SPICY THREE-MEAT CHILI



Spicy Three-Meat Chili image

2 teaspoons olive oil
1 pound ground pork
1 pound ground bison
1 pound ground beef chuck
3 cloves garlic, minced
2 red bell peppers, chopped
1 jalapeno, seeds removed, chopped
1 large white onion, chopped
1 tablespoon chili powder
1 tablespoon cumin
2 teaspoons chopped chipotle chiles in adobo sauce
1 teaspoon cayenne pepper
Kosher salt and ground black pepper
One 28-ounce can tomato puree
One 28-ounce can crushed tomatoes
1 cup lager-style beer
Two 16-ounce cans red kidney beans, drained and rinsed

Steps:

  • Heat the olive oil in a large Dutch oven over high heat and add the ground pork, ground bison and ground chuck; using the back of a wooden spoon, break up the meat into small pieces and cook until well browned, 10 to 12 minutes.
  • Add the garlic, bell peppers, jalapeno, onion, chili powder, cumin, chipotle, cayenne, 1 teaspoon salt and 1 teaspoon pepper, and cook, stirring occasionally, until the vegetables soften, 6 to 8 minutes.
  • Stir in the tomato puree, crushed tomatoes and beer, bring to a boil, then reduce the heat and simmer for 1 hour, stirring occasionally. Stir in the kidney beans and cook for 10 more minutes. Serve hot.

VENISON CHILI FROM THE LAND

2 tablespoons extra-virgin olive oil
4 slices bacon, chopped
2 pounds venison stew meat, cut into 1- or 2-inch chunks
Kosher salt
Freshly ground black pepper
1 medium onion, chopped
1 red bell pepper, chopped
1 (4-ounce) can chopped green chilies, drained
3 cloves garlic, chopped
1 tablespoon chili powder
2 teaspoons cumin
1 teaspoon paprika (preferably smoked)
1/4 teaspoon chipotle chili powder
1 cup dark beer (such as Dos Equis)
1 (28-ounce) can fire-roasted whole tomatoes, crushed by hand
1 (14 1/2-ounce) can low-sodium beef broth
1 chipotle chili in adobo, chopped, plus 2 tablespoons sauce from the can
2 tablespoons light brown sugar
2 tablespoons unsweetened cocoa powder

Steps:

  • Heat a large Dutch oven over medium heat. Add the olive oil and bacon and cook until the bacon renders its fat, about 4 minutes. Remove the bacon to a paper towel-lined plate to drain.
  • Pat the venison dry with paper towels and season with salt and pepper. In batches, cook the meat in the Dutch oven until browned all over, about 6 minutes per batch. Remove the meat to a plate as it browns.
  • Once all of the meat is out of the pot, add the onion, bell pepper, green chilies, and garlic and cook until the onion and pepper begin to soften, about 5 minutes. Add the chili powder, cumin, paprika, and chipotle powder and cook until the vegetables are coated with the spices, about 1 minute. Pour in the beer, bring to a boil, and boil until reduced by half, about 2 minutes. Add the tomatoes, beef broth, chopped chipotle and chipotle sauce, brown sugar, and cocoa powder. Bring to a simmer and add the bacon and venison back. Simmer the stew, partially covered, until the meat is tender and the sauce is thick and flavorful, 1 1/2 hours to 1 hour and 45 minutes, uncovering for the last half an hour. If the meat is tender but the sauce is too thin, simmer rapidly over high heat for a minute or two to reduce, stirring to keep the bottom from burning.

NANCY'S HOMEMADE CHILI



Nancy's Homemade Chili image

My husband and I made this for a chili cook off with our friends and it came in second. There was none left to take home.

60 oz brooks chili hot beans
1 lb lean hamburger
1 can(s) tomato soup
1 c diced onion
1 qt home canned tomatoes, or large can
2 Tbsp jalapeno peppers {or to taste}
chili powder to taste
cumin to taste
salt and pepper to taste

Steps:

  • 1. Brown hamburger and onion, season with salt and pepper. Drain. Put chili beans in Crock Pot, add chopped tomatoes, tomato soup, {using large tomato can fill with water and add.} Add hamburger/onion mixture, jalapeno's, chili powder, and cumin to taste. I don't measure the cumin or chili powder but you can put two teaspoons each to start then taste after it's cooked for a while and add more as needed. Remember the jalapeno's get hotter as they cook. I just cook this all day in the crock pot depending on how soon you want it you can put it one high or low. If you're working and want it when you get home just put on low.

TURKEY CHILI

1 tablespoon olive oil
1 cup red onion
1 tablespoon minced garlic clove
1/4 cup yellow bell pepper
1 lb ground turkey
1 (28 ounce) can crushed tomatoes, undrained
1 (16 ounce) can red kidney beans, drained and rinsed
1 tablespoon chili powder
1 tablespoon sugar
2 cups low sodium chicken broth
1/2 teaspoon garlic powder
1 teaspoon hot sauce (recommended Tabasco)
1 1/2 teaspoons sea salt
1 teaspoon dried basil
1/2 teaspoon dried oregano
cracker
cheese

Steps:

  • In a large skillet, sauté chopped onions, minced garlic and chopped bell peppers in olive oil over medium heat until onions are translucent.
  • Add ground turkey and cook until browned.
  • Add remaining ingredients and stir well to combine. Reduce heat to low and simmer for 1 hour, stirring occasionally.
  • Serve with crackers and cheese.

NAN'S CHILI

This chili is great with or without beans. I prefer without, but my family prefers with. It's an adaptation of Wic Fowlers chili mix. I measured the ingredients one time and added my own touches to change the recipe to our taste. You can speed up cooking time using the pressure cooker for 15 minutes.

2 (8 ounce) cans tomato sauce
1 (14 1/2 ounce) can diced tomatoes
2 cups water
1 tablespoon dried onion flakes
1 tablespoon instant minced garlic
2 teaspoons paprika
3/4 teaspoon cumin
1/4 teaspoon red cayenne pepper
1/3 cup chili powder
1 1/2 teaspoons salt
2 (15 ounce) cans red kidney beans, drained

Steps:

  • Brown ground beef.
  • Add tomato sauce, tomatoes and water.
  • Stir in the onion, garlic and seasonings.
  • Add beans and simmer 30- 45 minutes.
  • Serve with saltine crackers to crush into the chili.
