¼ cup quick-cooking oats
1 tablespoon brown sugar
1 tablespoon melted butter
¼ teaspoon ground cinnamon
1 ½ cups quick-cooking oats
1 ¼ cups all-purpose flour
2 tablespoons all-purpose flour
½ cup brown sugar
1 ½ teaspoons ground cinnamon
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup unsweetened applesauce
½ cup milk
¼ cup vegetable oil
1 egg, lightly beaten
1 teaspoon vanilla extract
1 apple - peeled, cored, and chopped

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a 12-cup muffin pan or line with paper liners.
  • Stir 1/4 cup oats, 1 tablespoon brown sugar, melted butter, and 1/4 teaspoon cinnamon together in a small bowl; set aside.
  • Whisk together 1 1/2 cups oats, flour, 1/2 cup brown sugar, 1 1/2 teaspoons cinnamon, baking powder, baking soda, and salt together in a large bowl.
  • Stir applesauce, milk, oil, egg, and vanilla extract together in a bowl. Stir applesauce mixture into flour mixture just until all ingredients are moistened; stir in apple. Spoon apple mixture into prepared muffin cups about 2/3 full; sprinkle oat topping mixture evenly over each muffin.
  • Bake in the preheated oven until a toothpick inserted near the center comes out clean, about 15 minutes.

This is my favorite recipe because it adapts so well to variations. To make these delicious muffins even more hearty, I sometimes add chopped apple, raisins or shredded carrots.

1 cup old-fashioned oats
1 cup buttermilk
2 eggs, lightly beaten
1 cup all-purpose flour
1/3 cup packed brown sugar
1-1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda

Steps:

  • In a large bowl, combine oats and buttermilk; let stand 5 minutes. Stir in eggs. Combine flour, brown sugar, baking powder, cinnamon and baking soda; stir into oatmeal mixture just until moistened. Fill greased or paper-lined muffin cups two-thirds full. Bake at 400° for 18-20 minutes or until muffins test done. Cool in pan 10 minutes before removing to a wire rack.

My husband thinks I should open a muffin shop Ha Ha, so I have been playing with different types of muffins. Today I felt like oatmeal raisin muffins.

2 c bisquick
3/4 c quick cooking oats
1 Tbsp canola oil
1 tsp cinnamon
1 tsp vanilla extract
1 c raisins
1/3 c sugar
2/3 c milk

Steps:

  • 1. Pre heat oven 400 degrees, line a muffin pan with cupcake liners
  • 2. slightly beat the egg, add all the remaining ingredients, mix until the ingredients are wet, don't over mix.
  • 3. I use an ice cream scoop and scoop the mixture in the cupcake liners, I got 7 muffins out of this batter, depends on how big or small you want the muffins.
  • 4. Place in the oven and bake 18-20 mins, until golden brown. I will let you know how the family likes it when they get up, which will be soon when they smell these....mmmm

2 apples
2 eggs
1 cup full-fat greek yogurt
⅓ cup honey
2 teaspoons vanilla extract
2 ½ cups rolled oats
2 teaspoons baking powder
1 pinch salt
1 tablespoon ground cinnamon
1 cup almond milk
¼ cup blueberry, as desired
¾ cup dried cranberries, as desired
sliced almond, as desired
rasberry, as desired

Steps:

  • Peel the skin from the apples and grate on the coarse side of a cheese grater. Set aside. (To prevent browning, place grated apples in a bowl and cover with lemon juice and water. Drain before adding to the batter.)
  • Preheat oven to 350°F/180°C.
  • In a large bowl, beat the eggs with a whisk until foamy and pale.
  • Add the greek yogurt, honey, and vanilla, to the bowl and whisk until the mixture is thick and well combined.

These muffins have an excellent taste and texture. They are wonderfully moist and soft inside. They are perfect for breakfast: a couple of them keeps me going the whole morning. They can be frozen and come out of the freezer just as fresh as from the oven. I found this recipe in Internet several months ago and I made little changes on it until I got the perfect muffins for me. I hope you will enjoy them as well! In the preparation time I don't include the time while the oats and the sour milk are standing in the bowl (1 hour).

1 cup rolled oats
1 cup flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1/3 cup butter, softened
1 egg
1 cup buttermilk or 1 cup sour milk (1 cup slightly warm milk with 1 tablespoon vinegar)
3/4-1 teaspoon salt
1/2 cup white sugar or 1/2 cup brown sugar (little bit less if the muffins are going to be topped with cinnamon sugar)
cinnamon sugar, as topping (optional)

Steps:

  • Combine oats and buttermilk or sour milk in a bowl, mix and let stand 1 hour.
  • Sift together flour, baking soda, baking powder and salt.
  • Cream together butter and sugar with an electric mixer.
  • Add the egg and beat until light and fluffy.
  • Add to the flour mix and stir.
  • Add the oat and sour milk mix and stir until just combined.
  • Fill a greased muffin tin (mine is for 12 small muffins, 2 and 3/4 inches in diameter in the widest part).
  • Top with a little cinnamon sugar if desired.
  • Bake at 400o Farenheit for 20 minutes.
  • The muffins are ready when a stick inside them comes out clean.

1 cup gluten free rolled oats
1 1/4 cups rice milk (or other nondairy milk)
1/4 cup Earth Balance margarine (or butter if you tolerate it)
1/3 cup brown sugar
1 egg
1 teaspoon vanilla extract
1 cup gluten-free flour (see Gluten Free Flour Blend)
2 -4 tablespoons hemp protein powder (or other favorite protein powder)
4 tablespoons flax seed meal
1 teaspoon cinnamon
1 teaspoon xanthan gum or 1 teaspoon guar gum
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
2 -3 tablespoons cinnamon sugar

Steps:

  • Preheat oven to 400°. Grease a 12-cup muffin tin.
  • Combine the oats and the milk and let stand for 10 minutes.
  • Meanwhile, in a large bowl, cream together the Earth Balance, brown sugar, egg and vanilla; add the oat mixture and stir to blend.

These muffins are pretty much awesome. They're really healthy and really good too! Lots of whole grains, not too much sugar, and a burst of cinnamon in every tender, delicious bite. My brothers love them. Good warm or cold. The original idea came from the More-With-Less Mennonite cookbook, but I've made enough changes to claim it as my own recipe. :) This recipe makes two dozen muffins, so just cut it in half if you have a smaller family.
