I like to present my favorite holiday cookies in a special way. I pile these fresh-baked tea cakes on pretty plates that I buy throughout the year, then wrap them with colored cellophane to give friends. —Valerie Hudson, Mason City, Iowa

Yield about 3-1/2 dozen.

1 cup butter, softened
1/2 cup confectioners' sugar
1 teaspoon vanilla extract
2-1/4 cups all-purpose flour
1/4 teaspoon salt
3/4 cup finely chopped nuts
Additional confectioners' sugar

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in vanilla. Combine dry ingredients; gradually add to creamed mixture. Stir in nuts. Cover and refrigerate for 1-2 hours. , Roll into 1-in. balls. Place 2 in. apart on ungreased baking sheets. Bake at 350° for 12-13 minutes. Roll in confectioners' sugar while still warm. Cool on wire racks.

This is another recipe that I got out of our local electric cooperative magazine. This needs to be made up the night before you intend to serve it. It calls for refrigerating overnight. Good comfort food!!! Cook time does NOT include the refrigerate time.

1 (16 ounce) package herb seasoned stuffing mix
1/2 cup softened butter
1 1/2 cups hot chicken broth
1/4 cup chopped onion
1/4 cup chopped celery
1/2 cup mayonnaise
1/4 teaspoon salt
2 1/2 cups cooked chicken, diced
2 eggs
1 1/2 cups milk
1 (14 ounce) can cream of mushroom soup
1 cup grated cheddar cheese

Steps:

  • Combine stuffing mix, butter and broth and set aside.
  • Mix onions, celery, mayonnaise and salt.
  • Add mayonnaise mixture to stuffing mix and mix well.
  • Put 1/2 of stuffing mixture in a greased 9x13 inch baking dish.
  • Spread chicken over this layer then top with the remaining stuffing mix.
  • Beat eggs in milk and pour over all.
  • Refrigerate overnight.
  • Take out 2 hours before serving and spread with the mushroom soup.
  • Preheat oven to 325 F.
  • Bake uncovered for 40-45 minutes.
  • Sprinkle with cheese and bake an additional 10 minutes.

1 ounce Calvados
1 teaspoon brown sugar
4 ounces strong hot assam tea
1 cinnamon stick

Steps:

  • In a pan, warm the Calvados.
  • In a tall pedestal mug, mix the Calvados with the sugar. Ignite with a match and let burn for 10 seconds. Add tea and garnish with cinnamon stick.
