30 miniature phyllo cups
1/2 medium apple, peeled and finely diced
5 large eggs
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/8 teaspoon fresh ground pepper
1/8 teaspoon ground nutmeg
4 ounces brie cheese (1/2 small wheel)

Steps:

  • Preheat oven to 350°F.
  • Whisk together eggs, mustard, salt, pepper and nutmeg in a container with a pour spout.
  • Arrange phyllo shells on a baking sheet which is lined with parchment or silicone. Divide the apple among the shells.
  • Pour the egg mixture over the apple (do not overfill the shells). Place a Brie square in each shell. Do not put the cheese in before adding the egg, or it will be difficult not to spill.
  • Bake until the egg is set, the Brie is melted and the phyllo is starting to brown around the edges, about 15 minutes. Let cool slightly before serving.

The classic pairing of Brie and apples works beautifully in this recipe for bite-size appetizers that came to The Times in 2010 from Eating Well magazine. Premade mini phyllo cups (available in the freezer section of your grocery store) make it easy to make an elegant hors d'oeuvre in about 30 minutes. The cups do not need to be defrosted before filling and baking.

30 mini phyllo shells (two 1 9/10-ounce packages)
1/2 medium apple, peeled and finely diced
5 large eggs
1 teaspoon Dijon mustard

Pinch of freshly ground pepper
Pinch of ground nutmeg
4 ounces Brie (1/2 small wheel), cut into 30 squares

Steps:

  • Preheat oven to 350 degrees Fahrenheit. Arrange phyllo shells on a large parchment-lined baking sheet. Divide apple among the shells.
  • Whisk eggs, mustard, salt, pepper and nutmeg in a large measuring cup. Pour the egg mixture over the apple (do not overfill the shells). Place a Brie square in each shell.
  • Bake until the egg is set, the Brie is melted and the phyllo is starting to brown around the edges, about 15 minutes. Let cool slightly before serving.

2 1 9/10 punce packages of mini phyllo shells (30)
1/2 apple, peeled and diced
5 eggs
1 tsp dijon mustard
1/4 tsp salt
a pinch of pepper
a pinch of ground nugmeg
1 small brie (4 ounces)cut into 30 one inch squares

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Arrange phyllo shells on a large parchment lined baking sheet.
  • 3. Divid the apple among the shells.
  • 4. In a bowl, whisk eggs, mustard, salt, pepper and nutmeg until well blended.
  • 5. Pour the egg mixture over the apples (do not overfill the shells)
  • 6. Place Brie square on each shell.
  • 7. Place in oven and bake until the egg is set, the Brie is melted and the phyllo is starting to brown around the edges for about 15 minutes. Watch not to burn.
  • 8. Remove from oven and let cool slightly.
  • 9. Place on serving tray or plate.
  • 10. * we think that these little treats can't be more than 30 to 40 calories with little fat.
