NORWEGIAN APPLE PIE
This is a simple "pie" that can be made quickly and on short notice.It was given to me from a girl at work and it is a lovely recipe.I like it warm with a bit of vanilla ice cream.

Steps:
- 1. Combine sugar,flour,salt and baking powder.Beat in egg and vanilla.Stir in nuts and apples.Mixture will be thick.Spoon into well greased pie plate and spread evenly.Sprinkle cinnamon/sugar on top before baking. 350* for about 30 minutes.Serve warm or cold , plain or with whipped or ice cream.Tastes more like a rich apple cake than a pie.

- Preheat oven to 350F/180C/Gas Mark 3.
- Spray an 8-inch pie plate with a non-stick cooking spray.
- Beat the egg whites, sugar, vanilla, and baking powder until smooth and fluffy.
- Beat in the flour until smooth and well blended.
- Stir in the apples.
- Pour into the pie plate and bake for 30 minutes.
- The pie will puff up as it cooks, then collapse as it cools.

- Put the mixture in an 8 inch greased pie pan.
- Bake at 350 degrees for 30 minutes.

NORWEGIAN APPLE PIE
You can use any kind of apples here, but I personally prefer that old-fashioned standby - Golden Delicious. The apple can be peeled or not, it's up to you. Don't be tempted to leave out or substitute for the cardamom or almond extract though. They are what make this version special.

- Preheat over to 350 degrees.
- Spray an 8 or 9 inch pie pan with cooking oil and set aside.
- Beat egg whites, sugar, vanilla, salt, baking powder, flour, acacia, and spices until smooth and fluffy (you can use a wire whisk or an electric mixer).
- Stir in nuts and apples.
- Turn batter into pie plate.
- Bake at 350 degrees for about 25- 30 minutes, until a toothpick inserted in the center of the pie comes out with moist crumbs.
