1-1/4 cups boiling water
1 cup quick-cooking oats
1/4 cup butter, softened
1 cup packed brown sugar
1/2 cup sugar
2 large eggs, room temperature
1/4 cup unsweetened applesauce
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
ICING:
1/2 cup packed brown sugar
1/4 cup butter, cubed
1/4 cup fat-free milk
1/2 teaspoon vanilla extract
1/8 teaspoon salt
1-1/2 cups confectioners' sugar

Steps:

  • In a small bowl, pour boiling water over oats; let stand 10 minutes. , Meanwhile, preheat oven to 350°. In a large bowl, beat butter and sugars until crumbly, about 2 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in applesauce and vanilla. Combine flour, baking powder, cinnamon, baking soda, salt and nutmeg. Gradually add to creamed mixture. Stir in the oats. Pour into a greased 13x9-in. baking pan., Bake until a toothpick inserted in center comes out with moist crumbs, 18-22 minutes. Cool completely on a wire rack., For icing, in a small saucepan, combine brown sugar and butter. Bring to a boil over medium heat, stirring constantly. Cook and stir for 1 minute. Gradually whisk in milk. Return to a boil. Cook and stir 1 minute. Transfer to a small bowl. Stir in vanilla and salt. Gradually beat in confectioners' sugar until smooth. Immediately spread icing over cake. Let stand until set.

1 ⅓ cups quick cooking oats
½ cup white sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
½ teaspoon baking soda
½ cup raisins
1 cup mashed bananas
¼ cup skim milk
2 egg whites
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix together dry ingredients. In a separate bowl mix together bananas, egg whites, milk and vanilla. Beat all together.
  • Bake in a 9 x 13 inch pan which has been sprayed with non-stick spray for about 35 minutes. Cool and cut into bars. You may sprinkle with cinnamon and sugar, if desired.

I made up this recipe a few months ago based on a couple other tried and true recipes. The bars are dense and chewy, like a good blondie. The caramel frosting isn't like gooey caramel, but rather it is like pralines.

2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
3/4 cup butter, softened
2 cups packed light brown sugar
2 large eggs
2 cups quick-cooking oats
1 cup diced ripe firm banana
1/4 cup butter
1/2 cup packed dark brown sugar
2 tablespoons milk
1 cup confectioners' sugar, sifted

Steps:

  • Preheat oven to 350.
  • Grease a 13x9 baking pan with nonstick cooking spray.
  • In a medium bowl, combine flour, baking powder, baking soda, and salt.
  • Set aside.
  • Cream the butter and brown sugar.
  • Add the eggs, one at a time, and beat until blended.
  • Add the flour mixture slowly, mixing just until blended.
  • Mix in the oats on low speed.
  • Gently stir in the banana by hand until just combined.
  • Spread batter in prepared pan and bake for 25 minutes.
  • Put on a wire rack to cool.
  • While the bars are cooling, make caramel icing.
  • Put ¼ cup butter and ½ cup dark brown sugar in a medium saucepan and cook and stir over medium heat until mixture comes to a boil.
  • Add milk and bring the mixture back to a boil.
  • Remove from heat and add confectioners' sugar.
  • Stir vigorously until the mixture is smooth.
  • While it is still warm pour it over the warm bars and spread to cover evenly.
  • Work quickly so the icing doesn't harden.
  • Immediately sprinkle chopped pecans evenly over the icing.
  • When completely cool, cut into 18 bars.
