Categories     Dinner, Main course

Time 1h35m

Number Of Ingredients 22

1 tbsp olive oil
15g butter
1 large onion, finely chopped
2 sticks celery, finely chopped
2 garlic cloves, finely chopped
200g chestnut mushrooms, finely chopped
1 red pepper, halved, deseeded and finely diced
1 large carrot, grated
1 tsp dried oregano
1 tsp smoked paprika
100g red lentils
2 tbsp tomato purée
300ml vegetable stock
100g fresh breadcrumbs
150g mixed nuts such as walnuts, pecans, hazelnuts and Brazil nuts, roughly chopped
3 large eggs, lightly beaten
100g mature cheddar, grated
handful flat-leaf parsley, finely chopped
2 tbsp extra virgin olive oil
2 garlic cloves, finely sliced
1 sprig rosemary
400ml passata

Steps:

  • Heat the oven to 180C/ fan 160C/ gas 4 and line the base and sides of a 1.5 litre loaf tin with parchment paper.
  • Heat 1 tbsp olive oil and 15g butter in a large frying pan and cook 1 finely chopped large onion and 2 finely chopped celery sticks for about 5 mins until beginning to soften.
  • Stir in 2 finely chopped garlic cloves and 200g finely chopped chestnut mushrooms and cook for a further 10 mins.
  • Stir in 1 finely diced red pepper and 1 grated carrot and cook for about 3 mins then add 1 tsp dried oregano and 1 tsp smoked paprika and cook for just a minute.
  • Add 100g red lentils and 2 tbsp tomato purée and cook for about 1 min, then add 300ml vegetable stock and simmer over a very gentle heat until all the liquid has been absorbed and the mixture is fairly dry. This should take about 25 minutes. Set aside to cool.
  • Finally, stir in 100g fresh breadcrumbs, 150g chopped mixed nuts, 3 lightly beaten large eggs, 100g grated mature cheddar, a handful of finely chopped flat-leaf parsley and a pinch of salt and some ground black pepper.
  • Stir to mix well then spoon the mixture into the prepared tin and press down the surface.
  • Cover with foil and bake for 30 mins, then remove the foil and bake for a further 20 mins until firm when pressed gently.
  • Meanwhile, to make the sauce, heat 2 tbsp extra virgin olive oil very gently then add 2 finely sliced garlic cloves and 1 rosemary sprig and heat without colouring.
  • Pour in 400ml passata and add a pinch of salt and some ground black pepper. Simmer gently for just 15 mins.
  • Allow the loaf to cool in the tin for about 10 mins then turn out onto a serving board or plate. Remove the baking paper and cut into slices and serve with a little of the tomato sauce.
  • To make a vegan nut roast, use an extra tbsp of oil in place of butter, no cheese and 3 tbsp egg replacer. Bake your nut roast for 1 hour. The loaf will still be soft in the middle after cooking.
  • It can be cooked in advance and then chilled, sliced and reheated to make it easier to serve.

ROAST CHICKEN WITH RICE AND PINE NUT STUFFING

Roast Chicken With Rice and Pine Nut Stuffing image

Whole chickens are so easy to make and really look impressive on the dinner table. This recipe creates a well-seasoned and juicy chicken with a wonderfully flavorful stuffing. I have made this recipe a number of times over the years and have always had outstanding results and raves. I found the recipe in 365 Ways to Cook Chicken. Sometimes I add cooking wine to the water that the rice cooks in.... otherwise I really don't need to change a thing. --Note-- This Chicken makes an Outstanding Chicken Salad for sandwiches the next day. Simply mix the left over chicken and stuffing with mayonnaise. It is hard to get the chicken salad onto the bread without eating it all before hand!

BEST-EVER VEGETARIAN NUT ROAST

Best-ever vegetarian nut roast image

If you think nut roast is a boring vegetarian cliche, think again! This little beauty is chock full of delicious nuts, seeds and spices that come together in a taste sensation. Don't be put off by the number of ingredients - most of these are lurking in the average spice rack and it comes together really quickly and easily. It works brilliantly as a roast dinner but also anywhere you would normally use mince, such as in a bolognese sauce, "meat"balls, rissoles, chilli or shepherds pie. If making for Christmas, you can add lots of allspice and nutmeg in addition to the named spices for a lovely festive flavour, and wrap the nut mixture in puff pastry to make a delicious Wellington-esque dish, or make sausage rolls with the mixture. The possibilities are endless!

Provided by Philippa Moore

Time 1h30m

Yield Serves 6

Number Of Ingredients 20

1-2 tablespoons olive oil
200g (1 large bag) walnut pieces
100g (half a large bag) whole almonds
200g other mixed nuts (I tend to use cashews, pinenuts and pecans)
1 cup sunflower seeds
2 teaspoons sweet smoked paprika
2 teaspoons fennel seeds
1 teaspoon mustard seeds
1 teaspoon coriander seeds
2 teaspoons mixed spice
Roughly 1½ cups breadcrumbs (add more if too wet)
1 egg
1 x 400g can chopped tomatoes, drained (reserve the juices for gravy)
2 large handfuls fresh flat leaf parsley
2 teaspoons Marmite
Juice of ½ a lemon
1/4 cup grated strong vegetarian Cheddar cheese
¾ of a medium red onion
1 teaspoon Dijon mustard
Salt and freshly-ground black pepper

Steps:

  • Grease and line a large loaf tin and set aside. If you're cooking the roast straight away (see step 4), preheat the oven to 180C (fan).
  • Heat the olive oil in a large frying pan on medium-high heat. Once the pan is hot, toast the nuts, seeds and spices, tossing everything to coat well. Be very careful and do not let it burn. Toast for a few minutes, or until the mixture is fragrant and starting to turn golden, then turn off the heat and let it cool slightly.
  • Add the cooled nuts and spices to the bowl of a food processor. Add all other ingredients. Blitz until thoroughly combined, or combined to your liking (it can be nice if left a little chunky). You might need to stop and scrape it down a few times. If it's too wet, add more breadcrumbs. If it's too dry, add a little water, reserved tomato juice or even a dash of red wine if you've got some handy!
  • Place in the prepared pan and ideally leave for a few hours (or overnight is even better) in the fridge to let the flavours deepen and the loaf firm up. If you're in a hurry you can cook it straight away, but ideally give it at least an hour's resting time.
  • Preheat oven to 180C (fan). When ready, cook the roast for 45 minutes to an hour until firm and golden. Allow to cool slightly before carving then serve with all your favourite roast vegetables.

ROAST CHICKEN WITH COUSCOUS & PINE NUT STUFFING

Roast chicken with couscous & pine nut stuffing image

Delicious hot or cold and perfect for a picnic, this stuffed chicken will be a real family favourite

Provided by Good Food team

Categories     Buffet, Dinner, Lunch, Main course, Supper

Time 1h50m

Number Of Ingredients 13

100g couscous
175ml boiling chicken stock
50g butter
1 onion , finely chopped
1 garlic clove , crushed
100g pine nut
140g dried apricot , roughly chopped
large handful parsley , roughly chopped
2 tbsp mint leaves, roughly chopped
1 lemon
1 egg , beaten
6 skinless chicken breasts
16 rashers streaky bacon

Steps:

  • Put couscous in a large heatproof bowl, pour over stock, then cover with cling film for 5 mins until liquid is absorbed. Melt half the butter in a pan, then gently cook onion and garlic for 5-8 mins until soft. Set aside. Dry-fry pine nuts for a few mins until golden. Combine onions, pine nuts, apricots and herbs with couscous. Add a good squeeze of lemon juice, season, then stir in egg. Leave to cool.
  • Using the back of a knife, stretch rashers to 1½ times their original length. Lay, slightly overlapping, on a large sheet of foil to form a rectangle. Make a few slashes in the thickest part of each chicken breast and lay between 2 sheets of cling film. Use the base of a heavy pan to bash the chicken until about 1cm thick. Arrange chicken over the bacon, fitting so there are no gaps, but leave a border on longer sides. (This helps to roll up the chicken.)
  • Spoon stuffing over chicken in a strip along one of the longest sides. Using tin foil to help, roll bacon and chicken around stuffing like a log. Wrap tightly in foil, twisting the ends to secure, then chill for 2 hrs or up to 1 day.
  • Heat oven to 180C/fan 160C/gas 4. Place chicken, join-side down, in a roasting tray. Cook for 30 mins, then unwrap foil and brush roast with remaining butter. Cook, uncovered, for 20-30 mins more until cooked through, and the stuffing is hot (a metal skewer inserted into the chicken's centre should come out hot). Cool and wrap in fresh foil to transport.

VEGAN NUT ROAST

Vegan nut roast image

Combine root vegetables with mushrooms, grains, hazelnuts and fresh herbs to make this stunning vegan centrepiece. Top with parsnip crisps for added crunch

Provided by Sarah Cook

Categories     Main course

Time 2h5m

Number Of Ingredients 16

150g pearl barley (uncooked weight)
1 vegan vegetable stock cube (check the packet)
330g parsnips, peeled and cut into chunks
2 tbsp ground linseeds (or flaxseed)
3 tbsp olive oil, plus extra for greasing
1 onion, halved and sliced
3 garlic cloves, crushed
400g mixed mushrooms, cleaned and sliced
5 rosemary sprigs, leaves stripped, plus extra to decorate if you like
6 sage leaves, shredded
100g blanched hazelnuts, toasted until golden
50g vegan Italian-style hard cheese, grated (optional)
small pack flat-leaf parsley, finely chopped
a good grating of nutmeg
3 tbsp pumpkin seeds
handful parsnip crisps with sea salt & black pepper (optional)

Steps:

  • Cook the pearl barley with the stock cube according to pack instructions. Reserve 4 tbsp of the cooking stock, then drain the grains well.
  • Bring a large pan of salted water to the boil, then add the parsnips, and cook until really soft. Drain well, tip back into the pan to steam dry for a few minutes, then roughly mash. Mix the ground linseeds with the reserved stock water, and leave to go gluey.
  • Put 2 tbsp of the oil in your largest frying pan with the onions and garlic. Fry gently until soft and golden, then stir in the mushrooms, rosemary and sage. Fry the mushrooms until they're golden too, and any liquid that comes out has evaporated. Scrape into a big mixing bowl and set aside to cool.
  • Grease a 22-24cm savarin or ring tin generously with oil. If it's not a non-stick tin, line it with thin strips of overlapping baking parchment.
  • Add the mashed parsnip, cooked pearl barley, gluey seed mix, grated vegan hard cheese (if using), chopped parsley and whole hazelnuts to the fried mushroom mixture. Season generously with salt, then mix everything together really well.
  • Spoon the filling into the tin, and press down firmly to fill the tin and flatten the top. Bake straight away or keep in the fridge for up to 24 hrs before baking.
  • Heat the oven to 200C/180C fan/gas 6 and cover the tin with foil. Bake for 45 mins, until a skewer poked into the centre of the mixture comes out piping hot.
  • Use a small palette knife or cutlery knife to release the filling all the way around, then sit a serving plate on top and flip over. Carefully lift off the tin, and top the wreath with some parsnip crisps if using and whole pumpkin seeds to serve - plus some extra rosemary sprigs if you like. Slice into wedges and enjoy.

HONEYED SQUASH & NUT ROAST CAKE

Honeyed squash & nut roast cake image

Wow guests with this stunning honeyed squash and nut roast cake. It makes a crowd-pleasing veggie centrepiece for a celebration - perfect for Christmas

Provided by Anna Glover

Categories     Dinner, Main course

Time 1h35m

Number Of Ingredients 10

300g mixed nuts (Brazil nuts, pecans, hazelnuts, walnuts and almonds all work well)
1 large carrot, grated
1 celery stick, grated
1 onion, grated
400-500g (½ medium) butternut squash, peeled, halved crosswise just above the bulb end
2 tbsp olive oil, plus extra for the tin
3 tbsp honey or maple syrup
180g vacuum-packed cooked chestnuts
50g almond, cashew or peanut butter
small bunch of sage, leaves picked

Steps:

  • Put the mixed nuts into the bowl of a food processor and blitz until finely chopped, then tip out into a bowl. Alternatively, roughly chop using a knife. Put the carrot, celery and onion in a frying pan. Cut the long, thin half of the squash in half lengthways or into quarters (depending on how wide it is) and slice into long, thin slices using a sharp knife or mandoline (reserve the thicker bulb half of the squash for another recipe).
  • Drizzle the oil over the veg in the frying pan, then fry for 15-20 mins over a low-medium heat until golden and soft. Scrape the mixture into the chopped nuts and stir in 2 tbsp honey, the chestnuts and nut butter. Stir everything together, then season.
  • Oil a 20cm springform cake tin and line the base with baking parchment. Arrange 3-5 sage leaves in the tin, face-down. Finely chop the rest of the sage leaves and add them to the nut mixture. Arrange some of the squash slices in the base of the tin, laying them neatly so the layers overlap slightly to form a spiral pattern. Drizzle over ½ tbsp of the remaining honey. Spoon in half the nut mixture, pressing it firmly into the tin with the back of a spoon, then top with another layer of squash, this time in a single layer rather than overlapping - this will make it easier to cut later. Drizzle over the rest of the honey. Spoon in the remaining nut mixture and press it in firmly with the back of a spoon. Any remaining squash will keep in the fridge for up to three days to use in tarts and quiches, or to be grilled for salads.
  • Heat the oven to 180C/160C fan/gas 4. Cover the tin with foil and roast for 30 mins, then uncover and roast for another 20 mins until the top of is golden and crisp. Leave to rest for 15 mins, then invert onto a plate and cut into wedges to serve.

CHICKPEA AND MILLET NUT ROAST

Chickpea and Millet Nut Roast image

There is nothing more traditional for a vegetarian than a nut roast! It is perfect on Sunday with vegetables, crispy roast potatoes and onion gravy. Of course, at Christmas, when the carnivores are tucking into their turkey, every self-respecting vegetarian or vegan is sitting down to their nut roast with trimmings. I know there are plenty of nut roast recipes out there, but I thought I would develop my own anyway. All the ingredients in this recipe are readily available and it is easy to make.

Provided by Tim Barker

Categories     Nuts

Time 50m

Yield 1 1 loaf, 4-6 serving(s)

Number Of Ingredients 20

100 g millet (200ml water)
400 g chickpeas (or dried chickpeas)
1 teaspoon marmite or 1 teaspoon soy sauce
1 vegetable stock cube
75 g roasted sunflower seeds (without shells)
75 g non-salted peanuts (roughly ground)
25 g dried chopped cranberries (optional)
2 garlic cloves
1 medium onion (finely chopped)
2 tablespoons freshly chopped parsley (or dried parsley)
1 teaspoon freshly chopped basil (or dried)
1 teaspoon fennel seed
1 pinch chili powder
2 tablespoons olive oil
1 teaspoon lemon juice
1 teaspoon brown sugar
1/2 teaspoon wine vinegar
50 g breadcrumbs
3 tablespoons warm water
salt and pepper

Steps:

  • Put the millet to a saucepan and add the 200ml of water and vegetable stock cube. Bring to the boil and cook for about 10 to 15 minutes, stir occasionally to prevent the millet sticking to the pan. When all the water is absorbed it is ready. (The cooked millet should be a mushy consistency, which will help the nut roast bind together) Leave the millet on the side for a few moments to cool.
  • Dry roast the sunflower seeds. Heat a non-stick pan without any oil on a medium heat. Add the sunflower seeds and heat until they start to go brown.
  • Dry roast the fennel seeds in a pan without oil until they start to go brown. Then grind in a pestle and mortar.
  • Grind the peanuts in a pestle and mortar. However, they do not need to be ground too finely, just roughly.
  • Mash the chickpeas in a large bowl and add all the ingredients together (including the millet) and mix well. Add the breadcrumbs last followed by the 3 tbsp of warm water. Mix with your hands so that the mixture binds together to form a dough.
  • Press into a loaf tin (or any square or rectangular baking tin you have) Bake in the oven for 30 - 40 minutes at 180C/35F Gas mark 4 until the top starts to brown nicely.
  • Turn out onto a plate and garnish with parsley and lemon. Slice and serve with onion gravy or your favourite sauce and vegetables. Of course with chips and ketchup is great too.
  • N.B.
  • 1. Red or white kidney beans can be used instead of chick peas.
  • 2. Salted peanuts can be used, but this means that less salt should be added to the recipe as a whole.
  • 3. I use a loaf tin which is 23cm x 10cm x 6cm.

ALMOND & SESAME NUT ROAST WITH MUSHROOM-ONION SAUCE

Almond & Sesame Nut Roast With Mushroom-Onion Sauce image

This is from a vegetarian cookbook - which is probably out of print - called "Cooking for Today Simple Vegetarian Recipes" published by Whitecap books... I've tried lots of different "meat" loaves and they all sucked - mostly I think b/c they contain Tofu. I love tofu - but I don't think it belongs in "meat" loaf. This Roast/Loaf turned out really delicious. I made it for a dinner party and everyone loved it - and they said it went good especially with the Mushroom sauce... I'm allergic to mushrooms and ate my slices with ketchup - it was still loverly :)

Transfer the mixture to a greased 1 lb loaf pan, levelling the surface. Bake in a preheated oven at 350-F degrees for about 1 hour, until set and firm. Leave in the pan for 10 minutes.

LAYERED CASHEW AND MUSHROOM NUT ROAST

Layered Cashew and Mushroom Nut Roast image

This recipe was given to our family about 20 years ago and it goes very well with the vegetarian gravy from recipe 243433. This recipe is an excellent roast to have for a Christmas dinner. Most meat eaters will try it and proclaim they like it more than the turkey! I have often made double and frozen it to be used later on as it is a little long to make. Substitute the fresh herbs for half the amount of dried.

150 ml hot water or 150 ml stock
salt & freshly ground black pepper
25 g butter
225 g mushrooms, chopped
butter, for greasing tin

Steps:

  • Pre-heat the oven at 180 Celsius.
  • Heat the oil and fry the onion and garlic until soft.
  • Grind the cashew nuts in a nut mill, blender or mincer until they are in small pieces. Don't go too far. You don't want them in a powder.
  • Mix the cashew nuts with the breadcrumbs.
  • Beat the egg and add to the dry ingredients.
  • Mix in the mashed parsnips and herbs.
  • Add the fried, be sure to scrape the pan so that all the juices go in as this will help keep the nut roast moist.
  • Dissolve the vegemite in the hot water or stock and add to the other ingredients. Season well.
  • Melt the butter in a frying pan and saute the chopped mushrooms until soft.
  • Grease a 900g loaf tin with butter and put in half the nut mixture. Cover with a layer of mushrooms and add the rest of the nut mixture.
  • Cover with foil and bake for one hour.
  • When cooked, remove from the oven and let it stand for 10 minutes before turning it out.
  • Serve hot or cold.

Roast beef platter with chilli, pine nut & parsley dressing image

Roast a joint of sirloin until rare, serve sliced with a light vinaigrette and tell everyone to get stuck in

Provided by Mary Cadogan

Categories     Starter

Time 1h20m

Number Of Ingredients 9

2kg beef sirloin joint
3 red chillies
5 garlic cloves
few thyme sprigs or 1 tsp dried thyme
8 tbsp olive oil
50g pine nut
1 tsp Dijon mustard
2 tbsp sherry vinegar
good handful parsley , roughly chopped

Steps:

  • Heat oven to 180C/160C fan/gas 4. Wipe the meat with kitchen paper and set, fat-side down, in a roasting tin. Finely chop 2 chillies, 3 garlic cloves and the thyme leaves. Mix with 3 tbsp of the oil, season, then massage over the meat. Turn the meat, fat-side up, and massage in the remaining flavoured oil.
  • Roast the joint for 40-50 mins for medium rare, 10-15 mins longer for medium. If you have a meat thermometer, the temperature will read 55C for medium rare and 62C for medium.
  • Meanwhile, toast the pine nuts in a dry frying pan until lightly coloured, then tip into a bowl. Heat 1 tbsp oil in the pan, thinly slice the remaining garlic cloves and fry quickly until lightly browned. Tip into a separate bowl. Finely chop the remaining chilli and add to the bowl with the mustard, vinegar and seasoning. Whisk to mix, then whisk in the last 4 tbsp oil and half of the chopped parsley.
  • Let the meat rest for 20 mins, then thinly slice and arrange over a platter. Spoon over a little dressing, and scatter with the pine nuts and the rest of the parsley. Serve the remaining dressing separately.

COOK-FROM-FROZEN SQUASH NUT ROAST

Cook-from-frozen squash nut roast image

Enjoy this nut roast as a veggie Christmas centrepiece, or for a special Sunday roast. It's a great dish to have on standby to cook straight from the freezer

Provided by Adam Bush

Categories     Dinner

Time 2h40m

Number Of Ingredients 21

500g butternut squash, peeled and cut into 2cm cubes
4 tbsp olive oil
25g dried porcini mushrooms
200g button mushrooms, finely chopped
1 onion, finely chopped
4 garlic cloves, finely chopped
4 rosemary sprigs, leaves picked and finely chopped
50g dried breadcrumbs
250g pouch cooked puy lentils
50g blanched almonds, finely chopped
50g pecans, finely chopped
50g walnuts, finely chopped
1 small courgette, cut into 5mm slices lengthways
2 roasted red peppers, halved lengthways
handful of flat-leaf parsley, to serve
50g blanched almonds
50g pecans
50g walnuts
1⁄4 tsp cayenne pepper
1⁄2 tsp ground cumin
75g caster sugar

Steps:

  • Heat the oven to 200C/180C fan/ gas 6 and toss the squash with 2 tbsp of the olive oil. Tip into a roasting tin and cook for 30 mins, turning halfway, until cooked through and golden at the edges. Tip into a bowl.
  • Put the porcini mushrooms in a small heatproof bowl, cover with boiling water and soak for 10 mins before scooping out and finely chopping. Reserve the soaking liquid.
  • Heat the remaining 2 tbsp oil in a non-stick frying pan and cook the button and porcini mushrooms and the onion for 10-15 mins until the liquid from the mushrooms has evaporated and the veg has started to caramelise. Tip in the garlic and rosemary and cook for 1 min more. Tip into the bowl with squash and add the breadcrumbs, lentils and all the nuts. Season, mix well and taste for seasoning. Add 50ml of the porcini soaking liquid - you want the mixture to be moist but not wet. Use a fork to mash the everything together - you want it to come together almost as a dough, not separate components.
  • Line a 900g loaf tin with a long strip of baking parchment. Spoon half of the butternut squash mixture into the bottom of the tin, pressing to prevent any gaps. Lay the courgette slices in an even layer on top, then add a layer of roasted red peppers and finally the remaining squash mixture, pressing again. Leave to cool completely, then wrap tightly. Will keep frozen for up to three months.
  • Heat the oven to 190C/170C fan/ gas 5. Unwrap and bake the nut roast from frozen for 1 hr, or until a small knife slides through easily and it is piping hot in the centre.
  • For the spiced nut topping, tip all of the nuts onto a baking tray, toss with a little salt and the spices, and bake in the oven along with the roast for 8 mins until browned slightly and smelling toasty. Put the caster sugar into a small pan with 75ml water and heat until the sugar has melted. Tip the nuts into a bowl and toss with the sugar syrup, then return to the baking tray and bake for 10 mins more until sticky. Turn the roast out onto a platter or board and top with the spiced nuts and the parsley.

1/4 cup bread crumbs
1/2 cup potato mashed
2 teaspoons parsley minced, fresh
