¾ cup tightly packed dark brown sugar
½ cup white sugar

1 tablespoon molasses

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine 1 cup butter, brown sugar, white sugar, eggs, molasses, and 1 1/2 teaspoon vanilla extract in a large bowl; beat with an electric mixer until creamy.
  • Mix flour, cinnamon, baking soda, and salt together in a separate bowl. Stir into the creamed butter mixture. Mix in oats until evenly incorporated. Fold cinnamon chips into the dough.
  • Drop tablespoonfuls of dough onto ungreased baking sheets.
  • Bake in the preheated oven until edges start to brown, 10 to 12 minutes. Transfer to wire racks to cool.

For the whoopies pies:
1-1/2 cups brown sugar
1/2 cup white sugar
1-1/2 sticks unsalted butter, room temperature (3/4 cup)
2 large eggs, room temperature
1 tsp vanilla extract
2-1/2 cups flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp coarse salt (or 1/2 tsp table salt)
1 tsp cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground ginger
2 cups quick cooking oats
1-1/2 cups grated carrots (about 2 carrots)**
1-1/4 cups golden raisins (optional)
NOTE: **You could leave out the carrots, and these would simply be Oatmeal Whoopie Pies
For the filling:
3 cups confectioners' sugar
1/2 cup (1 stick) unsalted butter, softened
4 oz. cream cheese
1 teaspoon pure vanilla extract
3 Tablespoons pineapple jam (optional)
1/4 sweetened coconut, toasted at 325F for about 10 minutes and cooled (optional)

Steps:

  • Preheat the oven to 350F. Line two baking sheets with parchment paper or a Silpat baking mat. (I used a Norpro Muffin Top baking pan, but this isn't mandatory.) In the bowl of a stand mixer, with the paddle attachment (or a hand held mixer), combine the sugars and butter. Beat until fluffy--about 3 to 4 minutes. Add the vanilla and eggs, and beat until well combined. In a large bowl, sift together the flour, baking powder, baking soda, salt, cinnamon, nutmeg and ginger and whisk together. Slowly add the flour mixture to the butter mixture; mix on low speed until just combined. Stir in the oats, carrots and raisins with a spatula. Using a medium ice cream scoop, scoop dough onto the prepared sheets, leaving at least 2 inches between cookies. Gently press the cookies until flat. Bake between 12-15 minutes, turning halfway through to ensure even baking. They should be lightly golden brown around the edges. NOTE: These make 8 HUGE whoopie pies, so user a smaller scoop to make smaller whoopie pies. Reduce the baking time between 10-12 minutes each. Transfer to a wire rack to cool completely. To make the frosting: In the bowl of an electric mixer fitted with the paddle attachment, beat butter until smooth. Add cream cheese and beat until well combined. Add confectioners' sugar and vanilla, beat just until smooth. (Filling can be made up to a day in advance. Cover and refrigerate; let stand at room temperature to soften before using.) To assemble the whoopie pies, turn one cookie with the baked bottom facing up. Scoop some filling, and gently press another cookie on top. Wrap in plastic wrap. Keep whoopie pies refrigerated, and bring to room temperature about 30 minutes before eating. Stores for up to 5 days, refrigerated.

1 teaspoon baking soda

2 sticks unsalted butter, at room temperature
3/4 cup packed dark brown sugar
1/2 cup granulated sugar
2 large eggs

Steps:

  • Make the cookies: Whisk the flour, malted milk powder, baking soda, cinnamon and salt in a medium bowl; set aside. Pulse the oats and almonds in a food processor until coarsely ground; set aside.

Steps:

  • Preheat oven to 350 degrees, with racks in upper and lower thirds. In a large bowl, whisk together flour, salt, baking powder, baking soda, and cinnamon. In another large bowl, using an electric mixer, beat butter, brown and granulated sugars, and molasses on high, scraping down bowl, until light and fluffy, 4 minutes. Add vanilla; beat until combined. Beat in eggs, one at a time, scraping down bowl after each addition.
  • With mixer on low, add flour mixture and beat just until combined. With a rubber spatula, stir in oats and raisins. Drop dough in 2-tablespoonful mounds, 2 inches apart, onto two baking sheets. Bake until cookies are just set at edges and slightly soft in middle, about 11 minutes, rotating sheets halfway through. Let cookies cool on sheets, 5 minutes. Transfer to wire racks and let cool completely.
  • In a medium bowl, using mixer, beat cream cheese and confectioners' sugar until light, 2 minutes, scraping down bowl as needed. Spread filling on flat side of half the cookies. Sandwich with remaining cookies.

4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, softened
3 Tbsp. butter
1/4 cup apple butter
2 cups powdered sugar
1/3 cup butter
1/2 cup packed brown sugar
1/4 cup granulated sugar
1/2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. ground cinnamon
1 egg
1/2 tsp. vanilla
3/4 cup flour
1 cup rolled oats
2/3 cup peeled and chopped apples

Steps:

  • Heat oven to 375ºF.
  • Note: The apple butter and Neufchatel cheese mixture MUST be made first. With a hand mixer, mix Neufchatel cheese, 3 Tbsp. butter and apple butter. Slowly add powdered sugar and mix until smooth. Place in the refrigerator immediately. Mixture needs to become more solid for easier spreading.
  • To make the cookies, start by mixing 1/3 cup of butter in a large bowl. Add brown sugar, granulated sugar, baking powder, baking soda and cinnamon; mix well.
  • Once mixed, beat in egg and vanilla. Beat in flour. Stir in oats and apples.
  • Drop cookie dough onto an ungreased cookie sheet (12 per batch= 2 batches). Bake for 8 to 10 minutes or until done. Allow to cool.
  • Once cooled, remove the Neufchatel cheese mixture from the refrigerator. Spread mixture on bottom side of one cookie, then add another cookie to make a sandwich. Repeat with remaining cookies.

1 pouch (1 lb 1.5 oz) Betty Crocker™ peanut butter cookie mix
3 tablespoons vegetable oil
2 tablespoons water
2 eggs
1 pouch (1 lb 1.5 oz) Betty Crocker™ oatmeal cookie mix
1/2 cup butter, softened
1 container Betty Crocker™ Whipped whipped cream frosting

Steps:

  • Heat oven to 350°F. In medium bowl, stir together peanut butter cookie mix, oil, 1 tablespoon of the water and 1 of the eggs until dough forms.
  • In another bowl, stir together oatmeal cookie mix, butter, remaining 1 tablespoon water and remaining egg until dough forms.
  • Using small (2-teaspoon size) cookie scoop, scoop balls of dough onto ungreased cookie sheets (make 36 peanut butter cookies and 36 oatmeal cookies). Make sure cookies are uniform in size and DO NOT flatten peanut butter dough with a fork.
  • Bake 10 to 12 minutes or until light brown and edges are set. Remove from cookie sheets to cooling racks; cool completely.
  • For each cookie pie, spread about 1 tablespoon frosting on bottom of 1 peanut butter cookie. Top with 1 oatmeal cookie, bottom side down; gently press together. Store loosely covered at room temperature.

1 1/4 c butter, softened
1 c brown sugar, firmly packed
1/2 c granulated sugar
1 large egg
2 tsp vanilla extract
1 1/2 c all purpose flour
1 tsp baking soda
1/2 tsp salt
1/4 tsp ground cinnamon
3 c quick-cooking oats
CREAM FILLING
1/2 c butter, softened
2 c sifted confectioners' sugar
1 - 2 Tbsp whipping cream (half-and-half cream or even milk may be used)
1 tsp vanilla extract

Steps:

  • 1. Preheat oven to 375.
  • 2. Beat butter and sugars at medium speed with an electric mixer until creamy. Add egg and vanilla, beating well.
  • 3. Lightly spoon flour into dry measuring cups, and level with a knife. Combine flour and next 3 ingredients in a bowl, stirring well. Add oats; stir well. Add to butter mixture; stir until well blended. Drop by rounded tablespoons 2 inches apart onto baking sheets lined with parchment paper. Bake at 375 for 10 minutes. Cool on pan 2 to 3 minutes. Remove cookies from pan; cool on wire racks.
  • 4. Spread 1 tablespoon Cream Filling over each bottom side of half of cookies; top with remaining cookies, right side up. Yield: Makes 3 dozen oatmeal cookies or 18 cream pies.
  • 5. Directions for cream filling: Combine all ingredients in a medium bowl. Beat with an electric mixer on low speed until combined, scraping bowl. Beat on high until light and fluffy.

Taste better than store-bought little debbie cream pies, and leave you wanting more and more and more! Creamy peanut butter and chewy oats together in a cookie sandwich filled with sweet marshmallow creme with a touch salt makes it really stand out in a crowd. I got the recipe from Better Homes and Gardens 100 Best Cookies magazine, and made them for the Holiday Cookie Swap 2011.

1/2 teaspoon baking soda
1/2 teaspoon salt

1/2 cup shortening

Steps:

  • Preheat oven to 350 degrees.
  • Grease a cookie sheet, set aside.
  • In a small bowl, combine flour, baking soda, salt, and baking powder; set aside.
  • In a large bowl, beat butter and peanut butter with an electric mixer on medium speed until combined.
  • Beat in granulated sugar and brown sugar until fluffy.
  • Beat in egg and vanilla.
  • Using a wooden spoon, stir in the flour mixture and oats just until combined.
  • Drop dough by rounded teaspoons 2 inches apart on prepared cookie sheet.
  • Bake 8-10 minutes or until edges are light brown and centers are set.
  • Cool on cookie sheet for a few minutes, then transfer them to a wire rack.
  • In a medium bowl combine the hot water and the salt, stirring until salt dissolves.
  • Add marshmallow creme, shortening, and powdered sugar.
  • Beat with an electric mixer on medium speed until combined.
  • Spread marshmallow mixture on the bottom sides of half the cookies. Top with the remaining cookies, bottom sides down, to make cookie sandwiches.
