These are a traditional German treat for Christmastime. As for this variation on the goodie, I don't know how authentic it is, but vegan and fat free - really, who wants to second-guess that?! I found it on FatFree.com.

1 cup honey
1/4 cup applesauce
1 teaspoon lemon rind, grated
1/4 teaspoon ground cloves
1/2 teaspoon ground nutmeg
3/4 cup brown sugar
1 tablespoon lemon juice
2 3/4 cups flour
1 teaspoon cinnamon
1 teaspoon baking soda
slivered almonds, for decoration (optional)
1 cup sugar (optional)
1/2 cup water (optional)
1/4 cup powdered sugar (optional)

Steps:

  • Mix honey, sugar, eggbeater, lemon juice and rind. Blend dry ingredients separately.
  • Stir the wet into the dry. Chill overnight.
  • When ready to cook, heat the oven to 400 degrees.
  • Roll out a small amount of dough at a time to a 1/4 " thick log. Cut into 2" rounds.
  • Place each cookie round on a nonstick cookie sheet, and place a slivered almond in the center if desired.
  • Bake about 12 minutes, or until set.
  • Immediately brush with glazing icing, if desired:
  • boil sugar and water until the first indication of a 'thread' appears as it thickens (around 230 degrees).
  • Remove from heat and stir in the powdered sugar. Bush this lightly over the cookies (when the icing gets sugary, reheat slightly, adding a little water until clear again).

1 cup honey
1 egg
1 tablespoon lemon juice
3/4 cup brown sugar, packed
1 teaspoon lemon, rind of, grated
2 3/4 cups flour
1 1/2 teaspoons baking soda
1 teaspoon nutmeg
1/4 teaspoon clove
1 teaspoon cinnamon
1/2 teaspoon allspice
1/4 teaspoon clove
1/3 cup citron, cut
1/3 cup nuts, chopped
to taste candied cherry, cut in slices
to taste blanched almond
1 cup powdered sugar, sifted
5 tablespoons rum or 5 tablespoons water

Steps:

  • Heat honey to boiling in sauce pan.
  • Cool.
  • Stir in sugar, egg, lemon juice and rind.
  • Stir together flour, soda, and spices.
  • Mix into honey mixture. Stir in citron and nuts.
  • Chi ll in plastic wrap overnite. Heat oven to 350 deg.
  • Shape into 1 inch balls and flatten.
  • Place on greased baking sheet. Press almond halves into cookes and cherry slice into center.
  • Bake just until set 10-12 minutes.
  • Glaze while warm.
  • Glaze: stir ingredients until smooth.
  • Store in air tight container and let mellow.

3/4 cup brown sugar
1 egg
1 tbsp lemon
1 tsp grated lemon rind
23/4 cups gold medal flour
1/2 tsp baking soda
1 tsp. cinnamon
1/4 tsp. clove
1/2 tsp. allspice
1/2 tsp. nutmeg
1/3 cup chopped up citron
1/3 cup chopped almonds.

Steps:

  • stir in sugar, egg, lemon juice and rind into honey. measure flour by dipping method or by sifting. mix in citron and nuts. Chill over night. Heat oven at 400 degress. roll a small amount of dough at a time keeping the rest chilled. roll 1/4 inch thick on a lightly floured surface cut into rounds.
