl. Mix together well.
  • 3. NOTE: I mix the ingredients in this recipe by hand, using the large meat fork from my cutlery set. After years of it taking up space in my drawer, it gets used several times a week now. This photo shows the meat fork next to a regular dinner fork. If you've got one, use it!
  • 4. Put the rest of the ingredients (Crisco, brown sugar, white sugar, egg, water, and vanilla) in a larger bowl. Mix together well.
  • 5. Add the dry ingredients to the sugar mixture and mix until well-combined.
  • 6. Add any optional ingredients you like. In my family, some like plain oatmeal cookies and others like raisins, so I make the plain ones first, then stir in a few raisins to finish out the baking. (I've also been known to separate the cookie dough into separate bowls & add a little bit of different extras to each bowl.) Make them any way you like. Cookies should be fun! =^..^=
  • 7. Drop with a teaspoon (or a small scoop) on the prepared cookie sheets. Bake at 350 degrees F for 7-10 minutes, depending on how soft or crunchy you like your oatmeal cookies.
  • 8. Cool on cooling racks. Or eat them warm. You know you want to! Pass the milk, please. =^..^=

This is a recipe I got from my friend Mabel many years ago. They are a delicious and easy cookie to make. You can freeze the logs and take them out when you want to bake them. Chill time is not reflected in the preparation time so plan ahead.

1 teaspoon baking soda
¾ teaspoon salt
1 cup white sugar

1 ½ cups rolled oats
½ cup flaked coconut
¾ cup vegetable oil
2 eggs
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large bowl, stir together the flour, baking soda, salt, white sugar, brown sugar, oats and coconut. Make a well in the center and pour in the oil, eggs and vanilla. Mix well using your hands or a wooden spoon. Roll the dough into walnut sized balls and place 2 inches apart onto the prepared cookie sheets. Flatten slightly with a fork.
