1 cup boiling water
1 pkg. (4-serving size) JELL-O Raspberry Flavor Sugar Free Gelatin
3/4 cup cold applesauce
1/4 tsp. ground cinnamon
1/2 cup vanilla low-fat yogurt

Steps:

  • Stir boiling water into dry gelatin mix in medium bowl at least 2 min. until completely dissolved. Remove 3/4 cup of the gelatin; pour into small bowl. Add applesauce and cinnamon; stir until well blended. Pour into serving bowl or four dessert glasses. Refrigerate 45 min. or until set but not firm.
  • Meanwhile, refrigerate remaining gelatin 30 min. or until slightly thickened. Stir in yogurt. Spoon over gelatin layer in bowl.
  • Refrigerate 2 hours or until set. Store remaining dessert in refrigerator.

1 c water, boiling
1 pkg jell-o raspberry flavor sugar free gelatin
3/4 c applesauce
1/4 tsp cinnamon, ground
1/2 c vanilla yogurt, low fat

Steps:

  • 1. Stir the boiling water into the dry gelatin in a medium bowl for at least 2 mins until completely dissolved. Remove 3/4 cup of the gelatin, pour into a small bowl & add in the applesuace with the cinnamon. Stir until blended.
  • 2. Pour into serving bowl or flour dessert glasses. Refirgerate for about 45 mins or until set, but not yet frim.
  • 3. In the mean time, refrigerate the reamining gelatin for about 30 mins or until slightly thickened. Stir in the yogurt. Spoon over gelatin layer in bowl.
  • 4. Special Tip: Sprinkle lightly some ground cinnamon just before serving.

1 cup (120 g) whole wheat pastry flour*
1 cup (80 g) old fashioned rolled oats**
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp ground cinnamon
pinch of salt
1 large egg
1 cup (225 g) plain Greek yogurt
1/2 cup (120 ml) unsweetened applesauce
1/4 cup (50 g) brown sugar
1 tsp vanilla extract
1 medium-sized apple (120 g), peeled, cored, and grated
1/2 cup (80 g) raisins

Steps:

  • Preheat your oven to 350F (176C) and prepare a muffin pan by spraying the cavities with cooking spray or lining them with paper liners. Set aside.
  • In a large mixing bowl, combine the flour, oats, baking powder, baking soda, cinnamon, and salt. Set aside.
  • Lightly beat the egg in a separate bowl. Whisk in the yogurt, applesauce, brown sugar, vanilla, and grated apple, stirring until well-combined.
  • Add the wet ingredients to the dry ingredients, mixing gently until just combined. Fold in the raisins.
  • Divide the batter evenly among the 12 muffin cups, filling them almost to the top. Add a sprinkle of oats if desired.
  • Bake the muffins for 20-22 minutes, or until top is firm to the touch and toothpick inserted into the centre comes out clean. Allow the muffins to cool in pan for ~10 minutes before transferring to a wire rack to cool completely. Store them in an air-tight container for up to 5 days, or freeze them for up to 3 months.

This recipe is from Nick Malgieri, the former Executive Pastry Chef of Windows on the World, and part of his newest cookbook "Perfect Light Desserts." At just 100 caloriesper serving, this looks like a delightful dessert that will satify a sweet craving without guilt. This preparation is a little tricky so have all your ingredients at the ready so that each step can be followed before the mousse sets. A perfect accompaniment for this mouse would be a drizzle raspberry sauce or strawberry coulis.

1 cup plain nonfat yogurt, preferably Greek
1 teaspoon lemon zest, finely grated
3 tablespoons lemon juice, strained
1 teaspoon pure vanilla extract
1/4 cup warm water
1 (2 1/2 teaspoon) envelope unflavored gelatin
2/3 cup egg white, about 4-5 large egg whites
1 pinch salt
3/4 cup sugar

Steps:

  • In a medium bowl, quickly whisk together the yogurt, lemon zest, lemon juice and vanilla. (Do not strain the yogurt as the whey helps maintain the right consistency and flavor.).
  • Place the gelatin in a small bowl and add the warm water. Allow this to sit so that the gelatin gets dissolved.
  • To prepare the meringue, create a double boiler using a saucepan and bowl that will set securely over the pan. Fill saucepan half way with water and bring to boil over medium heat. Combine egg whites, salt, and sugar in the bowl which will become the top portion of the double boiler . Mix the eggs, salt and sugar a bit until mixed. Place the egg whites onto the bottom of the boiler or saucepan with water. Whisk the egg whites until light, fluffy and foamy and the sugar is fully dissolved. Fold in the dissolved gelatin from step 2.
  • Remove the bowl from the heat and whisk with an electric mixer (using the proper attachment if you have it). Whip the egg mixture until the eggs are cooled, using the sides of the bowl as your gauge. Be careful not to overmix or the eggs mixed with the gelatin will coagulate.
  • Quickly pour the yogurt into the eggs in a stream, folding the two mixtures together. Again, if you fold too slowly the mix will begin to thicken too early.
  • Divide the mousse into eight serving bowls or glasses. Cover each with plastic wrap and place in the icebox until you are ready to serve.
  • Note: This can be made up to a day ahead of serving.

It has no added sugar, which makes it a better option for diabetics and low-carb people and others who avoid cane sugar. But if you prefer a sweeter sauce, add 1/2 cup of sugar. I recommend using 1/2 sweet apples (I like Braeburn) and 1/2 tart apples (Granny Smith, for example). Don't leave out the salt, it's a necessary ingredient for a good applesauce!

3 lbs apples
1 teaspoon cinnamon
1 pinch nutmeg
1 1/2 cups water
2 thin lemon slices
1/4 teaspoon salt

Steps:

  • Peel and core apples (I prefer to leave the skin on a few of them because I like the taste and texture). Cut apples into approximately 1 inch cubes.
  • Add all ingredients to pot, and turn heat on high. Bring to a boil, then cover and reduce heat to low. Simmer for 20 minutes or until the apples have softened significantly.
  • Stir frequently, making sure that the apples are not sticking to the bottom of the pot. Add more water if necessary. Remove lemon slices.
  • Mash with a potato masher or use a food mill for a smoother consistency. Serve warm or at room temperature.

Fold in raisins., Pour into a greased 8-in. square baking dish. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack., For drizzle, in a bowl, whisk confectioners' sugar and water until smooth. Drizzle over cake.
