Next level apple crumble image

Bake an unforgettable crumble by giving each element a little TLC and choose the topping ingredients to taste. Serve with hot custard, or chilled fresh cream

225g plain flour
50g custard powder
250g cold butter , diced
100g golden caster sugar
2 tbsp Grape-Nuts cereal (optional)
75g rolled oats (optional)
50g butter
50g golden caster sugar
100ml cloudy apple juice
1 cinnamon stick
1 bay leaf
4 Bramley apples , peeled, cored and chopped into chunks
4 Cox's apples , peeled, cored and sliced into 5mm thick rounds
½ tsp ground cinnamon
½ tsp ground nutmeg
½ tsp ground ginger
½ tsp ground allspice
1 tbsp golden caster sugar

Steps:

  • For the topping, add all the ingredients - other than the optional extras - to a food processor with a small pinch of salt. Pulse until the mixture resembles large breadcrumbs, but do not overwork (this can also be done by hand). Now toss through the optional topping ingredients, if using, then tip into a container, cover and freeze for at least 1 hr or until needed. Can be made up to one week ahead. Heat oven to 200C/180C fan/gas 6. If you want a dark, crumbly topping, tip the mixture onto a baking sheet and bake for 8-10 mins until golden. Leave to cool and re-crumble, then set aside (keep the oven on).
  • For the apples, add the butter, sugar, apple juice, cinnamon and bay to a saucepan. Boil vigorously until you have a sputtering, buttery caramel. Remove the bay and cinnamon, then throw in half the Bramley apples. Cook down to a purée, then remove from the heat and stir through the rest of the Bramley apple chunks until coated. Transfer to a baking dish.
  • Heat oven to 200C/180C fan/gas 6 (if you part-baked your topping in step 1, it should already be at this temperature). Arrange the sliced Cox's apple over the cooked apples in an even layer. Sprinkle your choice of crumble mixture loosely and roughly over the top, then bake for 30-40 mins until the crumble has browned and the filling is bubbling at the sides (30 mins if you part-baked the crumble, but keep an eye on it). Leave to rest for 10 mins before serving. While the crumble is baking, make the optional sugar and spice blend by mixing all the ingredients with a small pinch of salt. Serve on the side to sprinkle over.

4 cups sliced peeled Granny Smith apples
1 tablespoon water
1 teaspoon lemon juice
1 cup white sugar
¾ cup all-purpose flour
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon salt
½ cup cold unsalted butter, cut into small pieces

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Pile sliced apples in an 8x10-inch casserole dish. Mix water and lemon juice together and sprinkle over apples.
  • Combine sugar, flour, cinnamon, nutmeg, and salt in a mixing bowl. Mix well using an electric mixer. Add butter pieces and mix until clumpy. Pour over apples, spreading to cover all but the outer edges.
  • Bake in the preheated oven until bubbly and golden, about 45 minutes. Let cool slightly to thicken before serving in bowls.

4 large Golden Delicious apples (about 3 pounds)
1/4 cup sugar
1 lemon, juiced
2 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
1 cup walnuts or pecans, roughly chopped
1 cup all-purpose flour
1 1/4 cups rolled oats
1/2 cup packed dark brown sugar
1 teaspoon ground cinnamon
Pinch fine salt
8 tablespoons (1 stick) cold butter, cut into small pieces
Vanilla ice cream, for serving, optional

Steps:

  • Position an oven rack in the center of the oven and preheat to 350 degrees F.
  • Peel, core, and slice apples into 1/4-inch slices. Place apples in a large mixing bowl and toss with sugar, lemon juice, flour, and cinnamon. Pour into a lightly greased 9 by 13-inch baking dish, and spread out into an even layer. Set aside.
  • In another large bowl, mix together the nuts, flour, oats, sugar, cinnamon, and salt for the topping. Using a pastry cutter or your fingers, gently work in the cold butter until pea-sized lumps are formed.

A warm soft apple base with a crispy crumbly top. This recipe is so easy. It is a family favorite. Although my child Lucy can not see this wonderful dessert she absolutely loves it with warm custard.

3 large cooking apples
1 tablespoon water
3 cloves or 1 teaspoon allspice
1/4 cup self-rising flour
2 tablespoons softened butter
2 tablespoons brown sugar
2 tablespoons rolled oats

Steps:

  • Preheat oven on 200 degrees celcius.
  • Peel, core and cut apples into smallish pieces.
  • Place cut apple, cloves and water into a small casserole dish.
  • Cover and place in microwave on high for about 5 minutes.
  • In a small bowl rub the butter and flour together.
  • Them stir in oats and sugar.
  • Put the crumble mixture on top of the apple and put into oven for around 5 minutes or until crispy and brown on the top.
