2 tablespoons butter
2 lbs scallops
1 lb small mushroom
1/4 cup butter
1 tablespoon minced garlic (I use the pre-minced in a jar)
4 tablespoons flour
1 cup chablis or 1 cup Chardonnay wine
1 1/2 cups light cream or 1 1/2 cups half-and-half
salt
pepper
paprika (to garnish)

Steps:

  • Butter a large baking dish with 2 tbsp.
  • butter.
  • Layer mushrooms on bottom and top with scallops.
  • Sprinkle with salt and pepper.
  • Melt 1/4 cup butter and stir in flour.
  • Gradually stir in wine and cook until sauce is thick.
  • Gradually stir in cream and season with salt and pepper.
  • pour sauce over casserole.
  • Sprinkle with paprika.
  • Cover and bake at 350 for 30 to 40 minutes.

1 lb Naked Sea Scallops thaw and patted dry
2 tbsp. Butter melted
0.25 cup White Wine use what you drink!
1 tsp. Fresh Garlic chopped finely
0 to taste Kosher Salt + Fresh Ground Black Pepper
6 tbsp. Butter melted
2 cups Oyster crackers coarsely ground / crushed
2 tbsp. Fresh Parsley chopped
0.5 Lemon, zested

Steps:

  • Pre heat oven to 450°F.
  • Pulse oyster crackers in a food processor until coarsely ground. If you do not have a food processor, place in Ziploc bag and crush until coarse.
  • Add melted butter, parsley, and lemon zest. Pulse (or mix well) JUST to combine and keep chilled.
  • In a bowl, combine the scallops, garlic, wine, and melted butter. Toss well to combine.
  • Season scallops with salt and pepper.
  • Transfer to a casserole dish in one layer. Sprinkle the cracker mixture evenly over the scallops.
  • Bake for 14-16 minutes, until crumbs have browned and scallops are cooked through.

1 lb scallops, cut large scallops in half
1 tablespoon butter
1 medium onion, chopped finely
1/2 cup celery, chopped
1 cup fresh mushrooms, chopped
1 (10 ounce) can cream of mushroom soup
2/3 cup milk
3/4 cup soft fresh breadcrumb
1/2 cup grated cheddar cheese
fresh ground pepper

Steps:

  • Bring medium-size saucepan of water to a boil, add scallops.
  • Reduce heat to low and simmer gently for no more than 3 to 5 minutes, depends on the size of the scallops.
  • Drain immediately and place scallops into a medium-size buttered casserole; set aside.
  • In the saucepan, melt butter.
  • Add onion, celery and mushrooms; saute until onions are translucent and most of moisture has evaporated.
  • Combine soup and milk and add to the vegetables.
  • Pour soup mixture over scallops in the casserole; season with pepper, stir gently.
  • Spread fresh breadcrumbs over top and sprinkle with cheese.
  • Bake uncovered at 350 degrees for 20-25 minutes, until bubbly and lightly browned.

2 lbs boneless haddock
12 ounces shredded mozzarella cheese
2 1/2 cups Ritz cracker crumbs
1/2 cup butter (melted)
1 teaspoon garlic powder
1 1/2 teaspoons Worcestershire sauce

Steps:

  • In a well-buttered 9"x13" baking dish, layer seafood in the order listed; cover with cheese. Mix together the Ritz cracker crumbs, butter, Worcestershire sauce and garlic powder; spread over the cheese, covering top.

With this recipe special care should be taken not to over salt because when wine is added to a sauce it will intensify the saltiness. Wine should only be added to a hot sauce just prior to serving. Avoid boiling a sauce after wine has been added. This recipe will also work well with scallops, crabmeat, or a combination of seafood. 20 ounces lobster meat (bite sized chunks)
1/4 cup butter
2 cups milk
3 tablespoons all-purpose flour
2 tablespoons chopped onions
1/4 cup white wine
2 tablespoons prepared mustard
salt and pepper
1 teaspoon parsley flakes
1 teaspoon Lea & Perrins Worcestershire Sauce
1 dash Tabasco sauce
1/2 teaspoon curry powder
1/2 cup Ritz cracker, topping

Steps:

  • Heat the milk in a heavy saucepan over a medium heat until the milk just starts to simmer.
  • In a separate saucepan melt the butter and sauté the onions until they become transparent.
  • Add the flour to the butter and onion mixture making a roux and continue to cook for a bout a minute.
  • Slowly add the hot milk to the roux while whisking until all the milk is incorporated into the sauce.
  • Add the prepared mustard, parsley flakes, Lea & Perrins, Tabasco Sauce, and curry powder and simmer over a low fire for about 10 minutes.
  • Add the white wine and simmer for an additional 10 minutes.
  • Adjust seasoning with salt and pepper and remove from heat.
  • Place the lobster chunks in a mixing bowl and add the hot sauce and mix until a nice blend is achieved.
  • Place this mixture into an appropriate sized casserole or 4 individual ceramic bakers. Top with Ritz Cracker topping and bake in a 375° oven for approximately 20 minutes or until the sauce begins to bubble at the center of the casserole.
  • Remove the casserole from the oven and brown the top under the broiler if desired.
  • Serve at once.
