NANA'S IRISH SODA BREAD WITH WHISKEY SOAKED RAISINS



Nana's Irish Soda Bread With Whiskey Soaked Raisins image

Our family favorite Irish soda bread recipe! Cut into wedges and serve warm with fresh butter as a traditional side to hearty Irish fare such as Stew, Cottage or Shepherd's Pie, or Corned Beef Dinner. Also a tasty tea-time snack served with butter and a dab of marmalade or a drizzle of honey, or with a slice of smoked salmon. Enjoy!

Yield 1 round loaf Irish Soda Bread

Number Of Ingredients 10

1 cup raisins (or dried currants)
4 tablespoons Irish whiskey (1 shot glass full plus 1 tablespoon)
1 teaspoon honey
3 1/2 cups flour
1/2 cup sugar
1/2 teaspoon baking soda
2 teaspoons baking powder
3/4 teaspoon salt
1 pint sour cream
2 eggs

Steps:

  • Preheat the oven to 350°F.
  • In a small saucepan or in the microwave, bring the whiskey and honey to a boil and add the raisins or currants. Cover and off the heat. Set aside and let steep.
  • Butter a round 1 1/2 to 2 quart baking dish, set aside.
  • Add the flour, sugar, baking soda, baking powder and salt together in a large bowl; use a wire whisk to combine.
  • In a small bowl, beat the eggs and stir in the sour cream, mixing well to combine.
  • Add the egg mixture to the flour mixture, stir well with a wooden spoon (batter will be thick).
  • Stir in the whiskey-soaked raisins or currants (along with the whiskey-honey they were steeped in); blend well.
  • Turn batter into the prepared baking dish.
  • Dust the top with flour and pat the batter evenly in the pan with your hands.
  • Use a sharp knife to make a cross on the top.
  • Bake for 50 minutes in preheated 350 F oven.
  • Remove to a rack and let cool for 10 minutes, then turn out onto a serving dish. Cut into wedges and serve warm with real butter.

3 cups all-purpose flour
1 tablespoon baking powder
⅓ cup white sugar
1 teaspoon salt
1 teaspoon baking soda
1 egg, lightly beaten
2 cups buttermilk
¼ cup butter, melted

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9x5 inch loaf pan.
  • Combine flour, baking powder, sugar, salt and baking soda. Blend egg and buttermilk together, and add all at once to the flour mixture. Mix just until moistened. Stir in butter. Pour into prepared pan.
  • Bake for 65 to 70 minutes, or until a toothpick inserted in the bread comes out clean. Cool on a wire rack. Wrap in foil for several hours, or overnight, for best flavor.

Mom's Irish Soda Bread image

Authentic Irish soda bread does not contain raisins, but I like mine with raisins so I include them. This is a very easy and delicious recipe.

1 cup buttermilk, divided
1 ½ cups golden raisins
½ cup butter, melted - divided
4 cups all-purpose flour
¼ cup white sugar
1 tablespoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 egg

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease a 9-inch deep-dish pie plate.
  • Spoon 1 tablespoon of the buttermilk into a small bowl; place remainder of 1 cup buttermilk into a separate bowl.
  • Stir golden raisins into the larger amount of buttermilk and allow raisins to soak while you complete the remaining steps.
  • Spoon 1 tablespoon of the melted butter into the small bowl with the tablespoon of buttermilk; stir to combine and set aside. Set remaining melted butter aside.
  • Whisk together flour, sugar, baking powder, baking soda, and salt in a bowl.
  • Make a well in the center of the dry ingredients, pour in reserved butter, and stir until the mixture resembles coarse crumbs.
  • Mix the egg into the flour mixture until thoroughly combined.
  • Mix the soaked raisins with buttermilk into dough and shape dough into a ball.
  • Place the ball of dough into prepared pie dish and lightly pat dough down so top is slightly domed.
  • Use a sharp knife to cut two crisscrossing lines through the center of the loaf about 1/4 inch deep.
  • Thoroughly brush buttermilk and butter mixture over the loaf, getting the mixture into the crevices.
  • Bake in the preheated oven until loaf is golden brown and a toothpick inserted into the center comes out clean, 55 minutes to 1 hour.
