This recipe for no-bake oatmeal cookies leaves out the chocolate and is a creamy peanut butter cookie you will love. There are so many different ways to make these no bake cookies but this is one of my favorites. I cannot leave these cookies alone when they are in the house. I like how easy they are to make and children love helping you make these and helping you eat them!

Number Of Ingredients 6

1 1/2 cups sugar
8 tablespoons butter
1/2 cup evaporated milk (can use regular milk)
1 teaspoon vanilla extract
3/4 cup peanut butter (creamy or crunchy)
2 1/4 cups quick-cooking oats, uncooked

Steps:

  • Combine sugar, butter and milk in a pan on top of the stove.
  • Bring to a hard boil and boil for 1 minute, stirring to make sure ingredients do not stick.
  • Remove from heat and stir in vanilla extract and peanut butter until mixture is melted and smooth.
  • Fold in oats and drop by spoonfuls onto wax paper. Let cool. Makes about 24 cookies depending on size you make them.

Yield 2-1/2 dozen.

Number Of Ingredients 8

2 cups sugar
1/2 cup butter or margarine, cubed
1/2 cup 2% milk
3 tablespoons baking cocoa
Dash salt
1/2 cup creamy peanut butter
1 teaspoon vanilla extract
3 cups old-fashioned oats

Steps:

  • In a large saucepan, combine the first 5 ingredients. Bring to a boil, stirring constantly. Cook and stir 3 minutes., Remove from heat; stir in peanut butter and vanilla until blended. Stir in oats. Drop mixture by tablespoonfuls onto waxed paper-lined baking sheets. Refrigerate until set. Store in airtight containers.
