This recipe was given to me by a co-worker who has lost over 100 pounds. She likes this as the pie with the graham cracker crust; however, I think the filling is great spooned into parfait cups. Strawberry and key lime are the best, IMHO.

1 (3 ounce) package sugar-free jello, any flavor
1/4 cup boiling water
2 (6 ounce) containers nonfat yogurt, in any flavor that compliments the choice of jello
1 (8 ounce) container fat-free cool whip

Steps:

  • Combine jello and boiling water until jello crystals are completely dissolved.
  • Stir in yogurt until combined well.
  • Gently fold in Cool Whip.
  • Can be poured into fat free graham cracker crust or spooned into parfait glasses, then chilled.
  • NOTE: Don't worry if you get a little "stir-happy" when folding in the whipped topping. You can pour it into the crust or parfait cups and pop it into the freezer for a tasty frozen treat.

This recipe was inspired by Mirj's Recipe #13561. The crust is more of a "healthy" crust, so if you dont care for that too much, just go ahead and use your fav crust. The filling is delicate and smooth with great holiday flavours. I loved it and I hope you do, too.

Number Of Ingredients 19

1 cup whole wheat flour
1/2 cup ground walnuts
1/2 cup walnuts, chopped
1/4 cup applesauce, unsweetened (might need 2 tbs more)
1/2 teaspoon cinnamon
1/2 teaspoon pumpkin pie spice
2 cups pumpkin puree (I used a home-made one)
1 1/2 cups vanilla yogurt (can use low-fat)
1/2 cup applesauce, unsweetened
1/8 cup light brown sugar, packed
1/8 cup dark brown sugar, packed
2 eggs, beaten
1 pinch salt
1 teaspoon cinnamon
1/4 teaspoon ginger
1/8 teaspoon nutmeg
1/8 teaspoon allspice
1/8 teaspoon ground vanilla bean
1/16 teaspoon clove

Steps:

  • For the crust combine flour, ground walnuts, chopped walnuts, applesauce, cinnamon and pumpkin pie spice in a bowl. If mixture does not come together, add a tbs or so more applesauce.
  • Press mixture into a greased pie plate of 24 cm/9 inch in diameter.
  • For the filling combine pumpkin puree, applesauce, yogurt, sugar, eggs, salt and all of the spices in a big bowl. Mix well.
  • Pour this mixture into your prepared pie crust and bake in the pre-heated oven at 220°C/425°F for 15 minutes, then lower the temperature to 175°C/350°F and bake for another 45 minutes or until filling is set.
  • Let cool in the pan. Enjoy!

HOMEMADE NONFAT YOGURT

1 quart skim milk
1/4 to 1/2 cup noninstant nonfat dry milk (optional)
3 to 4 tablespoons plain yogurt with active cultures

Steps:

  • In a pan, scald the milk but do not boil. Cool it to lukewarm (105 to 115 degrees).
  • Add the dry milk to the lukewarm milk and mix well. Thoroughly stir in the yogurt. Place mixture in wide-mouth thermos bottles or in warmed quart jars or earthenware bowls. Cover and place mixture in a warm oven, or near a pilot light at the top of a stove where it will stay at 90 to 115 degrees. Leave for about six hours or until it is thick. Do not disturb the yogurt while it incubates. The longer it incubates the more tart it will be. If the whey separates, just stir it back in. Yogurt will keep for two weeks in the refrigerator.

1/2 teaspoon salt
1 teaspoon cinnamon

4 teaspoons egg substitute

  • The cheese is what "binds." Blended with the egg whites, the two substitute beautifully for the not-healthy evaporated milk. (Fat free, nice, but as much sugar as a candy bar.) And you needn't bake at such high temps for so long, because you're not waiting for sugar to melt, egg yolks to cook - and you've already heated your ingredients.
