Number Of Ingredients 9

1/2 cup almonds, whole
1/2 cup walnuts or 1/2 cup pecans, whole
1 cup rolled oats
1/2 cup unbleached flour
1 pinch sea salt
3 tablespoons canola oil or 3 tablespoons butter, melted
3 tablespoons maple syrup
1 tablespoon water
1 tablespoon vanilla extract

Steps:

  • 1. Preheat the oven to 350°F.
  • 2. Bake the almonds and walnuts or pecans on separate baking sheets until they are fragrant and toasted: about 8 minutes for pecans or walnuts, 10 minutes for almonds. Remove from the oven and set aside to cool. Raise the oven temperature to 375°F.
  • 3. Grind the oats in a blender or food processor until they become a coarse meal. Empty into a large mixing bowl.
  • 4. Grind the almonds and walnuts or pecans into a coarse meal and add to the oats, along with the flour and salt.
  • 5. In a small bowl, whip together the oil or butter, maple syrup, vanilla and water. Add to the oat-nut mixture and mix well. Allow the mixture to sit for 10 minutes in the refrigerator.
  • 6. With cold, wet hands, press the crust mixture into a well- oiled tart or pie pan. Bake for 8 to 10 minutes or until barely golden brown.
  • 7. Set aside to cool. Then add pie filling and bake for additional 30 to 35 minutes.

Nonstick baking spray
1/2 cup all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon ground allspice
1/4 teaspoon ground cinnamon
1/4 teaspoon kosher salt
1/8 teaspoon ground nutmeg
3 tablespoons vegan butter, at room temperature
1/3 cup packed light brown sugar
1/4 cup granulated sugar
1 large egg, at room temperature
1/2 teaspoon pure vanilla extract
1 1/3 cups old-fashioned rolled oats
1/3 cup pecans, roughly chopped
1/3 cup raisins
3 large eggs, lightly beaten
One 15-ounce can pure pumpkin puree
1 cup oat milk
3/4 cup packed light brown sugar
1 teaspoon ground ginger
1/2 teaspoon kosher salt
1/2 teaspoon pure vanilla extract
Vegan whipped cream, for serving

Steps:

  • For the crust: Preheat the oven to 350 degrees F. Grease a 9-inch deep dish pie pan with nonstick baking spray. Line a baking sheet with parchment paper.
  • Whisk together the flour, baking soda, allspice, cinnamon, salt and nutmeg in a small bowl.
  • Combine the vegan butter, brown sugar and granulated sugar in the bowl of a stand mixer fitted with the paddle attachment. Mix on medium-high speed until light and fluffy, about 4 minutes. Scrape down the sides of the bowl with a rubber spatula. Add the egg and vanilla extract. Mix on medium speed until combined.
  • With the mixer running on low, add the dry ingredients until combined; do not overmix. Fold in the oats, pecans and raisins with a rubber spatula. Chill the dough in the fridge for at least 1 hour.
  • Scoop twelve 1 tablespoon-size balls onto the baking sheet. Press the remaining dough into the bottom of the prepared pie pan.
  • Bake the cookies until golden brown, 10 to 12 minutes. Bake the pie crust until golden brown and the center is cooked through, 18 to 20 minutes. Remove from the oven and cool completely.
  • For the filling: Reduce the oven temperature to 325 degrees F. Combine the eggs, pumpkin puree, oat milk, brown sugar, ginger, salt and vanilla extract in a medium bowl. Place the cooled pie crust on a rimmed baking sheet and pour in the pumpkin filling. Bake until the filling is set, about 1 hour 20 minutes. Transfer to a cooling rack.
  • Dollop the vegan whipped cream around the edges of the pie and arrange the cookies in ring around the outer perimeter. Serve immediately.

1/2 cup quick-cooking oats
1/2 teaspoon salt
1/4 cup canola oil
3 to 4 tablespoons cold water
FILLING:
2 cups water
1 package (.8 ounces) sugar-free cook-and-serve vanilla pudding mix
1 package (.3 ounce) sugar-free raspberry gelatin
4 cups fresh raspberries

Steps:

  • In a food processor, combine the flour, oats and salt. While processing, slowly drizzle in oil. Gradually add water until a ball forms. Roll out dough between two sheets of waxed paper. Remove top sheet of waxed paper; invert dough into a 9-in. pie plate. Remove remaining waxed paper. , Trim and flute edges. Line unpricked pastry with a double thickness of heavy-duty foil. Bake at 450° for 8 minutes. Remove foil; bake 5-7 minutes longer or until golden brown. Cool on a wire rack. , In a large saucepan, heat water over medium heat. Whisk in pudding mix. Cook and stir for 5 minutes or until thickened and bubbly. Whisk in gelatin until completely dissolved. Remove from the heat; cool slightly. Fold in raspberries. Spoon into crust. 1 tablespoon blanched almond
3/4 cup whole wheat pastry flour
2 -3 tablespoons oil
1 -2 tablespoon ice water

Steps:

  • In a blender or food processor, combine the oats and almonds and grind to a coarse powder.
  • Transfer to a large bowl.
  • Add the flour and mix well.
  • Drizzle on the oil and incorporate it with a pastry blender or your fingers until the mixture resembles coarse cornmeal.
  • Sprinkle in enough of the water (mixing it lightly with a fork) to moisten all the flour and make a dough that you can form into a ball.
  • Flatten the dough into a circle about 1/2-inch thick On a lightly floured board or a sheet of waxed paper, roll the dough into a thin (about 1/8 inch) circle about 11 inches diameter.
  • Line a 9-inch pie pan with the dough and trim the edges to leave a 1/2-inch overhang all around.
  • Use the overhang to form a fluted edge.
  • Place the crust in the freezer for at least 20 minutes.
  • Fill the shell and bake it according to the directions of your specific recipe.

  • 2. Press into a greased pie dish to shape.

2 C. flour
1/2 C. quick cooking rolled oats
1 tsp. salt
2/3 C. shortening
8 to 10 Tbsp cold water

Steps:

  • 1. In medium bowl stir together flour, oats, and salt. Using pastry blender, cut in shortening until pieces are pea-size. 2. Sprinkle 1 Tbsp. water over part of mixture; gently toss with fork. Push moistened dough to side of bowl. Repeat, using 1 Tbsp water at a time, until all dough is moistened. Divide in half; form each half into a ball. 3. On lightly floured surface, flatten 1 dough ball. Roll from center to edge into 12-inch circle. 4. To transfer pastry, wrap around rolling pin; unroll into 9-inch pie plate, being careful not to stretch pastry. Trim pastry even with rim of pie plate. Fill pie plate with filling. 5. On lightly floured surface roll remaining dough to 14-inch circle; cut slits for steam to escape. Place on top of fruit filling; trim to 1/2 inch beyond edge of pie plate. Fold op crust under bottom crust; crimp edge. Makes pastry for 2-crust pie.
