BROCCOLI CAESAR



Broccoli Caesar image

Broccoli stems are tender and delicious, but it's important to cut away the dried-out base and peel the tough skin of thicker ones.

2 oil-packed anchovy fillets (optional)
1 garlic clove, thinly sliced
1/4 cup fresh lemon juice
2 tsp. Dijon mustard
Kosher salt
1 large egg yolk or 2 Tbsp. mayonnaise
1/2 cup extra-virgin olive oil
3 Tbsp. grated Parmesan, plus more shaved for serving
2 medium heads of broccoli (about 1 1/2 lb.)
1/4 head of savoy or Napa cabbage
Finely grated lemon zest (for serving)
Freshly cracked black pepper

Steps:

  • Using the side of a chef's knife, mash anchovies, if using, and garlic on a cutting board until a smooth paste forms. Transfer paste to a large bowl and whisk in lemon juice, mustard, and a big pinch of salt. Add egg yolk (or mayonnaise) and whisk until smooth. Gradually add oil, whisking constantly until emulsified. Whisk in 3 Tbsp. grated Parmesan.
  • Trim woody ends from broccoli stems, preserving as much stem as possible. Peel any thick stems to expose tender inner cores. Cut off florets as close to the dark green flowers as possible and break into bite-size pieces. Add to bowl with dressing. Starting at the floret ends of the stems, slice very thinly crosswise and add to bowl. Thinly slice cabbage crosswise (you should have about 2 cups) and add to bowl with broccoli. Toss until broccoli and cabbage are combined and evenly coated with dressing; season with salt. Let sit 10 minutes.
  • Top salad with shaved Parmesan, some lemon zest, and a few healthy grinds of pepper.
  • Do Ahead
  • Dressing can be made 2 days ahead. Cover and chill.

SALSA DI PARMIGIANO

1/2 pound Parmesan, not too dry
1/2 pound Asiago cheese, not too dry
2 teaspoons minced garlic
2 teaspoons dried oregano
1 teaspoon red pepper flakes
2 tablespoons chopped green onion
1 1/2 cups extra-virgin olive oil
1 teaspoon freshly ground black pepper

Steps:

  • Remove any rind from the cheeses and chop the cheeses into rough 1-inch chunks. Place the cheese in a food processor with the garlic, oregano, and red pepper flakes and pulse until reduced to the size of fine pea gravel. Stir in the green onion, olive oil and black pepper and pulse again. Cover and let stand at room temperature for at least 4 hours before using.

4 chicken breasts, skin on with drummette
1/2 cup hoisin sauce
1 tablespoon sambal
1 bunch chopped scallions
1/2 cup red wine
1/4 cup minced garlic
1/4 cup minced ginger
1 teaspoon black pepper
1/2 cup fish sauce
1/2 cup rice wine vinegar
1/2 tablespoon chile flakes
1/2 bunch basil chiffonade
1/2 tablespoon sugar
Salt and black pepper to taste
3 cups napa cabbage chiffonade
1 cup carrots shredded
1 cup bean sprouts
1/2 cup scallions chopped

Steps:

  • Mix all ingredients together and marinate chicken, covered and refrigerated at least 4 hours, preferably overnight. On a hot grill, season chicken and cook through, about 8 minutes a side. Be careful not to burn the skin.
  • SLAW: In a bowl, whisk together fish sauce, vinegar, chile flakes, basil and sugar. Toss together the vegetables together and add to vinaigrette. Toss well and check for seasoning. This should rest for 10 minutes before serving.

1/3 pound parmesan cheese
1/3 pound asiago cheese
3 cloves garlic, minced
2 teaspoons dried oregano
1 teaspoon freshly ground black pepper
1/2 teaspoon red pepper flakes
3/4 cup extra virgin olive oil
1/4 cup balsamic vinegar

Steps:

  • Chop the cheeses into small chunks, and add to the work bowl of a food processor. Pulse the cheese on and off until they are the size of peas. Remove the cheese from the work bowl, and add the garlic, oregano, pepper, and oil, to the cheese mixture, stirring to blend. Let the cheese stand at room temperature for at least 4 hours before serving. When ready to serve, add the vinegar, and stir with a fork, so that the vinegar blends with the oil Pour the cheese into a bowl, and serve surrounded by baguettes.

Marinated Parmesan is a simple to prepare appetiser that is packed full of delicious flavours. Garlic, oregano and a little chilli combine with the Parmesan and Extra Virgin Olive Oil, which works perfectly with slices of crusty bread. This easy appetiser will become a favourite!

200 g (7 oz) Parmesan cheese - I use Grana Padano (See Note 1)
1 clove garlic - minced
1 tsp dried oregano
1/2 tsp chilli/red pepper flakes - or to taste
1/3 cup (75 ml) extra virgin olive oil (See Note 2)
1 spring onion/scallion

Steps:

  • Cut your Parmesan into cubes - roughly 1 cm (1/2 inch).
  • Add the Parmesan to a bowl, and add your remaining ingredients.
  • Mix together and allow to sit for 30 minutes to allow the flavours to develop. Serve with fresh bread.

Saw this recipe on The Nate Berkus Show, during a segment with chef Michael Chiarello. This dip is easy to make, and handy to have around. Great for parties, since you can make it ahead of time.

1/2 lb parmesan cheese
1/2 lb asiago cheese
2 Tbsp chopped green onions
2 tsp minced garlic
2 tsp dried oregano
1 tsp fresh ground black pepper
1 tsp red pepper flakes
1 1/2 c extra virgin olive oil

Steps:

  • 1. Remove any rind from the cheeses. Chop cheeses into 1-inch chunks. Place in food processor, and pulse until the cheeses are reduced to size of fine pea gravel.
