My German grandmother used to make this for every family occasion. She always had some set aside for me to take home.

3 - 4 cucumbers
1 medium onion
mayonnaise or lite mayonnaise
apple cider vinegar
salt and pepper
sugar

Steps:

  • 1. Peel the cucumbers and onion. Slice both very thin. I use a food processor.
  • 2. Blend together the mayo & vinegar. Add salt & pepper to taste. Add sugar to cut the tartness if you would like it a little sweeter.
  • 3. In a large bowl combine everything together. I like to make this a day early so that the cucumbers soak in the flavor of the sauce.
  • 4. Enjoy!

I remember the first time I cooked dinner for my husband. I asked Nana for her recipe for beef stew and for her cucumber salad. Well she omitted the part about mixing the flour with water to thicken the stew and only told me to add flour, she also gave me all the ingredients for the salad but neglected to tell me a few steps...

2 large cucumbers
2 large white onions
1 cup white vinegar
1 cup water
sugar to raise liquid to 3 cups
several t sour cream
salt (you will need alot, enough to salt cukes and onions down as shown in pics. no worries this will be rinsed off later. it is not only for flavor but to get cukes to the correct floppy yet crispy texture)

Steps:

  • 1. Cut ends from cucumbers (my nana always said to cut ends off prior to peeling because it keeps the bitterness to a minimum)
  • 2. Remove skin from cucumbers.
  • 3. Slice cucumbers into thin slices as shone. Then slice onions into thin rings on seperate plate.
  • 4. Put thinly sliced cucumbers into a large bowl
  • 5. Salt down cucumbers (you have to use alot of salt, you should be able to see it on them)
  • 6. Add onions to cukes and salt again. Cover with an inverted plate and allow to sit in salt for 2 hours at room temp.
  • 7. Drain cukes in colander and rinse well to remove salt.
  • 8. Measure out 1 c warm water into measuring cup
  • 9. Now add white vinegar to make 2 cup liquid
  • 10. then add sugar until liquid rises just below the 3 cup mark. (I know its alot of sugar but this combo is what gives the cukes their amazing and unique taste) Stir vigorously until sugar is completely dissolved.
  • 11. Put cukes and onions back in bowl and pour vinegar and sugar mix over the top. Cover and refrigerate for at least one hour.
  • 12. Remove from frig and drain in colander. Allow liquid to drain out but do NOT rinse!!
  • 13. Return cukes to bowl and stir in sour cream 1 tablespoon at a time. (You will not need much) They should appear as shown.
  • 14. This is an amazingly refreshing crisp salad with a very unique tartly sweet flavor. I have never had a single person not go back for seconds.

The recipe for this easy salad came from my grandma, who made it in the summers with fresh dill and cucumbers from her garden.

½ cup reduced-fat sour cream (such as Daisy®)
2 tablespoons fresh lemon juice
2 tablespoons chopped fresh dill
3 cucumbers, halved lengthwise and thinly sliced crosswise
½ cup thinly sliced red onion
coarse salt and ground black pepper to taste

Steps:

  • Mix sour cream, lemon juice, and dill together in a bowl. Add cucumbers and onion; stir to combine. Season with salt and black pepper.
