1 1/2 lbs yukon gold potatoes
1/2 cup butter
1/2 cup garlic scape, very finely chopped
1/3 cup whipping cream

Steps:

  • Cook potatoes in salted boiling water until tender.
  • Melt butter& saute scapes for about 5 minutes.
  • Remove from heat& stir in cream.
  • Drain potatoes& mash.
  • Add garlic mixture& combine well.

The grill gives the boiled potatoes just the right amount of crispness, plus a deliciously smoky flavor. Add garlic, and this dish becomes the surprise hit of the menu: really simple, and really good.

1 1/2 pounds baby red potatoes
Large-flake sea salt
3 tablespoons extra-virgin olive oil
1/4 cup fresh flat-leaf parsley, coarsely chopped
2 garlic cloves, finely grated

Steps:

  • Heat grill to medium-high. Place potatoes in a large pot, and fill with cold water. Season with salt, and bring to a boil. Reduce heat, and simmer until potatoes are tender, 12 to 13 minutes. Drain, and let cool slightly. Halve potatoes, and toss with 1 tablespoon oil.
  • Meanwhile, whisk together parsley, garlic, and remaining 2 tablespoons oil in a large bowl.
  • Grill potatoes directly on grates, flipping, until slightly charred and crisp, 1 to 2 minutes per side. Toss with garlic-herb oil. Season with salt.

I love this recipe. It is so simple, and yet, so delicious. I serve these potatoes with my Tarragon Cream Chicken. However, they are a delicious accompaniment to any meal. I took this recipe from Southern Living. It can be found in their Ultimate Quick and Easy cookbook. I generally do make a couple of changes- I add 1/4-1/2 tsp. salt to the garlic butter. I also often add minced fresh dill when I have it. Enjoy!

18 new potatoes, quartered (about 2 3/4 lbs.)
1/4-1/3 cup butter
2 -4 garlic cloves, minced (more or less to taste)
1 tablespoon chopped fresh parsley
1/4 teaspoon pepper
1/4-1/2 teaspoon salt (not in original recipe) (optional)
1/2-1 tablespoon chopped fresh dill (not in original recipe) (optional)

Steps:

  • Add potato to salted water in a large saucepan. Cook, covered, 10 minutes or until tender. Drain. (Do NOT overcook the potatoes- they will be mushy!).
  • Meanwhile, melt the butter in a small skillet over medium-high heat.
  • Add garlic and salt (optional). Cook, stirring constantly, for 3 minutes or until garlic is tender.
  • Add parsley, pepper, and dill (optional). Pour over potatoes, tossing gently to coat.
  • Enjoy!

10 red potatoes, scrubbed & cubed (2 1/2 lbs)
3 stalks celery, chopped
1 tablespoon extra virgin olive oil
1 cup finely chopped garlic scape
1/2 cup finely chopped red onion
2/3 cup buttermilk
1/4 cup light mayonnaise
3 tablespoons chopped fresh dill
1 tablespoon Dijon mustard
3/4 teaspoon salt
3/4 teaspoon pepper

Steps:

  • Cover& cook potatoes in a pot of boiling salted water until tender, about 10 minutes.
  • Drain& place in a large bowl; add celery.
  • Heat oil in nonstick skillet over medium-high heat; fry scapes& onion, stirring occasionally, until onions are softened& scapes are tender-crisp, about 5 minutes.
  • Add to potatoes.
  • DRESSING: Whisk together buttermilk, mayo, 2 tbsp of the dill, mustard& seasonings in a bowl; pour over potato mixture& toss to coat.
  • If a moister salad is preferred, add a little more buttermilk.
  • Garnish with remaining dill.
  • Cover& refrigerate for up to 2 days.
