box 1 box angel food cake mix
can(s) 1-20 oz can crushed pineapple in it's own juice

Steps:

  • 1. Mix cake mix and pineapple in large bowl. Beat at least 1 minute. Put in angel food cake pan and bake for 40 to 45 min. at 350
  • 2. Cool and remove from pan.
  • 3. Glaze: Mix 1 cup powdered sugar, 1 tsp or more orange zest. Add enough orange juice to make a thin glaze. Drizzle over cooled cake.

1 prepared angel food cake
1 (15 ounce) can crushed pineapple
30 large marshmallows
1 cup milk
2 (1 1/3 ounce) envelopes Dream Whip
1 (4 ounce) can angel flake coconut or 1 cup any flaked coconut

Steps:

  • Crumble cake and spread evenly in bottom of a large oblong pan.
  • Pour pineapple evenly over cake.
  • Heat milk and marshmallows in saucepan over low heat until marshmallows are dissolved.
  • Pour this evenly over layer of pineapple.
  • Prepare dream whip according to package directions and spread over cake to create a frosting effect.
  • Sprinkle coconut over top.
  • Chill.

This recipe is great for a quick dessert that is very light. It only takes two ingredients and is very easy to make. My only problem is that since it is so light I have caught myself eating almost half the cake by myself.

1 (16 ounce) box angel food cake mix
1 (20 ounce) can crushed pineapple

Steps:

  • Preheat the oven to the required temperature.
  • Spray your bundt pan with cooking spray.
  • When the oven is preheated mix the cake mix and the can of crushed pineapple. Make sure that all of the cake mix is mixed well.
  • Pour immediately into the bundt pan and put into the oven.
  • Cake is done when the bottom looks dry and cracked.
  • Let cool completely before removing from pan.

1 yellow cake mix
3/4 cup oil
4 eggs
1 (11 ounce) can mandarin oranges, with juices
1 (20 ounce) can crushed pineapple
1 (3 1/2 ounce) box instant vanilla pudding
1 (8 ounce) container Cool Whip

Steps:

  • Cake: Grease and flour 3 8 inch round cake pans.
  • Mix cake mix, oil, eggs,& Mandarin oranges including juices.
  • Pour in to prepared pans.
  • Bake at 350 for 30 minutes (check with tooth pick) or until tooth pick is clean.
  • Do not over cook layers.
  • Icing: Drain Pinapple and save juice.
  • Mix Cool Whip,instant pudding, and pineapple in large mixing bowl.
  • Spoon pineapple juice over each layer before icing.
  • Spread icing over each layer and ice cake.

A very simple, very light cake recipe that I found online when I needed something fast to bring to a bbq. I sprinkled shredded unsweetened coconut on top before cooking which was nice and toasty when it came out of the oven. I served it with strawberries and Cool Whip. Fantastic recipe when you need to whip up something simple in a hurry.

1 (8 ounce) can crushed pineapple (including liquid)
1 (8 ounce) box angel food cake mix
4 tablespoons unsweetened dried shredded coconut

Steps:

  • Preheat oven to 325 degrees.
  • Prepare 13 x 9 pan.
  • Mix can of pineapple with box of angel food cake. Blend with hand blender on low for one minute. Pour into pan. Sprinkle coconut evenly on top of batter.
  • Bake for 25 - 30 minutes. Serve with non-fat Cool Whip and fresh fruit.
