Number Of Ingredients 12

2 pkg rotini pasta, i like the tri color one
1 each red, green, yellow, and orange bell peppers
1 large red onion, sliced thin
1 can(s) black olives
2 c green olives
1 large cucumber, sliced
1 pkg cherry tomatoes, halved
1 lb pre-sliced hard salami, cut into bite size pieces
1 lb mozzarella or provolone, cubed (i prefer mozzarella)
1 small jars pepperoncini peppers, drained (whole or sliced)
2 small jars artichoke hearts, sliced in half lengthwise
1-2 bottle italian dressing

Steps:

  • 1. Cook pasta. Rinse in cold water to cool. Drain well.
  • 2. In a very large bowl, mix all ingredients together. Add dressing. If you are not serving until the next day, I recommend withholding the tomatoes, cucumber and cheese until shortly before serving, to prevent them from getting too soft or mushy. As this sits, especially if you prepare it the night before, you will find it soaks up the dressing and you will need to add more. Start with one bottle of dressing and go from there. You want it coated well, but not sitting in a pool of dressing.
  • 3. Note: I believe my cousin used kalamata olives. I like them ok, but I love green olives, so I use green olives in their place. Experiment with the varieties you love! Enjoy! P.S. If you want a healthier version, omit the salami and/or use chopped chicken breast.

Italian Pasta Salad Recipe image

This is one satisfying and flavor-packed cold pasta salad with crunchy veggies, fresh herbs, rustic old-world salami, tangy olives, and mozzarella. A zesty Italian dressing brings it all together.

¾ lb pasta, ((I recommend fusilli or rotini pasta) )
Kosher salt
1 pint cherry tomatoes (halved)
1 bell pepper (any color, cored and chopped)
1 shallot (chopped)
1 cup marinated artichoke hearts (6 ounces)
1/4 cup pitted kalamata olives
6 pepperoncini, (chopped)
6 to 8 ounces salami, (sliced into bite size pieces )
6 ounces mozzarella cheese, (torn (or mozzarella cheese balls))
½ cup packed chopped fresh parsley
½ cup packed chopped fresh basil leaves
¼ cup olive oil
2 tablespoons white wine vinegar
2 garlic cloves, (minced)
1 teaspoon dried oregano
½ to 1 teaspoon crushed red pepper flakes
Kosher salt and black pepper

Steps:

  • Cook the pasta in boiling water according to package instructions until the pasta is cooked to al dante (don't forget to salt your water). Drain
  • In a large bowl, mix the pasta with the tomatoes, chopped veggies, artichoke hearts, olives, pepperoncini, salami, mozzarella, and fresh herbs.
  • In a small bowl or measuring cup, mix the dressing ingredients together.
  • Pour the dressing over the pasta and toss to coat.

I created this salad because I wanted something with a little kick and a lot of texture and taste. This is a recipe you can tweak to make it your own. It keeps well in fridge and is best served cold as a side dish. You can add diced ham or even a can of chunky tuna to make a complete meal.

1 (16 ounce) package seashell pasta
8 slices bacon
1 cup creamy salad dressing (such as Miracle Whip®)
¼ cup white wine vinegar
2 tablespoons Worcestershire sauce
2 tablespoons olive oil
2 cloves garlic, crushed
1 tablespoon Dijon mustard
1 teaspoon dried oregano
1 red onion, finely diced
1 (8 ounce) can sliced water chestnuts, rinsed and drained
4 hard-cooked eggs, chopped
½ green bell pepper, diced
½ red bell pepper, diced
2 stalks celery, diced
½ cup sliced black olives
½ cup diced sharp Cheddar cheese
¼ cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil; cook shell pasta at a boil until tender yet firm to the bite, about 8 minutes. Drain and rinse under cold water.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels; crumble.
  • Whisk creamy salad dressing, vinegar, Worcestershire sauce, olive oil, garlic, Dijon mustard, and oregano together in a bowl to make a creamy dressing.
  • Mix pasta, bacon, red onion, water chestnuts, eggs, green bell pepper, red bell pepper, celery, olives, Cheddar cheese, and Parmesan cheese together in a large bowl. Add dressing and stir to coat. Chill in refrigerator at least 1 hour before serving.

2 cups of uncooked shell pasta
1 cup mayonnaise
1/2 cup sour cream
1/8 cup cider vinegar
1/8 cup sugar
1/2 teaspoon pepper
1 teaspoon onion powder
1 teaspoon salt
1 teaspoon garlic salt
1 tablespoon Dijon mustard
1/2 bell pepper
1/2 red onion
1/4 shredded cheddar cheese

Steps:

  • Boil and drain pasta- set aside to cool to room temperature.
  • Mix together in a bowl all of the ingredients except for the bell pepper, onion, and cheese.
  • Mix the sauce with the pasta.
  • Add in the chopped bell pepper, onion, and cheddar cheese.
  • Refrigerate and enjoy!

I used to get this to-die-for chicken salad at a local deli when I nannied in Chicago. I've since been scouring the net for anything that even RESEMBLES it. Eventually I just gave up and called the deli, begging for the recipe, and they did give it to me. Especially for those "what to cook, it's too damn hot" nights when you're looking for something to make for dinner. Cooking time includes marinating and chilling. 4 large boneless skinless chicken breasts
2 -3 cups red seedless grapes, halved
1 cup sliced almonds, toasted
fresh parsley, to taste
3/4 cup mayonnaise (NOT Miracle Whip or any other salad dressing)
1 cup plain yogurt
1 cup sour cream
2 tablespoons chopped fresh parsley or 2 tablespoons fresh cilantro
1/2 teaspoon lemon & herb seasoning (I wandered the spice aisle in the grocery store, and there IS such a thing)
1 teaspoon honey (I did half and half) or 1 teaspoon sugar (I did half and half)

Steps:

  • FIRST: Prepare herb dressing.
  • Using a hand mixer, beat yogurt and sour cream together well.
  • Stir in remaining ingredients.
  • Thaw skinless/boneless breasts, if necessary.
  • Put them in a large, sealable container with 1/3 of the dressing and marinate in the fridge for a few hours.
  • Cook on hot grill, but be careful to not OVERCOOK, otherwise all you'll be able to taste is the charred chicken.
  • Cool and cut into bite sized pieces.
  • Toss with grapes, almonds, parsley, mayo and remaining herb dressing (amount of dressing varies to your desired consistency).
  • Chill.
  • Serve alone or on bed of greens with nice, crusty bread and a tall glass of iced tea or lemonade.
  • YUMMY.

I'm not a huge potato salad fan, but I do enjoy it prepared this way. It's like a fully loaded baked potato in salad form. Cooking time included chilling time. I hope you will enjoy this tasty salad.

1 lb potato, yukon gold, peeled and cut into chunks
1/4 teaspoon salt
1/8 cup Miracle Whip (you may use mayonnaise if preferred)
1/2 cup sour cream, thick
1/2 tablespoon Dijon mustard
1/2 teaspoon chili powder
1/4 teaspoon cayenne pepper (optional)
3 slices bacon, cooked and crumbled, maple
1/4 cup red pepper, sweet, finely chopped
1/4 cup orange pepper, sweet, finely chopped
1/8 cup green onion, finely chopped
1/8 cup gouda cheese, shredded
1/8 cup garlic chives (you could use 1/8 cup green onions if preferred)
2 tablespoons gouda cheese, shrredded
1/4 teaspoon chili powder

Steps:

  • Place potatoes in large pot of cold salted water and bring to a boil.
  • Cook potatoes until they are tender, drain and cool.
  • In a large bowl combine the miracle whip, sour cream, mustard, chili powder and cayenne pepper, stir to blend then add the cooled potatoes and toss gently.
  • Next you will add the bacon, red and yellow peppers, green onions and cheese, toss gently, cover and put in refrigerator to chill for about 1 hour.
  • When ready to serve garnish your potato salad with the chives, cheese and chili powder.
