2 cups pecan halves
1/2 cup granulated sugar
1 teaspoon ground cinnamon
1/4 cup tap water

Steps:

  • Heat all the ingredients in an iron skillet on medium heat.
  • Stir constantly with a wooden spoon until all the moisture is cooked out.
  • Sugar will crystallize on pecans.
  • Turn out on wax paper.
  • Break apart as they cool.

1 tablespoon pecan praline flavored ground coffee
2 tablespoons orange juice
1/2 teaspoon ground cinnamon
1/4 teaspoon ground red pepper
2 cups pecan halves

Steps:

  • Melt butter in a large skillet over medium heat; add brown sugar and next 4 ingredients. Stir well.
  • Add pecans, stirring well to coat. Remove from heat.
  • Spread coated pecans on a lightly greased 15" x 10" x 1" jellyroll pan.
  • Bake at 325° for 14 to 15 minutes, stirring every 5 minutes. Cool completely. Break nuts apart.

Steps:

1 egg white
4 cups pecan halves

Steps:

  • Preheat oven to 325 degrees F (160 C).
  • Combine sugar, cinnamon and salt in small bowl.
  • Whisk egg white in large bowl until frothy. Add pecans to egg white and toss well to coat.
  • Add sugar mixture and toss carefully and thoroughly doing your best not to break the pecans.
