A refreshingly sweet and tangy blend. Especially good when cooked on the grill and served with a mild fish such as tilapia. If you are grilling fish, the salsa can be cooked on the grill at the same time and served over the fillets.

2 nectarines, pitted and chopped
¼ medium red onion, finely chopped
¼ cup balsamic vinegar
1 teaspoon white sugar
½ teaspoon dried cilantro
½ teaspoon kosher salt
freshly ground black pepper to taste

Steps:

  • In a bowl, mix the nectarines, onion, vinegar, sugar, cilantro, salt, and pepper. Allow to sit 5 minutes.
  • In a skillet over medium heat, cook and stir the nectarine mixture 10 minutes, until onion and nectarines are tender and lightly browned.

I've always loved the marvelous contrast between a hot, smoky piece of meat, and a cold, fruity salsa; and this version featuring nectarines did not disappoint. In fact, the only thing that pairs better with this fresh fruit salsa is a basket of crispy tortilla chips.

1 cup finely diced nectarine
½ cup finely diced red bell pepper
⅓ cup finely diced onions
2 tablespoons finely diced jalapeno pepper
1 tablespoon chopped fresh cilantro
1 tablespoon fresh lime juice
2 teaspoons olive oil
½ teaspoon salt, plus more to taste
1 pinch cayenne pepper
1 pinch freshly ground black pepper

Steps:

  • Combine nectarines, bell pepper, onions, jalapeno pepper, and cilantro in a bowl. Stir in lime juice, olive oil, salt, and cayenne pepper.
  • Cover bowl with plastic wrap. Refrigerate to let flavors develop, 30 minutes to 1 hour.
  • Before serving, stir in black pepper. Add a pinch more salt, if needed.

I love nectarines more than peaches, so I came up with this salsa recipe for a summer party. Of course, use peaches if you have them instead!

3 nectarines, pitted & diced
1 medium size cucumber, peeled, seeded and diced (English is fine)
1/2 shallot, diced
2 scallions, thinly sliced
1/4 cup fresh parsley, minced
1/4 cup fresh cilantro, minced
2 tablespoons apricot preserves
2 tablespoons lime juice, plus more to taste
1/2 teaspoon cumin
salt

Steps:

  • Mix together first 6 ingredients.
  • In a separate small prep bowl, mix apricot preserves, lime juice and cumin.
  • Add to salsa mixture.
  • Salt to taste.
  • Enjoy!

1/2 cup chopped white onion
2 tablespoons fresh lime juice
2 teaspoons finely chopped fresh serrano chile, including seeds
1 teaspoon finely chopped fresh cilantro
1 teaspoon sugar
1/4 teaspoon salt

Steps:

  • Stir together all ingredients and let stand at room temperature, stirring occasionally, 1 hour, to allow flavors to develop.

NECTARINE SALSA

This is a variation on a nectarine salsa a local pick-your-own farm sells. They printed their recipe in the local paper a few years ago, to their detriment, since I now make my own instead of buying theirs! Jalapeno pepper is optional. Ever since the time I got some on my bare hands and couldn't wear my contact lenses for two days, I've been leery of them, and this tastes fine with or without it. Obviously it will have more of a kick with it. You can also substitute lemon juice for the lime juice. I've also used peaches or pineapple in this. My husband and I have been known to devour this in one sitting. It tastes even better if you put it in the fridge and let the flavors mingle, provided you've the patience to wait that long.
