1 ¾ cups white sugar
½ cup milk
½ cup margarine (such as Country Crock®)
¼ cup unsweetened cocoa powder
3 cups quick-cooking oats
½ cup creamy peanut butter
1 teaspoon vanilla extract

Steps:

  • Line a baking sheet with waxed paper.
  • Bring sugar, milk, margarine, and cocoa powder to a boil in a large saucepan for 1 1/2 minutes. Remove from heat and stir in oats, peanut butter, and vanilla extract until dough is evenly mixed.
  • Drop tablespoonfuls of dough on prepared baking dish and let rest until cooled and set, about 50 minutes.

½ cup margarine
½ cup almond milk
4 tablespoons unsweetened cocoa powder
½ cup peanut butter
1 teaspoon vanilla extract
1 teaspoon almond extract
2 ½ cups quick oats
1 cup sweetened flaked coconut

Steps:

  • Combine sugar, margarine, almond milk, and cocoa in a saucepan. Bring to a boil, about 5 minutes. Let boil for 1 minute and remove from heat. Stir in peanut butter until melted. Pour in vanilla extract and almond extract and stir well. Add oats and coconut and mix dough until combined.
  • Drop cookie dough by tablespoons onto wax paper. Let set and cool completely, about 30 minutes.

1/2 cup butter or margarine, cubed
1/2 cup 2% milk
3 tablespoons baking cocoa
Dash salt
1/2 cup creamy peanut butter
1 teaspoon vanilla extract
3 cups old-fashioned oats

Steps:

  • In a large saucepan, combine the first 5 ingredients. Bring to a boil, stirring constantly. Cook and stir 3 minutes., Remove from heat; stir in peanut butter and vanilla until blended. 1 package (12 ounces) semisweet chocolate chips
