SOUTHERN-STYLE BIRDS IN A NEST WITH BUTTER GRITS, GREENS WITH BACON, OVER-EASY QUAIL EGGS AND GREEN TOMATO AND GREEN APPLE CHUTNEY

Steps:
- For the chutney: Combine the green tomatoes, brown sugar, cider vinegar, curry powder, mustard seeds, fennel pollen, allspice, ginger, apple and red onion in a medium heavy-bottomed pot. Bring to a boil, then reduce to a simmer. Cook, stirring occasionally, for about 30 minutes. Taste and thin with chicken stock as desired. Adjust the seasonings to taste.
- For the greens and bacon: Heat the olive oil in a large skillet over medium-high heat. Add the bacon and cook, stirring occasionally, until crisp; remove to a paper-towel-lined plate. Lower the heat to medium, add the garlic and shallot, and cook, stirring occasionally, for 3 to 5 minutes. Add in the chard and beet greens and let wilt for a few minutes. Deglaze the pan with vinegar, then add the sugar, nutmeg, salt and pepper to taste, and a dash of hot sauce. Add some of the bacon back to the pan, and combine. Use the remaining bacon as garnish.
- For the butter grits: In a medium saucepan, bring the chicken stock, 1 teaspoon salt and 1 tablespoon of the butter to a boil. Add the grits and bring to a simmer. Stir, then partially cover, and cook, whisking occasionally, until the liquid is absorbed, about 15 minutes.
- Add in 1/2 cup milk, whisk and partially cover. Cook, whisking occasionally, for another 15 minutes.
- Add in the remaining 1/2 cup milk and cook partially covered, whisking occasionally, another 15 minutes.
- Add the remaining tablespoon butter and season to taste with salt. Use additional stock to adjust the consistency as needed. Serve the grits with the quail eggs.
EGGS IN A NEST
Steps:
- Use a 3-inch cookie cutter to cut a shape out of the bread. Melt the butter in a griddle or frying pan. Place the bread in the pan and break an egg into the hole. Lay the cutout shape in the pan wherever it will fit and toast until golden brown. Sprinkle the egg with salt and pepper.
- When the egg is cooked on the bottom and before the bread becomes too brown, flip the egg nest to toast the other side and finish cooking the egg, about 1 minute. Serve with toasted shape.

- Preheat oven to 350. Grease large muffin tins. Line with ham and break egg over top. Add cream and sprinkle with cheese and basil. Bake 20 minutes. Serve on half a toasted english muffin. (Place water in any unused muffin cups to prevent damage). In a separate pan make a package of Knorr Swiss hollandaise sauce. Spoon the sauce over each egg/muffin and top with a little fresh cracked pepper and there you go eggs benedict.

- Divide sausage into six equal portions. Pat each into a 4-1/2-in. x 3-in. rectangle and wrap around an egg, pressing to cover. Place coating mix in a plastic bag. Dip egg in milk and shake in coating mix. Place eggs 1 in. apart on a baking sheet. , Bake, uncovered, at 400° for 25-30 minutes or until lightly browned.

- Preheat oven to 350.
- Grease large muffin tins with Pam. Rip/shred the ham to fit around the muffin tin, making sure the bottom and sides are covered. Break egg over top of ham. Add cream and sprinkle with cheese and basil. (can be done ahead of time) Bake 12 - 15 minutes. (place water in any unused muffin cups to prevent damage).
- Serve on half of a toasted english muffin.
- The amount of the basil is only a guideline. Dried basil can be used quite successfully.

- Preheat oven to 400 degrees.
- Grease muffin pan with cooking spray.
- Mix Simply Potatoes® Shredded Hash Browns, green onion, pepper, salt and oil.
- Divide potatoes between 12 muffin cups, pressing against sides and bottom (as high as you can because they shrink down).
- Bake 25 minutes.
- While contents are in oven fry bacon and red bell peppers for about 7 minutes over medium heat.
- Add bacon and pepper mixture with beaten eggs and milk.
- Season with salt and pepper to taste.
- Pour egg/bacon/bell pepper mixture over cooked hash brown/green onion cups.
- Sprinkle cheese on top.
- Cook for 15 minutes and cheese is melted.

- Preheat the oven to 450°F.
- Spray the inside and lid of a cast-iron Dutch oven with olive oil.
- Scatter the cumin seeds in the pot, followed by the garlic, onion, and bell pepper. Toss in the potato cubes and lightly season with salt and pepper. Sprinkle on the chile.
- Pack in the cabbage. Make four wells in the cabbage, each large enough to hold an egg. Then crack each egg into a well, keeping the yolks intact. It's okay if the eggs leak out of their individual wells slightly. Lay the bread slices on top.
- Cover and bake for 30 to 35 minutes, or until 3 minutes after the aroma of a fully cooked meal escapes the oven. Serve immediately.

- Preheat oven to 400 degrees F (200 degrees C).
- Pour milk into a shallow dish; empty the packet of seasoned coating into a large plastic zipper bag. Divide the pork sausage into 6 equal portions, and cover each egg completely with a layer of sausage. Roll the sausage and egg balls in the milk, and place in the plastic bag. Seal the bag, and gently shake until balls are covered with seasoned coating. Place the coated sausage and egg balls onto a rack over a baking dish.

- Using a teaspoon, scoop out yolks; place in a small bowl.

- Make Sauce:.
- Combine the ponzu sauce and the ketchup in a small saucepan. Add oregano. Heat to medium heat and simmer to reduce liquid, about 5 minutes. Set aside.
- Finely chop the radish and add to slightly cooled sauce (if using).
- Heat the olive oil and butter in a frying pan. Saute green bell pepper, onion, and cabbage over medium heat until tender and starting to brown, 5-8 minutes. Remove to serving plate, spreading out just a little to make nest for egg.
- In same pan add the 1 teaspoon oil or butter and saute the egg to desired doneness(turning over once).
- Place the egg over the sauteed veggies. Drizzle with the sauce(I used several tablespoons). Dig in and enjoy!
- Good served with a piece of toast.
HUEVOS AL NIDO (EGGS IN A NEST) SPANISH
You can make most of this recipe ahead of time. This is usually cooked on the stovetop. I have adapted to cook in the oven and then serve. It is a great breakfast meal. Two ways to serve 1. Separate the eggs, beat the whites, 2. Leave the eggs whole with the whites. Your preference. I use the hard dinner rolls that are very soft in the center, again your preference.

- Take each roll and cut a deep cap from the top of roll. Reserve the cap. With your fingers remove the bread from the inside of the roll. Do not break through the roll. Make sure these are the large rolls.
- Make enough cavity for the egg to fit.
- Reserve the bread.
- Warm the milk in the microwave.
- Divide the milk between the roll. Roll them around so the sides get coated with the milk.
- Add 1 tblsp butter to each roll.
- Optional: Add 1 tblsp taco seasoned hamburger.
- Drop the whole egg into the roll. Make sure the rolls are sitting flat.
- Option: Separate the eggs, and drop the yolk into each roll.
- Salt and pepper to taste.
- If eggs are separated, whip the whites in a metal bowl and add 1/2 tsp cream of tartar.
- Spoon the whites over the yolk evenly between the six rolls.(You may have more whites and may not use all of the whites.
- Place the caps back on the rolls.
- Preheat oven to 375*.
- Place the rolls on a flat baking pan.
- Baste the rolls, sides and tops with olive oil.
- Note: You may bake the tops separately on the sheet and not cover the rolls if you wish. Make sure you baste the bottoms of the tops if you bake separately.
- Bake 20 to 25 minutes.
- Note: I like to take the reserved bread, crumble it, mix with shredded cheese and coat with a little olive oil in a saute pan for a couple of minutes and serve as a "topper".
- The eggs will look like they are still uncooked, they are -- do not overcook.

- Grease a 18cm loose bottomed round cake tin with a little butter and line with a circle of baking paper. Melt the butter in a large heatproof bowl in the microwave or in a medium sized pan over a low heat. Whiz the chocolate digestives in a food processor until reduced to fine crumbs then tip into the melted butter. Spoon the biscuit mixture into the base of the prepared tin - press down well with the back of a spoon.
- In a large mixing bowl whisk together the rest of the cheesecake ingredients then pour into the tin. Smooth the top with a spatula then place in the fridge for at least 2 hrs or overnight.
- When you're ready to serve carefully transfer the cheesecake to a serving plate or cake stand and sprinkle the top with coconut flakes - making a bigger mound in the centre then arrange the meringue nests on top. Fill the nests with mini eggs, extra sprinkling of coconut, hundreds & thousands and the fluffy chicks.

SUNKEN EGGS IN A SPINACH NEST
It's a German tradition to have spinach and eggs for Maundy Thursday. My mom used to make it with frozen spinach, a can of mushroom soup and sliced hard-boiled eggs. This version has some of the same ingredients, but baked eggs, not boiled and added potatoes. Don't skip the nutmeg - it really adds authenticity!!

- 1. Heat oil in skillet or pot large enough to hold all the spinach. Cook onion until softened, add garlic, cook for another minute.
- 2. Leave a little water clinging to the spinach when you wash it! Add spinach and stir to combine with onion and garlic. Cover pot, lower heat and steam spinach until wilted -about 3 minutes. Stir occasionally. Stir in 2/3 of the milk, remove from heat. (If too liquid, keep on heat and stir until somewhat reduced.)
- 3. In an oven-proof dish, spray with Pam or similar, and spread out the sliced potatoes. Season with salt and pepper. Cover with the spinach mixture. Using a spoon, make 4 egg-sized indentations in the spinach. Carefully crack an egg into each indentation. Sprinkle with nutmeg, salt and pepper. Pour the remaining milk over the spinach and add shredded cheese, being careful that the eggs are not covered.
- 4. Bake at 350ºF for 20-30 minutes, depending on how set you like your eggs. (NOTE: I baked mine for about 25 minutes and the eggs were completely cooked. If you like runny yolks, cook for less time.)
