2 1/2 cups oatmeal (blended)
2 cups flour
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 cup unsalted butter (room temperature)
1 cup granulated sugar
1 cup light brown sugar (firmly packed)
2 eggs
1 teaspoon vanilla
12 oz. chocolate chips (2 cups)
1 4 oz. Hershey bar, grated
1 1/2 cups chopped nuts

Steps:

  • Preheat oven to 375 degree F.
  • Add the oatmeal to a blender and blend into a course flour or powder.
  • In a medium bowl, mix together flour, blended oatmeal, salt, baking powder, and baking soda.
  • In the bowl of an electric mixer, fitted with the paddle attachment, beat the butter and sugars, on medium-high speed, until light and fluffy. Beat in the eggs and vanilla until well blended, scraping down sides of the bowl as needed.
  • Add flour mixture; mix just until blended. Stir in chocolate chips, grated chocolate, and nuts. (Optional: cover dough and chill 30 minutes - add a minute or two to the cook time if using chilled dough.)
  • Roll into balls and place two inches apart on cookie sheet. Bake for 10 to 12 minutes.
  • Let cookies cool for 5 minutes on baking sheet before transferring cookies to racks to cool completely.

2½ cups rolled oats
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 cup unsalted butter (at room temperature)
1 cup granulated sugar
1 cup light brown sugar
2 eggs
1 teaspoon vanilla extract
12 ounces semisweet chocolate chips
4 ounces milk chocolate (grated or finely chopped)
1½ cups chopped walnuts

Steps:

  • Preheat oven to 375 degrees F. Line three baking sheets with parchment paper.
  • Blend the oats in a food processor or blender to a fine powder. In a medium bowl, whisk together the blended oats with the flour, baking powder, baking soda and salt; set aside.
  • In the bowl of an electric mixer, cream together the butter and both sugars until light and fluffy, 3-4 minutes. Scrape down the sides of the bowl and beat in the eggs one at a time, beating well after each addition. Beat in the vanilla extract. Reduce the mixer speed to low and gradually add the flour mixture, beating just until incorporated. With a rubber spatula, fold in the chocolate chips, grated chocolate and walnuts.
  • Roll the dough into 2-ounce balls (or about 2 heaping tablespoonfuls worth) and place about 2 inches apart on the baking sheets. Bake one sheet at a time until the edges are set but the center still looks undone, about 10 minutes. Cool the cookies completely on the baking sheets. The cookies can be stored in an airtight container at room temperature for up to 4 days (they can also be frozen for up to 2 months).

Almost everybody has heard the one about the woman lunching at the Neiman Marcus Cafe in Dallas, who enjoyed the chocolate chip cookies so much that she asked for the recipe. For "only two-fifty," the waitress said, it was hers. But when the credit card bill arrived, the woman found the total near $300. Turns out the recipe cost $250, the story goes. In 1997, after years of enduring the myth, Neiman Marcus came up with a recipe - and gave it out for free. It's a delicious variation on chocolate chip cookies, using ground oatmeal, nuts and adding extra chocolate with a grated Hershey bar (you can use any brand you love).
