This is by far the best apple dessert I've ever tasted! The topping tastes just like an oatmeal cookie. It's the perfect combination of crunchy, chewy cookie and buttery soft apples. Great dessert for a party or family gathering (double the recipe in a 9x13-inch baking dish) or to make just for yourself on a chilly evening. Simply delicious.

6 cups peeled and sliced apples
½ cup white sugar
1 tablespoon all-purpose flour
1 teaspoon ground cinnamon
¼ teaspoon salt
¾ cup old-fashioned rolled oats
¾ cup all-purpose flour
¾ cup brown sugar
½ teaspoon baking soda
¼ teaspoon baking powder
½ cup butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix apples, white sugar, 1 tablespoon flour, cinnamon, and salt together in a bowl; spread into an 8-inch square baking dish.
  • Combine oats, 3/4 cup flour, brown sugar, baking soda, and baking powder together in a separate bowl; add butter and mix until crumbly. Crumble topping evenly over apple filling using your hands.
  • Bake in the preheated oven until topping is lightly browned, 30 to 40 minutes.

The crumble topping can be made and frozen up to 1 week ahead of time while the full crisp can be assembled and refrigerated up to 1 day before, so it can easily be baked to serve after Thanksgiving dinner.

For the Almond-Oat Crumble:
1 cup all-purpose flour
1 cup granulated sugar
1 cup old-fashioned oats
1/2 cup (packed) light brown sugar
1 teaspoon vanilla extract
3/4 teaspoon baking powder
3/4 teaspoon ground cinnamon
1/2 teaspoon kosher salt
1/4 teaspoon freshly grated nutmeg
3/4 cup (1 1/2 sticks) unsalted butter, cut into pieces, room temperature
1/2 cup sliced almonds
For the Apple-Cranberry Filling:
7 1/2 pounds baking apples (such as Honeycrisp, Braeburn, and/or Golden Delicious; about 16), peeled, cored, cut into 1/8" slices
1 1/4 cups fresh or frozen cranberries, thawed if frozen
1 cup granulated sugar
1/2 cup all-purpose flour
1/2 teaspoon finely grated orange zest
2 tablespoons fresh orange juice

Steps:

  • Make the crumble:
  • Mix flour, granulated sugar, oats, brown sugar, vanilla, baking powder, cinnamon, salt, and nutmeg in a large bowl. Add butter and mix with your hands until mixture feels like damp sand and clumps form. Add almonds and mix with a wooden spoon until evenly distributed and large, walnut-sized clumps form. Freeze 30 minutes.
  • Make the filling:
  • Toss apples, cranberries, granulated sugar, flour, orange zest and juice, cinnamon, salt, and nutmeg in a large bowl. Let stand 10 minutes.
  • Bake the crisp:
  • Meanwhile, preheat oven to 350°F. Place baking dish on a foil-lined rimmed baking sheet (if using a Dutch oven, you don't need the baking sheet).
  • Toss apple mixture again, then transfer to baking dish, leaving some juices behind. Break crumble into smaller pieces, leaving some larger clumps. Top apples with crumble, mounding slightly if needed.

1 tablespoon lemon juice
2 tablespoons granulated sugar

1/4 cup brown sugar
1 teaspoon vanilla extract
1/4 cup flour
1/4 cup quick oats
1 tablespoon cinnamon
1 teaspoon cinnamon
1/4 teaspoon nutmeg

1 pinch clove
1 pinch cardamom
1 pinch allspice
1 tablespoon lemon juice
1 cup granny smith apple
2 cups sweet baking apples

Steps:

  • Cream 1/4 cupsugar, butter together, stirr in flour, 1 tsp cinnamon and oats and form into crust on greased pan, saving 40 percent of the dough for the top layer of crust.
  • Simmer granny smith or other tart apples with lemon juice, unti mushy, allow to cool and marinate sweet baking apples with tart mixture for 4 hours.
  • Blend remaining spices, brown sugar and rub over apples.
  • Add apples to crusted sheet and crumble remaining dough over apples.
  • Bake at 350 for 25 to 40 minutes, checking every 5 minutes to make sure batch is not overdone.
