1 (14 1/2 ounce) can diced tomatoes with juice
1 (6 ounce) can tomato paste
2 tablespoons extra virgin olive oil
2 tablespoons chopped fresh basil (or 2 t. dried)
1 1/2 teaspoons dried oregano
1 1/2 teaspoons sugar
1/2-1 teaspoon minced garlic
3/4 teaspoon salt (or 1 1/2 t. kosher salt)

Steps:

  • In a bowl, combine the diced tomatoes with juice, tomato paste, olive oil, basil, oregano, sugar, garlic, and salt.
  • Taste and add more salt, if needed.
  • Use immediately or store in a air-tight container in the refrigerator for up to 5 days, or freeze for up to 2 months.
  • Bring to room temperature before using.

This creates a slightly sweet, intense tomato sauce typical of New York-style slices. It's also good served with pasta.

Number Of Ingredients 10

1 (28 ounce) can whole canned tomatoes
1 tablespoon extra-virgin olive oil
1 tablespoon unsalted butter
2 medium garlic cloves, grated on microplane grater (about 2 teaspoons)
1 teaspoon dried oregano
1 pinch red pepper flakes
kosher salt
2 sprigs fresh basil, with leaves attached
1 medium yellow onion, peeled and chopped fine
1 teaspoon sugar

Steps:

  • Process tomatoes and their juice through food mill, pulse in food processor until pureed, or puree with hand blender. Puree should not be completely smooth, but should have no chunks larger than 1/16 of an inch. Set tomatoes aside.
  • Combine butter and oil in medium saucepan and heat over medium-low heat until butter is melted. Add garlic, oregano, pepper flakes, and large pinch salt and cook, stirring frequently, until fragrant but not browned, about 3 minutes. Add tomatoes, basil sprigs, onion halves, and sugar. Bring to a simmer, reduce heat to lowest setting (bubbles should barely be breaking the surface), and cook, stirring occasionally, until reduced by 1/2, about 1 hour. Season to taste with salt. Allow to cool and store in covered container in the refrigerator for up to 2 weeks.

2 med yellow onion, diced
16 clove garlic, minced
4 cups heavy cream
1 1/3 T minced fresh thyme or marjoram
Salt and freshly ground black pepper

Steps:

  • In a heavy saucepan, heat the olive oil over medium heat. Add the onion and sauté for 5 or 6 minutes, or until translucent. Add the garlic and stir for 1 minute longer. Add the cream, lower the heat to medium-low, and cook for about 3 minutes, or until the cream thickens and reduces slightly. Remove from the heat, stir in the thyme, and season to taste with salt and pepper. Let cool completely before using.

2 tablespoons tomato paste
2 fresh garlic cloves, chopped finely
1 teaspoon dried basil (or oregano, or a mixture of both)
salt
cracked peppercorn

Steps:

  • Put tomatoes in a saucepan and crush with your hands.
  • Warm tomatoes over medium heat and add the rest of the ingredients and stir to incorporate.
  • Bring the sauce to just under a boil and allow to cook for about an hour to thicken.
  • Adjust seasonings.
  • If not using right away, store in a glass jar in the refrigerator for up to one week. Freezes nicely for up to 3 months.

This pizza recipe is the one Dad always made in my home, growing up. Of course, he didn't use a recipe, but I think I've figured it out pretty well. It tastes exactly like his.

1 Tbsp olive oil, extra virgin
2-3 tsp fresh garlic, minced
1 can (28) oz crushed tomatoes
1 tsp salt
1 tsp dried oregano
1/2 tsp dried basil
1/8 tsp red pepper flakes (optional)

Steps:

  • 1. Lightly sauté the minced garlic in olive oil, being careful not to burn the garlic (it will get bitter). Add the crushed tomatoes, salt, oregano & basil. Add the red pepper if you like it spicy.
  • 2. Cook on low (bubbles should barely break the surface) for about 20 minutes or until oil comes to the top. Stir it occasionally so it doesn't burn on the bottom.
  • 3. Use it immediately or store in the refrigerator or freezer.

1 pizza crust (unbaked)
1/4 lb part-skim mozzarella cheese, grated
1/4 lb colby-monterey jack cheese, grated
1/4 cup parmesan cheese, grated
1/4 teaspoon dried oregano

1/8 teaspoon black pepper
1/2 teaspoon garlic powder
2/3 cup pizza sauce

Steps:

  • In a bowl, stir together everything except the crust and sauce.
  • Spread sauce evenly over crust, leaving a 1/4 inch border.
  • Sprinkle cheese mixture evenly over pizza.
  • Bake according to the directions for your chosen crust.
  • Let cool for about 3 minutes before slicing and serving.

2 garlic cloves, minced in food processor
1/2 teaspoon dried oregano leaves
1/2 teaspoon dried basil leaves
1/4 teaspoon salt
1/4 teaspoon Lawry's Seasoned Pepper or 1/4 teaspoon ground black pepper
1/4 teaspoon brown sugar
1/4 teaspoon onion powder
1/8 teaspoon mccormick crushed red pepper flakes

Steps:

  • In a bowl, blend the garlic, the tomatoes and all other ingredients and crush the tomatoes by hand. Place the minced garlic, tomatoes and all other ingredients in a food processor and process until tomatoes are crushed, but not pureed.
  • Spread evenly on pizza dough and top with cheese, pepperoni, etc. Makes enough sauce for 2 - 12"-inch pizza.
