I haven't tried these yet, but they look delicious and healthy! The recipe comes from the Keystone Inn in Gettysburg, Pennsylvania.

Yield 12 muffins

Number Of Ingredients 12

1 egg
3/4 cup milk or 3/4 cup soymilk (to make the muffins dairy-free)
1 cup raisins
1 chopped apple
1/2 cup oil
1 cup all-purpose flour
1 cup quick oats
1/3 cup sugar
3 teaspoons baking powder
1 teaspoon salt
1 teaspoon nutmeg
2 teaspoons cinnamon

Steps:

  • Beat egg; stir in remaining ingredients, mixing just to moisten.
  • Pour into 12 greased or paper-lined muffin cups until 3/4 full.
  • Bake at 400° for 15 to 20 minutes.
  • Serve cool or piping hot with butter.

I got this recipe online. These muffins are not very sweet so if desired up the amount of sugar for a sweeter muffin.

1 c whole wheat flour, i used freshly ground
1 c oats
1/3 c brown sugar
1 Tbsp baking powder
1/2 tsp salt
1 tsp nutmeg
1 Tbsp cinnamon
1 large egg
3/4 c milk
1/2 c melted butter
1 c apple, peeled and diced small
1 c raisins

Steps:

  • 1. Combine the dry ingredients
  • 2. Combine the wet ingredients
  • 3. Combine the 2 mixtures just until moistened
  • 4. Stir in the apples & raisins
  • 5. Spoon into prepared muffin tins
  • 6. Bake at 350' for about 15 minutes testing with toothpick for doneness

Number Of Ingredients 15

2 tablespoons rum
3/4 cup dark raisin
1 egg, lightly beaten
1 1/4 cups buttermilk
1/2 cup brown sugar
1/3 cup shortening, melted
1 cup all-purpose flour
1 cup quick-cooking oats
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1 cup green apple, cored, peeled and diced

Steps:

  • Preheat oven to 375 degrees F.
  • Soak the raisins for 15 minutes in the rum before mixing into batter. This will plump, refresh and add extra flavor to your raisins. Set aside.
  • To a small mixing bowl add the beaten egg, buttermilk, brown sugar and melted shortening; stir well to combine.
  • To a larger mixing bowl, combine the remaining ingredients. Make a well in the center of the dry ingredients; pour in the buttermilk mixture. Give a good stir. Add the raisins and apple to the batter and continue to stir just until the dry ingredients are moistened. (DO NOT OVER BEAT - IT SHOULD ONLY TAKE ABOUT 20 or 30 STROKES BY HAND.)
  • Spoon the batter into 12 paper-lined muffin cups; fill 2/3 of the way.
  • Bake for 17 to 20 minutes, or until lightly browned around the edges.
