2 tablespoons butter
2 lbs scallops
1 lb small mushroom
1/4 cup butter
1 tablespoon minced garlic (I use the pre-minced in a jar)
4 tablespoons flour
1 cup chablis or 1 cup Chardonnay wine
1 1/2 cups light cream or 1 1/2 cups half-and-half
salt
pepper
paprika (to garnish)

Steps:

  • Butter a large baking dish with 2 tbsp.
  • butter.
  • Layer mushrooms on bottom and top with scallops.
  • Sprinkle with salt and pepper.
  • Melt 1/4 cup butter and stir in flour.
  • Gradually stir in wine and cook until sauce is thick.
  • Gradually stir in cream and season with salt and pepper.
  • pour sauce over casserole.
  • Sprinkle with paprika.
  • Cover and bake at 350 for 30 to 40 minutes.

1 lb scallops
1 lb medium shrimp
1 lb crabmeat
2 lbs boneless haddock
12 ounces shredded mozzarella cheese
2 1/2 cups Ritz cracker crumbs
1/2 cup butter (melted)
1 teaspoon garlic powder
1 1/2 teaspoons Worcestershire sauce

Steps:

  • In a well-buttered 9"x13" baking dish, layer seafood in the order listed; cover with cheese. Mix together the Ritz cracker crumbs, butter, Worcestershire sauce and garlic powder; spread over the cheese, covering top.
  • Bake uncovered at 350 degrees for 45 minutes. Serve the casserole with a wedge of lemon.

I got this recipe from Maine Favorite Restaurants And Special Places Cook Book. They closed their restaurant in South Portland, Maine but still have their Dover, New Hampshire restaurant open last time I knew. A great place for seafood.

1 lb fresh haddock fillet
3/4 lb sea scallops
3/4 lb shrimp, 50-60 count peeled and deveined
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Old Bay Seasoning
1 cup Ritz cracker, crushed
4 tablespoons butter, melted
1/4 cup cooking sherry
1/2 fresh lemon
2 teaspoons fresh parsley, chopped

Steps:

  • Preheat oven to 375 degrees.
  • In a fry pan add 2 tablespoons of butter and the sherry to scallops and shrimp, saute for approximately 4 minutes or until 1/2 cooked.
  • Put sauteed mixture into a 9x12 glass baking dish including 1/2 the juices.
  • Sprinkle salt, pepper and Old Bay over the top and stir.
  • Add the remaining 2 tablespoons of butter to the crushed ritz crackers and mix well and sprinkle over the top of the scallops and shrimp.
  • Slice haddock fillets to 1/2 inch thin and put over the top of the casserole.
  • Squeeze fresh lemon over the haddock and sprinkle with parsley for color.
  • Bake for 15 minutes or until haddock flakes with a fork.

Whenever we get back to the Boston area, it's a priority to to have a meal at Legal Seafoods. I recently "re-discovered" this recipe buried in old newspaper clippings. I had tried to recreate it in the past but now know I was missing the most important ingredient - buttermilk. I made it again after posting the recipe so I have edited the original description. It's even better than I remembered, you might want to try just a dash (or more) of cayenne pepper. It's delightful !

2 lbs sea scallops
salt and pepper
1 teaspoon fresh thyme leave, minced
1/2 cup buttermilk
2 cups hand crushed Ritz crackers
1/2 cup butter, melted
1 small lemon, halved

Steps:

  • Preheat oven to 400°F.
  • Place scallops in a bowl, season with salt and pepper, add thyme and buttermilk and toss to coat.
  • Place scallops, with buttermilk, evenly in the bottom of an oven proof dish, sprinkle with cracker crumbs and top with melted butter.
  • Bake for 20 minutes, squeeze lemon over scallops and serve immediately.
