1 cup light butter, softened
1 cup Splenda® Granulated Sweetener
1 tablespoon vanilla extract
¼ cup egg substitute
¼ cup water
¾ teaspoon vinegar (white or cider)
1 ½ cups all-purpose flour
1 ½ cups cake flour
1 teaspoon baking powder
¼ teaspoon salt

Steps:

  • In a mixing bowl using an electric mixer, blend butter, Splenda® Sweetener, and vanilla extract on medium speed.
  • Add egg substitute, water, and vinegar and mix briefly.
  • Add flours, salt, and baking powder. Mix on low speed until dough is formed; do not overmix.
  • Divide dough in half. Pat each half into a circle and wrap in plastic wrap. Refrigerate about 1 hour.
  • Preheat oven to 350°F. Lightly grease a baking sheet.
  • Remove dough from refrigerator and roll out on a floured work surface to about ¼" thick. Cut with cookie cutters. Place cookies on prepared baking sheet.
  • Bake for 10-12 minutes or until lightly browned on the back. Cool slightly, then transfer to a wire rack to cool completely.

2 ripe bananas
1 egg
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
½ teaspoon ground nutmeg
¾ teaspoon ground cinnamon
1 cup rolled oats
½ cup chopped walnuts

Steps:

  • Cream the butter or margarine until light and fluffy. Add the bananas and mix well. Beat in the eggs and vanilla.
  • Sift together the flour, baking soda, salt, ground nutmeg and ground cinnamon. Add the dry mixture to the creamed mixture and mix well. Stir in the oats and the chopped nuts. Cover and chill dough for 1 hour.
  • Preheat the oven to 375 degrees F (190 degrees C). Lightly grease baking sheets.
  • Drop chilled teaspoon-sized rounds of cookie dough onto the prepared baking sheet. Bake in the preheated oven for 10 to 12 minutes.

2 1/3 cups Gold Medal™ all-purpose flour
1/2 teaspoon baking soda

Steps:

  • Heat oven to 375°F. Line cookie sheets with cooking parchment paper; set aside.
  • In large bowl, beat 1 cup granulated sugar and butter with electric mixer on low speed or with spoon until light and fluffy. Stir in vanilla, nutmeg and egg. Stir in flour and baking soda. Shape dough by teaspoonfuls into balls. Place 2 inches apart on lined cookie sheets. Flatten slightly with bottom of glass dipped in sugar.

1-1/2 cups butter, softened
1-1/2 cups sugar
2 large eggs, room temperature
2 tablespoons vanilla extract
4 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cream of tartar
FROSTING:
1-1/2 cups confectioners' sugar
3 tablespoons butter, softened
1 tablespoon vanilla extract
1 to 2 tablespoons whole milk
Food coloring, optional
Colored sugar

Steps:

  • Cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. In another bowl, whisk flour, salt, baking soda and cream of tartar. Gradually beat into creamed mixture. Refrigerate, covered, for 30 minutes., Preheat oven to 350°. On a lightly floured surface, roll dough to 1/4-in. thickness. Cut with floured 2-1/2-in. cookie cutters. Place 1 in. apart on ungreased baking sheets. Bake 10-12 minutes. Cool on wire racks. , For frosting, beat confectioners' sugar, butter, vanilla and enough milk to reach desired consistency. If desired, add a few drops of food coloring. Cut a small hole in the tip of a pastry bag or in a corner of a food-safe plastic bag; transfer frosting to bag. Pipe decorations. Sprinkle with colored sugar. Freeze option: Freeze undecorated cookies, layered between waxed paper, in freezer containers. To use, thaw and decorate as desired.

3/4 cup unsalted butter
1/4 cup light butter
1 cup no calorie Splenda granular
1 tablespoon vanilla
1/4 cup egg substitute
1/4 cup water
3/4 teaspoon white vinegar or 3/4 teaspoon cider vinegar
1 1/2 cups all-purpose flour
1 1/2 cups cake flour
1/4 teaspoon salt
1 teaspoon baking powder

Steps:

  • Preheat oven to 350°F Lightly oil a cookie sheet; set aside.
  • Blend together butters, Splenda granular and vanilla in a medium mixing bowl with an electric mixer, or by hand.
  • Blend until butter is softened. Add egg substitute, water and vinegar. Mix briefly. Add flours, salt and baking powder. Mix on low speed, until dough is formed. Do not overmix.
  • Remove dough from bowl and place on a floured work surface. Divide dough in half. Pat each half into a circle and cover with plastic wrap. Refrigerate approximately 1 hour, allowing dough to chill.
  • Remove dough from refrigerator and roll out on a floured work surface to desired thickness, approximately 1/4-inch. Cut with cookie cutters. Place cookies on prepared sheet.
  • Bake in a preheated 350° oven 10- 12 minutes or until lightly browned on the back. Cool on a wire rack.
