APPLESAUCE OATMEAL BREAD
We liked the expensive bread from the grocery store for toast. This is better, and you can cut it as thick or thin as you like! It is also really good for french toast. I always use my ABM to knead it for me then I rise it and bake it in a regular loaf pan.

Steps:
- In microwave, heat cider to 110-120°. In bread machine pan place warmed cider, brown sugar and yeast. Allow yeast to bubble for 10 minutes.
- Add applesauce, butter, salt, spice and oats to pan. Add flour last.
- Set machine to dough cycle and after it runs through, remove dough and form into a loaf. Place in greased loaf pan and turn to coat. Cover with plastic and a towel and let rise in a warm place till doubled, about an hour.
- Bake 350° for 25-30 minutes till golden and hollow sounding. Cool in pan for 10 minutes and remove.

I ran across a similar recipe on the King Arthur web site, but not having their exact ingredients, I substituted my own, and got this lovely loaf of tea bread. This is wonderful with butter, or with plain or flavored cream cheese.

- 1. Preheat oven to 350°F. In a large mixing bowl, mix together the sugar, eggs, coconut oil, and vanilla until mixture is creamy.
- 2. In a separate bowl, mix together the flours, baking powder, baking soda, spices, and salt. Add the dry ingredients to the wet ingredients in the mixing bowl. Blend in the rolled oats, applesauce, and walnuts. Place the mixture in a greased loaf pan. Press the 2 tablespoons of rolled oats evenly over the top of the batter. I used a long teabread-sized pan (12x4x3"), but a regular 9x5" loaf pan will also work.
- 3. Bake for 45-55 minutes, until a toothpick comes out clean when tested in the center of the loaf. Cool completely in the pan before slicing. * A 9x5" loaf pan may take an hour to bake.

- Preheat oven to 350 degrees. Combine all dry ingredients mix well . Then thoroughly mix wet and combine them with the dry just until mixed . Be careful not to over mix because this will cause your bread to tough. Spray a 9x5 loaf pan with your choice of cooking spray . Bake for 50 minutes or just until a tooth pick comes out clean .

- Preheat oven to 350 degrees. Sift dry ingredients together in a large bowl. Stir in oats. Beat applesauce, oil, eggs, and milk together. Add applesauce mixture to dry ingredients and stir only until moistened. Pour into greased loaf pan. Bake at 350 degree for 50-55 minutes. Cool on rack and serve warm with butter.
