Steps:
- Heat a large deep skillet or Dutch oven over medium-low heat. Pour in the olive oil, and let it heat up. Add the oats; cook and stir until toasted.
- In a blender or large food processor, combine the tomatoes, onion, garlic, 1 cup of water, and cilantro. Blend until smooth. Pour into the pan with the toasted oats. Stir in the remaining 2 cups of water, and bring to a boil. Mix in the salt and chicken bouillon. Cover, and simmer for 15 minutes. Enjoy hot or warm.

CREAMY OATMEAL SOUP
This delicious soup is a bit unusual...and very comforting. I found it in an out-of-print cookbook long ago. I've adapted it a bit since then.

Steps:
- In a heavy, dry saucepan, toast the oats over medium heat until they are medium brown. Watch carefully and stir often! Remove from heat and set aside.
- In a saucepan, heat the oil and saute the onion and garlic until soft. Add the stock , oatmeal and tomatoes. Bring to a boil over medium heat. Cover reduce heat to simmer for 5 minutes or so.
- Add the milk, soy sauce and salt. Taste and add a bit of pepper if you like.

An unusual but hearty soup. If too thick, thin with more broth or water. With a slice of thick bread you can call this lunch.

GARLIC OATMEAL SOUP

- As instructed in website:.
- Prepare the soup in a saucepan that holds at least two quarts.
- Start by toasting the rolled oats in the saucepan: Heat over medium temperature for about three minutes, stirring frequently to avoid burning.
- The oats are toasted when they darken slightly and start to smell like toasted grain.
- Put them in a dish and set aside.
- Put the chopped onion and garlic in the saucepan and cook for a few minutes, stirring.
- Some of the onion may stick to the bottom, because you're not using oil, but it doesn't matter.
- Add the chopped tomato and the broth, and stir to release any stuck-on bits of onion.
- Bring the soup to a simmer.
- Add the toasted oatmeal and continue to simmer, uncovered, for 10 minutes, stirring occasionally.
- Taste the soup and add salt if needed.
- Serve immediately.
- Note: Leftovers will taste just as good, but the texture becomes a little cereal-like if you don't serve it right away.

GRANDMA'S MEATLOAF WITH OATS
Grandma's meatloaf recipe was the best I have ever tried to make. My previous attempts to create a healthy, yet good tasting meatloaf recipe failed repeatedly because each attempt resulted in a dry loaf. Not so with Grandma's recipe! I added more seasonings and scaled her recipe up a bit so 2 full pounds of beef can be used and a whole can of tomato sauce (instead of a partial can). Plus beef is usually sold in 1-pound packages, so assembly time is reduced.

- Preheat the oven to 350 degrees F (175 degrees C).
- Mix together ground beef, oats, tomato sauce, eggs, onion, garlic, salt, and pepper until well combined. Press into a 9x5-inch loaf pan.
- Bake in the preheated oven until an instant-read thermometer inserted into the center reads at least 160 degrees F (71 degrees C), about 1 hour.
- Remove from the oven and spread ketchup over top. Serve with additional ketchup.

MOM'S BEST EVER TURKEY MEATLOAF
This recipe was modified from one I found in a cookbook published by "The Turkey Store". My family, and everyone I have ever served it too love it and can't believe that it is low fat, low cholesterol. And recently I started substituting oatmeal for bread crumbs since my husband's doctor put him on an even stricter diet than before. It is easy, there is no need to sauté the onions, bell pepper and garlic before mixing with the rest of the ingredients. It is also moist and very tasty. I usually serve with baked sweet potatoes and fresh green beans. It makes GREAT sandwiches the next day.

- Spray 9 x 5 loaf pan with cooking spray.
- Combine all ingredients except tomato sauce and 1 tbsp Worcestershire in large bowl and mix well.
- Add more egg if too dry, or add more oatmeal crumbs if too wet.
- Press turkey mixture into pan.
- Bake at 375°F for 45 minutes.
- Mix tomato sauce and remaining 1 tablespoon Worcestershire together in small bowl.
- Remove meatloaf from oven and pour tomato sauce mixture over meatloaf.
- Return to oven for an additional 15- 20 minutes.
- If using 99% Fat Free ground turkey breast meat, there is no need to drain fat before pouring tomato sauce on and returning to oven.
- If you use the regular ground turkey, which is about 7% fat you might want to drain the fat off before pouring the tomato sauce on the loaf.
