HIGH-FIBER BREAKFAST MUFFINS
This delicious muffin makes wholesome eating fun. This muffin is low in fat, and has good carbs and lots of fiber. It's great for heart health and wonderful for diabetics because of the oats, fiber, and low fat. It's also not too heavy like most high-fiber muffins and it tastes great. It just uses one bowl, which make everyone's life easier!

Steps:
- Preheat the oven to 400 degrees F (200 degrees C). Line 12 muffin cups with paper or foil liners, or grease if not using liners.
- Combine oats, all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, salt, applesauce, egg whites, milk, brown sugar, oil, and vanilla in a large bowl. Mix until blended. Fold in raspberries, blueberries, and blackberries. Divide batter evenly into the prepared muffin cups.
- Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, 15 to 17 minutes.
- Let muffins cool for 5 minutes in the pan before transferring to a cooling rack.

- Sift dry ingredients together. Combine wet ingredients and stir into dry ingredients. Mix well. Stir in apples. Fill muffin tins full. Bake for 15-20 minutes @ 350. Makes 15.
- I like to add 1/8 Celsius flak seed and 1/8 Celsius millet for extra fiber.
- Also, you can use buttermilk or 2 % milk. Or plain yogurt if you must.

- Preheat oven to 400 degrees F.
- Grease a 12 cup muffin tin.
- In a mixing bowl, lightly beat eggs; add milk and oil, stirring until just blended.
- Stir in flour, oats, sugar, baking powder, salt, nutmeg, and cinnamon, mixing until only just moistened (do not overmix).
- Gently fold in the apples.
- Spoon batter into the muffin tin, dividing evenly among the cups.
- Bake in a preheated oven for 15-20 minutes or until a toothpick inserted comes out clean.
- Cool in pan 5 minutes before removing to a wire rack to finish cooling.
- Serve warm or cool; store unused portions in an airtight container.

- Preheat oven to 400 degrees. Prepare muffin cups with a light coating of cooking spray.
- Combine dry ingredients (flours, baking soda, baking powder, salt and cinnamon) together in a bowl.
- Core and dice the pears into small chunks. Combine the pears, buttermilk, maple syrup, oil, sugar, egg and all but 2 tablespoons of the oatmeal together in a second bowl. Let sit for 5 minutes.
- Combine the pecans and reserved oatmeal together to use as a topping for the muffins. Set aside.
- Combine the wet and dry ingredients together until just mixed. Spoon batter into muffin cups, filling 2/3s full. Sprinkle with the pecan/oatmeal mix. Bake 18 to 20 minutes until a toothpick inserted in the middle comes out clean. Cool 5 minutes and remove from pan.
- Serve warm or let the muffins finish cooling on a rack.

- Soak the oats, apple juice, sugar and vanilla for 30 minutes.
- Mix in the flour, baking powder, grated apple and cinnamon.
- Fold in the beaten egg whites; Spoon into 12 muffin tins.
- Top muffins with 2 sliced apple wedges (cut quarters of apple into 3 or 4 wedges) and bake at 170° C (338°F) for 25 - 30 minutes until muffins and cooked though and golden.

- Heat oven to 400 and spray jumbo muffin tins with cooking spray.
- Combine flour through salt in large bowl.
- Combine remaining ingredients (less 2 tbsp oats for topping) in another bowl and let sit for 5 minutes.
- Mix wet and dry ingredients until just mixed.
- Spoon batter into tins.
- Mix reserved oats, Splenda, coconut and butter and sprinkle on muffins.
- Bake 20-25 minutes until toothpick comes out clean. Cool in page for 5 minutes and then remove from pan.
GLUTEN FREE HEARTY OATMEAL MUFFINS
These muffins are not too sweet and absolutely delicious, low carb and high fiber because of all the oats. We eat them for breakfast, and pack them in our lunchbox. They are good with cheese and salad for lunch or with yogurt for breakfast. Even the gluten eating members of my family loved them. I found this recipe somewhere as an Oat Pan Bread and converted it to gluten free muffins, so thank you to the original poster.

- Spray 12 large or 18 regular muffin pans with butter flavor canola oil or grease pans with Spectrum shortening. You can also use a few 4" loaf pans.
- Grind 1 cup GF rolled oats in the food processor or clean coffee grinder until finer than cornmeal.
- Stir all the dry ingredients together very well in a bowl.
- Beat wet ingredients together in a separate bowl with a whisk or fork.
- Make a well in the center of the oat mix and stir in the egg mix, stirring to blend.
- Spoon batter into greased muffin pans.
- Bake at 400 F oven for 20 minutes.
- Turn out onto wire rack to cool.
- Fabulous hot served with butter spread or honey.
- These muffins taste great for days kept on the counter or in the fridge, if they last that long.
