Pork Chops? Apples? Why not combine the two? This is one of the best 'comfort foods' I've ever had, and if you're looking for a little Thanksgiving flavor any time of the year this is the recipe for you. *This recipe would also be good over a grill, just make sure to wrap each prepared chop in aluminum foil and grill over low heat until 160 degrees.

3 boneless pork chops, thin cut
1 (35 g) packet instant apple and cinnamon oatmeal
1/8 teaspoon ground allspice
1/4 teaspoon ground nutmeg (fresh)
1 tablespoon all-purpose flour
1 large egg
1/4 cup 2% low-fat milk

Steps:

  • Grind oatmeal until it's a course powder.
  • In a large mixing bowl combine the oatmeal with the allspice, nutmeg, and flour.
  • In a small bowl combine the egg and milk.
  • Coat each pork chop with the egg mixture and then a coating of oatmeal, set aside.
  • In a large skillet cook the pork chops on low for about 15 minutes or until done (internal temperature of 160).

These oatmeal cookies are very moist with a good flavor. Add a cup of raisins or nuts if you desire.

1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 ½ teaspoons ground cinnamon
3 cups quick cooking oats

Steps:

  • In a medium bowl, cream together butter, white sugar, and brown sugar. Beat in eggs one at a time, then stir in vanilla. Combine flour, baking soda, salt, and cinnamon; stir into the creamed mixture. Mix in oats. Cover, and chill dough for at least one hour.
  • Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets. Roll the dough into walnut sized balls, and place 2 inches apart on cookie sheets. Flatten each cookie with a large fork dipped in sugar.
  • Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
