Categories     Dessert

Time 4h25m

Number Of Ingredients 4

1 cup Water ((divided, plus more for as needed in step 4))
2 lb Strawberries ((quartered))
1 1/2 cups Besti Monk Fruit Allulose Blend ((to taste, see instructions))
4 tbsp Unflavored gelatin powder

Steps:

  • Combine 1/2 cup (118 ml) water and strawberries in a large saucepan. Bring to a boil, stirring and mashing as berries soften.
  • Reduce heat to medium-low. Simmer for 8-10 minutes, until berries are fall-apart soft. Mash with the back of a spoon.
  • Meanwhile, pour 1/2 cup (118 ml) water into a small bowl. Sprinkle the gelatin powder into the bowl and whisk immediately before it sets. Set aside to bloom for at least 5 minutes.
  • Place a fine mesh sieve over a bowl. (If you want super clear jello, line it with a jelly bag or nut milk bag.) When the berries are very soft, pour the berry mixture over the sieve. Press with a spoon or spatula to push the juice into the bowl. Measure out as much juice as you can to use for the jello (up to 3 cups but it will likely be less). Add more water to to the juice to reach 3 cups liquid total.
  • Wipe down the saucepan and pour juice back into the saucepan over medium heat. Add Besti and stir to dissolve. Taste and adjust sweetener to taste if needed.
  • Reduce heat to low. Stir in the bloomed gelatin and heat, stirring, for about 2 minutes, until gelatin dissolves.
  • Line an 8x8 pan with parchment paper, with the paper hanging over the sides. Pour the strawberry liquid into the pan.
  • Refrigerate for at least 4-6 hours, or overnight, until set.
  • Remove the jello from the pan using the edges of the parchment paper. Slice into 1 inch squares.

Categories     dessert

Time 6h20m

Yield 8 servings

Number Of Ingredients 9

6 tablespoons unsalted butter, melted and cooled, plus more for the pan
1 1/4 cups almond flour
1/2 cup pecans
1/4 cup confectioners' erythritol sweetener, such as Swerve
Five 8-ounce packages cream cheese, at room temperature
1 3/4 cups confectioners' erythritol sweetener, such as Swerve
1 tablespoon lemon juice
1 1/2 teaspoons vanilla extract
3 large eggs

Steps:

  • For the crust: Position an oven rack in the center of the oven and preheat to 350 degrees F. Generously butter the bottom and sides of a 9-inch springform pan.
  • Combine the almond flour, pecans, sweetener and melted butter in a food processor and pulse until finely ground and combined. Turn the mixture out into the prepared springform pan and press it firmly on the bottom and about 1 1/2 inches up the sides. Bake the crust for 10 minutes, then cool completely on the rack.
  • For the filling: Reduce the oven temperature to 325 degrees F.
  • Combine the cream cheese, sweetener, lemon juice and vanilla in the bowl of a stand mixer and beat until lightened and smooth. Add the eggs one at a time, beating to incorporate after each addition.
  • Scrape the mixture into the cooled crust and smooth the top with an offset spatula. Bake until the edges of the cake are set but the center is still jiggly, 45 to 50 minutes. Run a thin knife around the edges of the cake to separate it from the pan, then let the cake cool for 1 hour.
  • Loosely cover the cheesecake and refrigerate until cold, at least 4 hours, before serving.

Categories     Fruit Desserts

Time 15m

Number Of Ingredients 7

1 box sugar free cheesecake instant pudding mix, dry
1 c skim milk
16 oz cream cheese room temp
2 tsp vanilla extract
1 can(s) no sugar added cherry pie filling
1 9 in. baked pie shell or my sugar free recipe for crust that is posted
1 container of sugar free cool whip

Steps:

  • 1. In large bowl, mix first 4 ingredients until blended. Pour in pie shell. Layer Pie Filling on top of that. Chill for a couple hours. Serve with a dullop of cool whip.
  • 2. NOTE: If you want to make your own pie filling sugar free, just take a bag of frozen unsweetened fruit. Thaw thoroughly. Put in a saucepan with 1 Cup splenda and cook until syrupy. Add 1 teaspoon of cornstarch and whisk until clear IF it needs thickened. Continue to add cornstarch if necessary but I don't think you will.

NO SUGAR ADDED CHEESECAKE

Time 35m

Yield 12 serving(s)

Number Of Ingredients 6

16 ounces philadelphia neufchatel cheese (2 packages)
2 large eggs
2 teaspoons vanilla
1 cup Splenda granular
2 tablespoons cocoa powder (with splenda, optional mix-in)
12 reduced-fat vanilla wafers (this could also be optional)

Steps:

  • Mix everything except the wafers together. Take a muffin pan, put cup cake liners in (I spray them with Pam), and put 1 vanilla wafer in the bottom of each liner it acts as your crust.
  • Divide cheesecake batter amongst the liners. Bake at 350 for 20-25 minute If you want you can top with a dallop of sugar free Strawberry jam.
  • With my ingredients each one has 4 grams of protein and 120 calories each. It is better for us than cake! Oh, and the only sugar in it is from the 1 vanilla wafer per serving.
