1/4 pound bulk spicy pork or Mexican-style sausage
2 tablespoons chopped green pepper
2 tablespoons chopped onion
1 pound American cheese, cubed
3/4 cup salsa
Tortilla chips or raw vegetables

Steps:

  • In a 1-1/2-qt. microwave-safe container, cook sausage, green pepper and onion on high for 1-2 minutes or until sausage is fully cooked; drain. Add the cheese and salsa. Cover and microwave on high for 1-2 minutes, stirring frequently until cheese is melted and mixture is smooth. Serve with tortilla chips or vegetables.

2 large potatoes, peeled, cut into 1 inch (2 1/2 cm) chunks and boiled
2 large carrots, peeled, cut into 1 inch (2 1/2 cm) chunks and boiled
⅓ cup olive oil
⅓ cup water
2 tablespoons lemon juice
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder
½ cup nutritional yeast

Steps:

  • In a blender or food processor, add boiled potatoes, carrots, olive oil, water, lemon juice, salt, pepper, garlic powder, and nutritional yeast. Blend until smooth, adding more liquid as necessary to reach desired consistency.

1 pound ground beef
1/3 cup chopped onion
2 pounds process cheese (Velveeta), cubed
1 jar (16 ounces) chunky salsa
1/4 teaspoon garlic powder
Tortilla chips or cubed French bread

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain well. , Transfer to a greased 3-qt. slow cooker; stir in the cheese, salsa and garlic powder.
