3 eggs
1/4 cup sugar
1 cup light corn syrup
1 teaspoon vanilla
1 (8 ounce) package cream cheese
1/3 cup sugar
1/4 teaspoon salt
1 teaspoon vanilla
1 egg
1 un-baked 9-inch deep dish pie crust
1 1/4 cups chopped pecans

Steps:

  • Preheat oven to 350 degrees F.
  • Topping: Combine all ingredients in a medium bowl.
  • Set aside.
  • Filling: In a med bowl, mix cream cheese, sugar, salt, vanilla and egg until combined.
  • Pour into pie shell top with chopped pecans.
  • Pour topping over pecans.
  • Bake for 45 minute serve warm or at room temperature.

OK, so I know there are several similar pie recipes on this site and I haven't tried any of them, but this one is soooooo good. It's from the Southern Living Cookbook. I make it every Thanksgiving and people beg me for the recipe. I'm not a dessert person, but this pie combines my only 2 weaknesses--pecan pie and cheesecake. It's like heaven on earth!

1 (15 ounce) package refrigerated pie crusts (2 crusts in the package)
1 (8 ounce) package cream cheese, softened
4 large eggs
3/4 cup sugar, divided
2 teaspoons vanilla extract, divided
1/4 teaspoon salt
1 cup chopped pecans
1 cup light corn syrup
2 tablespoons butter, melted

Steps:

  • Unroll 1 piecrust and place on a lightly floured surface; lightly brush top of crust with water. Unroll remaining crust, and place over bottom crust; gently roll or press crusts together. Fit into a 9-inch pieplate; fold edges under and crimp.
  • Beat cream cheese, 1 egg, 1/2 cup sugar, 1 teaspoon vanilla, and salt at medium speed with an electric mixer until smooth. Pour into piecrust. Sprinkle with pecans.
  • Stir together corn syrup, melted butter, remaining 3 eggs, remaining 1/4 cup sugar, and remaining 1 teaspoon vanilla; pour filling over pecans.
  • Bake at 350 for 50 to 55 minutes, or until set. Cool completely.

1 pie crust (9 inch)
8 ounces cream cheese, softened
1/3 cup sugar
1 teaspoon salt
1 teaspoon vanilla
1 egg
1 1/4 cups chopped pecans
3 eggs
1/4 cup sugar
1 cup corn syrup, light or dark
1 teaspoon vanilla

Steps:

  • Heat oven to 375 degrees F.
  • In small bowl, combine cream cheese, 1/3 cup sugar, salt, 1 teaspoon vanilla, and 1 egg; beat at medium speed until well blended.
  • Spread in bottom of prepared pie crust.
  • Sprinkle with pecans.
  • In small bowl, combine all topping ingredients; beat on medium speed just until blended.
  • Gently pour topping over pecans.
  • Bake 35 to 40 minutes or until center is firm to touch.
  • Refrigerate leftovers.

I have no idea where I got this recipe so I guess it's a mystery for real. But, I think it's called mystery because of the way it all conjells together when baking. It's delicious and RICH. A little piece goes a long way.

topping:
3 eggs
1 c light corn syrup
1 tsp vanilla extract
pie:
8 oz cream cheese room temp
1/3 c sugar
1/4 tsp salt
1 tsp vanilla extract
1 egg
1 1/2 c chopped pecans
1 9 in. unbaked pie shell

Steps:

  • 1. Combine all topping ingredients and mix with handmixer to blend. In bowl, mix all pie ingredients except nuts. Beat until blended. In Pie shell: Pour pie ingredients in pie shell. Then set the pecans on that layer. Cover nuts with topping mixture. Bake in pre-heated 350 oven for 45 minutes. Check doneness before removing from oven as each oven is different. Serve warm or room temp.

  • Prepare pie crust according to package directions for ONE-CRUST FILLED PIE using 9-inch pie pan.Heat oven to 375°F. In small bowl, combine cream cheese, 1 egg, 1 teaspoon vanilla, 1/3 cup sugar and salt beat at low speed until smooth and well blended. Set aside. In another small bowl, beat 3 eggs. Stir in 1/4 cup sugar, corn syrup and 1 teaspoon vanilla blend well. Spread cream cheese mixture in bottom of crust-lined pan. Sprinkle with pecans.
