This is my favorite easy cheesecake recipe. When I want cheesecake in a flash, I make this no-bake style. I love to share it with friends and family. It's as easy as 1-2-3! Top with additional graham cracker crumbs and whipped topping, if desired.

2 (8 ounce) packages cream cheese, softened to room temperature
1 cup white sugar
3 tablespoons vanilla extract
1 teaspoon lemon extract
1 (8 ounce) container frozen whipped topping (such as Cool Whip®), thawed
1 (9 inch) prepared graham cracker crust
1 (21 ounce) can strawberry pie filling

Steps:

  • Combine cream cheese, sugar, vanilla extract, and lemon extract in a large bowl; beat with an electric mixer until smooth and creamy. Fold in whipped topping. Pour mixture into graham cracker crust and smooth evenly. Top with pie filling.
  • Refrigerate until firm, 2 to 3 hours.

3/4 cup milk
24 regular marshmallows
1 package (8 oz) cream cheese, softened
2 tablespoons orange-flavored liqueur
1 chocolate flavor crumb crust (6 oz)
2 kiwifruit, peeled, quartered and sliced
1 1/2 cups fresh raspberries
2 tablespoons powdered sugar

Steps:

  • In 2-quart saucepan, heat milk over medium heat until steaming. Add marshmallows; remove from heat. Let stand 15 minutes to soften marshmallows, stirring several times until smooth.
  • In medium bowl with electric mixer, beat cream cheese on medium speed until fluffy. Beat in marshmallow mixture and liqueur. Pour into crumb crust. Refrigerate until set, about 2 hours.
  • In another medium bowl, gently mix kiwifruit and raspberries. Refrigerate until serving time.
  • To serve, cut pie into wedges; place on individual dessert plates. Spoon fruit mixture over wedges. Sprinkle with powdered sugar. Store in refrigerator.

This recipe is from Grandma B. I am especially amused when I take it to a pot luck and people think I bought it because I can top it with the neat cover the ready-made crust comes with! Very easy! Be sure to chill well for a firm cheesecake.

1 prepared graham cracker crust
1 (8 ounce) package cream cheese, softened
1/2 cup sugar
1 (8 ounce) container frozen dessert topping (, Cool Whip)
1 (19 ounce) can cherry pie filling (Comstock)

Steps:

  • Blend cream cheese and sugar.
  • Fold in frozen dessert topping.
  • Press into graham cracker crust, spreading cream cheese mixture up sides.
  • Bottom will be covered and there will be a ring of cream cheese mixture about 1 inch wide around pie.
  • Pour cherry pie filling into center.
  • Chill at least 3 hours.

I came up with this creamy white chocolate cheesecake after remembering one evening that I needed to bring a treat to the office the next day. It was a tremendous hit. It's quick to fix yet tastes like you fussed.

2 packages (8 ounces each) cream cheese, cubed
1 carton (8 ounces) frozen whipped topping, thawed
1 graham cracker crust (9 inches)
1/3 cup English toffee bits or almond brickle chips

  • In a microwave-safe bowl, melt chips; stir until smooth. Stir in cream cheese until smooth. Fold in whipped topping. Pour into the crust. , Cover and refrigerate overnight or until set. Just before serving, sprinkle with toffee bits.

4 cups Fruity Pebbles cereal, plus more for garnish
1/3 cup melted butter
1/4 teaspoon salt
16 ounces cream cheese, softened
1 teaspoon vanilla extract
1 cup powdered sugar
1/2 cup sour cream
3/4 cup heavy whipping cream

Steps:

  • Place cereal into a food processor and blend until fine. Measure 2 1/2 cups of the cereal into a large bowl and set the rest aside. Add melted butter and salt to the cereal and mix until incorporated. Pour crust into a pie pan and mold to the form, bringing the cereal up the sides of the pan. Cover and freeze for 15 minutes, or until firm.
  • In a large bowl, mix together cream cheese, vanilla extract, powdered sugar, sour cream, heavy whipping cream, and the remaining cereal until combined and smooth. Pour the filling into the pie crust and smooth the top. Cover and return to the refrigerator for another hour until set.
  • Remove from the refrigerator and cover the top with even more cereal for garnish. Serve immediately.
