This corn casserole recipe is for the people who don't like Jiffy® cornbread! Good luck having leftovers! This recipe is definitely NOT for people watching their weight! Hah!

2 tablespoons butter
1 medium onion, chopped
1 teaspoon minced garlic
1 (15.25 ounce) can whole kernel corn, drained
1 (15 ounce) can creamed corn
1 cup sour cream
1 (6 ounce) package cornbread stuffing mix
4 ounces mild Cheddar cheese, grated
⅓ cup mayonnaise
½ teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch casserole dish.
  • Melt butter in a frying pan over medium heat; stir in onion. Saute for 2 minutes. Add garlic; saute for 2 more minutes. Remove from the heat.
  • Mix whole kernel corn, creamed corn, sour cream, stuffing mix, 1/2 of the Cheddar cheese, mayonnaise, salt, and pepper in a large bowl. Mix in sauteed onions and garlic. Pour mixture into the prepared casserole dish and top with remaining Cheddar.
  • Bake in the preheated oven until stuffing has fluffed up nicely, 35 to 40 minutes.

One 8-pound corned beef brisket, raw
3 cups sauerkraut
3 pounds cream cheese
2 pounds Swiss cheese, shredded or diced small
Vegetable oil, for deep-frying
Flour, for coating
Buttermilk, for dredging
Panko breadcrumbs, for coating
Chopped fresh parsley, for coating
Whole-Grain Honey Mustard Horseradish Dipping Sauce, recipe follows
4 cups mayonnaise
1 pound honey
8 ounces Dijon mustard
6 ounces horseradish (fresh if possible)
4 ounces whole-grain mustard with stout
4 ounces rice vinegar
1 1/2 ounces dry mustard
1 tablespoon granulated garlic

Steps:

  • Preheat the oven to 400 degrees F.
  • Place the brisket in a large pan with the pickling seasoning and enough water to fill the pan halfway. Cover and cook for 3 hours. Let cool partially, and then refrigerate to cool completely (for at least 3 hours total if you cut the brisket into pieces, or overnight if cooling it whole).
  • Dice the brisket and puree in a food processor until a paste forms (some chunks are fine). Add the sauerkraut, cream cheese and Swiss cheese and mix well. Shape the mixture into little spheres the size of golf balls; set aside.
  • In a large heavy-bottomed saucepan fitted with a deep-frying thermometer, pour enough vegetable oil to fill the pan about a third of the way. Heat over medium heat until the oil reaches 350 degrees F.
  • In three separate containers put the flour, buttermilk, and breadcrumbs mixed with parsley. Take a sphere and coat in the flour, dredge in the buttermilk and then coat in the breadcrumbs. Repeat with the remaining spheres. Fry in batches--making sure all the fritters are submerged--until golden brown, 3 to 5 minutes.
  • Serve the fritters with the Whole-Grain Honey Mustard Horseradish Dipping Sauce on the side.
  • Mix together the mayonnaise, honey, Dijon mustard, horseradish, whole-grain mustard, rice vinegar, dry mustard and granulated garlic in a large bowl.

8 slice corned beef
8 slice swiss cheese
spicy brown mustard
mayonnaise
horseradish
olive oil, extra virgin
4 slice pumpernickel bread

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Lay four slices of pumpernickel bread onto countertop. Spread all slices with spicy brown mustard. Spread horseradish onto one side of each sandwich followed by mayonnaise.
  • 3. Place two pieces of Swiss cheese onto bottom piece of pumpernickel bread then 2 pieces of corned beef and repeat with another layer of two pieces of Swiss cheese and 2 pieces of corned beef then place the top of the sandwich onto the meat and cheese layers.
  • 4. Place sandwiches onto cookie sheet pan. Brush each side of sandwich with olive oil. Bake for 15 minutes in 350 degree oven until each side is toasted and cheese is melted.
  • 5. Remove from cookie sheet pan and place on plate. Serve.

This is one of our favorite Christmas Eve snacks. Corned beef and Swiss cheese melted on top of cocktail rye bread makes a perfect bite-sized treat.

36 slices cocktail rye bread
1 (8 ounce) package cream cheese, softened
2 tablespoons Dijon mustard
¼ pound canned corned beef, chopped
½ cup shredded Swiss cheese
2 green onions, chopped

Steps:

  • Preheat the oven's broiler and set the oven rack 6 inches from the heat source.
  • Lay slices of rye bread out onto a baking sheet; toast under the broiler until lightly browned and fragrant, 30 seconds to 1 minute. Set toasts aside.
  • Beat cream cheese and mustard together with an electric mixer on medium speed in a bowl until well blended.
  • Stir corned beef, Swiss cheese, and green onion into cream cheese mixture until blended.
  • Spread cream cheese mixture evenly onto toasted rye bread slices and place on a baking sheet.
  • Broil in preheated oven until topping is lightly browned, 2 to 3 minutes.
