MIXED LEAFY GREEN SOUP "CALDO VERDE" WITH CHICKPEAS

Mixed Leafy Green Soup

Caldo verde means "green broth" in Portuguese, and it is Portugal's unofficial national dish. This beautiful green soup is technically a hot smoothie, since its many nutritious greens are pureed together in a blender. Chickpeas are an important ingredient here, too. Fiber- and protein-rich, they've been shown in studies to help people lose weight. For added protein, top with 4 ounces of shredded chicken or add 2 dozen clams to the broth.

Yield 4 servings

Number Of Ingredients 9

1 1/2 teaspoons olive oil
1 tablespoon plus 1 teaspoon chopped garlic
1 cup small-diced onions
1 teaspoon smoked paprika
8 cups mixed leafy greens (kale, collards, and mustard)
1 cup no-salt-added chickpeas (garbanzo beans)
1 quart unsalted chicken stock (such as Kitchen Basics)
Salt
Freshly ground black pepper

Steps:

  • Pour the olive oil into a large pot, and place over medium-high heat. Add the garlic and cook until golden brown, about 2 minutes. Add the onions and paprika; lower the heat to medium; and cook, covered, until tender, 2 to 3 minutes.
  • Put the greens into a blender and blend until pureed (you may use a little water to help, or use the wand tool that comes with some blenders to force the greens to blend without water). Pour this mixture into the pot, increase the heat to high, and cook until the water has evaporated from the greens.
  • Pour two-thirds of the chickpeas into the blender with 1 cup of the stock and blend until smooth. Add the pureed chickpeas to the pot with the remaining chicken stock and chickpeas and bring to a simmer. Cook covered until the greens are tender and the soup has thickened, about 10 minutes. Season with salt and pepper. Ladle the soup into four bowls and serve.

" NEGATIVE CALORIE " VEGETABLE BARLEY SOUP

I came up with this for my diet by combining other recipes, adding and deleting things, and tweaking it to my liking. I eat 2 cups (one serving) at lunch or dinner, for a low calorie "filler". Plus it's high in fiber (and great for you, too!).

ZONYA'S MIRACLE SOUP

Zonya's Miracle Soup image

Ever heard of a negative-calorie food? That's a food that takes more calories to burn than it yields. Hence, the name "Miracle," because this soup is great for weight loss. Enjoy a bowl with lunch and dinner! A pot lasts several days. This recipe was created by dietitian, Zonya Foco, and is so popular and delicious I had to share. I mean, come on, a soup that actually burns calories. What's not to love? And wait until you taste it.

  • This recipe makes 16 1-1/2 cup servings.

  • Before experimenting with the soup, I suggest you make the first batch exactly to get the nutritional values, and to also see how you really will not need to improve on it. It is delicious, it has some bite from the spices, it is filling and has no annoying cabbage taste, It is really comforting and full of flavor.
  • For the Soup mix, I use Lipton's Recipe Selects. They come in a box with two 10 ounce envelopes. For the cabbage, use a food processor or buy in a bag pre-shredded. 4 cups is about 1/2 head of a large cabbage. Where I live it is hard to find the Tomato Juice, but it is made by Campbell's. Sacramento brand has too much sodium. However, I find that the Vegetable Broth/Stock works just fine and is easier to get. For the canned tomatoes, you can also use canned Stewed tomatoes if they're available in low sodium.
  • Perfect for Lunch or Dinner when dieting with Low-Fat wheat crackers or a sandwich, and some sliced fruit.
