Butter, to grease the pie plate
2 cups fresh or frozen cranberries
1/2 cup sugar
1/2 cup walnuts, chopped
2 eggs
3/4 cup butter, softened
1 cup sugar
1 cup flour
1 teaspoon almond extract

Steps:

  • For the Filling: Preheat the oven to 350 degrees F.
  • Place the cranberries in a buttered, 10-inch pie plate. Toss the sugar and walnuts over the berries.
  • For the Topping: Cream the eggs and the butter with the sugar. Add the flour and almond extract to the mixture, lightly tossing with a fork.
  • Pour the topping over the cranberry mixture and bake for 35 to 40 minutes. Serve warm with whipped cream.

This recipe was given to me by a friend, and it is the best balance of sweet and tart I've tasted in a cranberry pie. It can be served with vanilla ice cream or yogurt.

cooking spray
2 cups fresh cranberries
½ cup chopped pecans
1 ¼ cups white sugar, divided
1 cup all-purpose flour
¾ cup unsalted butter, melted
2 large eggs, slightly beaten
1 ½ teaspoons almond extract

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Spray an 8-inch deep dish pie pan with cooking spray. Pour cranberries, pecans, and 1/2 cup sugar into the pie pan.
  • Combine flour, remaining 3/4 cup sugar, melted butter, eggs, and almond extract in a bowl. Mix with an electric beater until creamy and white in color. Pour over cranberry mixture in the pie pan.
  • Bake in the preheated oven until slightly crusty on the edges, lightly set in the middle, and light golden in color, about 35 minutes. Don't overbake; you do not want to dry it out to a cake-like consistency.

  • Combine cranberries, walnuts and 1/2 c sugar. Spread evenly into a 10" pie plate or springform pan.

BUTTER, FOR GREASING
2 c (heaping) cranberries fresh
3/4 c pecans, chopped (measure, then chop)
2/3 c sugar
1 c flour
1 c sugar
1 stick unsalted butter, melted
2 large eggs, lightly beaten
1 tsp pure almond extract
1/4 tsp salt
1 TABLESPOON RAW SUGAR FOR SPRINKLING
EXCHANGE 1 TSP OF COURVOISIER OPT FOR THE EXTRACT

Steps:

  • 1. Preheat oven to 350 degrees. Generously butter a square cake pan or deep dish pie pan. Add cranberries to the bottom of the pan. Sprinkle on chopped pecans, then sprinkle on 2/3 cup sugar.
  • 2. In a mixing bowl, combine flour, 1 cup sugar, melted butter, eggs, almond extract or OPT Courvoisier, and salt. Stir gently to combine. Pour batter slowly over the top in large "ribbons" in order to evenly cover the surface. Spread gently if necessary.
  • 3. Bake for 45 to 50 minutes. 5 minutes before removing from oven, sprinkle surface with 1 tablespoon raw sugar for a little extra crunch.
  • 4. Serve with Vanilla Bean ice cream or freshly whipped cream.

2 tablespoons unsalted butter
2 cups fresh or frozen cranberries
1/3 cup sugar
1/3 cup chopped walnuts, optional
3/4 cup flour
3/4 sugar
1 teaspoon baking powder
1 teaspoon salt
3/4 cup milk

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the butter in a 9-inch round non-reactive baking dish. Set pan in oven long enough to barely melt butter or melt in microwave. Remove from oven, swirl pan to coat evenly with butter, set in a warm place.
  • Toss cranberries with sugar and walnuts, set aside.
  • In a mixing bowl, stir together flour, sugar, baking powder and salt. Add milk and stir until just combined. Pour the batter into the pan, it will be pancake batter thin, this is what you want.   • Preheat oven to 350. Butter a 10" pie plate or a 10" springform pan. 1. In a small bowl, mix cranberries, walnuts and dump into your prepared plate or pan. 2. Sprinkle the 1/2 cup of sugar over top of the cranberry/nut mixture and mix lightly. 3. In a medium bowl, mix the eggs, melted butter, sugar, flour, salt and almond extract til well combined. 4. Pour mixture over the cranberry nut mixture and spread evenly to cover. 5. Bake approx. 40 minutes, or til tester comes out clean. 6. Let pie rest for about 30 minutes, then remove sides of springform pan, if using, and cool completely.
