MINI MEAT LOAF SHEET-PAN MEAL



Mini Meat Loaf Sheet-Pan Meal image

I grew up with this meat loaf recipe, but I adapted it to mini meatloaves so that it would bake more quickly. The sauce topping is always a hit. I added the potatoes and asparagus to make the meal easier. -Deanne Johnson, Reading, Pennsylvania

Number Of Ingredients 15

2 large eggs, lightly beaten
1 cup tomato juice
3/4 cup quick-cooking oats
1/4 cup finely chopped onion
1/2 teaspoon salt
1-1/2 pounds lean ground beef (90% lean)
1/4 cup ketchup
3 tablespoons brown sugar
1 teaspoon prepared mustard
1/4 teaspoon ground nutmeg
3 large potatoes, peeled and cut into 1/2-inch pieces
3 tablespoons olive oil, divided
1/2 teaspoon garlic salt, divided
1/4 teaspoon pepper, divided
1 pound fresh asparagus, trimmed and halved

Steps:

  • Preheat oven to 425°. In a large bowl, combine eggs, tomato juice, oats, onion and salt. Add beef; mix lightly but thoroughly. Shape into six 4x2-1/2-in. loaves; place on a sheet pan or large shallow roasting pan. Combine ketchup, brown sugar, mustard and nutmeg; brush over loaves. , Combine potatoes with 2 tablespoons oil, 1/4 teaspoon garlic salt and 1/8 teaspoon pepper; toss to coat. Add to pan in a single layer. Bake 25 minutes., Combine asparagus with remaining 1 tablespoon oil, 1/4 teaspoon garlic salt and 1/8 teaspoon pepper; toss to coat. Add to pan. Bake until a thermometer inserted into meat loaves reads 160° and vegetables are tender, 15-20 minutes. Let stand 5-10 minutes before serving.

I love this recipe for its eye appeal - looks like a cupcake on your dinnerplate!! A very simple recipe, tastes delicious!!

1 lb extra lean ground beef
1 (120 g) package stove top stuffing mix for chicken
1 cup water
ready-to-use baked pizza crust, 250g package
2 garlic cloves, minced
2 cups hot mashed potatoes
1/4 cup fresh parsley, chopped
1 (10 ounce) can beef gravy, warmed

Steps:

  • Heat oven to 375°F.
  • Mix meat, stuffing mix, and water; press into 8 muffin cups sprayed with cooking spray.
  • Bake 20-25 minutes or until done.
  • Add cream cheese and garlic to potatoes; stir until cream cheese is melted. Stir in parsley. Scoop over meatloaves. Serve with gravy.
  • SPECIAL EXTRAS: For more flavor, add 2 tablespoons Bull's Eye BBQ Sauce to meat mixture before pressing into muffin cups as directed.

Number Of Ingredients 9

1 lb lean ground beef or lean ground turkey
1 pkg (6 ounce) pepperidge farm stuffing mix or half of a 12 ounce package.
1 c water
2 Tbsp a 1 original steak sauce or your favorite brand
6 oz (3/4 of a 8 ounce package) cream cheese, cubed
3 cloves of garlic, minced
3 c hot mashed potatoes
1/4 c chopped fresh parsley
1 jar(s) (12 ounce) beef gravy, warmed

Steps:

  • 1. Preheat your oven to 375.
  • 2. In a large bowl, mix meat, stuffing mix, water and steak sauce.
  • 3. Spray 12 cup muffin pan with cooking spray.
  • 4. Evenly press mixture into each cup.
  • 5. Place in oven and bake for 20 to 25 minutes or until done.
  • 6. Meanwhile mix cream cheese, garlic into the hot potatoes and stir until cream cheese is melted and stir in parsley.
  • 7. Heat gravy in a sauce pan and set aside.
  • 8. Remove meatloves from oven and place on a platter and place a scoop of potatoes over each meatloaf.
  • 9. Place hot gravy in a gravy bowl.When your guest places two meatloaves on his or her plate; they can pour warm gravy over them.
  • 10. *I served this with a mixed green salad, green beans and a glass of fat-free milk to round out the meal.
