GOOD STUFF SAUCE BY TOP CHEF SPIKE MENDELSOHN

Good Stuff Sauce by Top Chef Spike Mendelsohn image

BEST BURGER SAUCE. No pickles in the sauce. Its tangy and mmmmmmmmmmmm... I got drool on my keyboard. Oh yeah and it's pink. :D From the cookbook The Good Stuff: After reading several books and articles on Americans and the hamburgers they love, my mother found that people's favorite sauces were different takes on Thousand Island dressing (ketchup and mayo). At one of our family tastings, Mike Colletti, a chef I met Le Cirque, and I came up with our twist on it--we locked ourselves in the kitchen and added a little something to the sauce to give it a real kick.

2 tablespoons ketchup

1 teaspoon sea salt (or less, if you use reg salt, its REALLY SALTY)

Steps:

  • Add the mayonnaise, ketchup, molasses, vinegar, and salt to a food processor or blender. Puree until smooth. The sauce can be refrigerated in an airtight container for up to 1 week (my college stomach can go for two because I live life dangerously and this makes so much! BIG BOB GIBSON'S WHITE BBQ SAUCE COPYCAT

This is not the EXACT recipe. However, it is hard to tell the difference in taste! Adjust the ratios to make the spice and/or consistency to what your taste buds prefer. Great for BBQ, drizzled on shrimp tacos, sandwiches, etc!

SWEET AND SMOKY BARBEQUE SAUCE

Sweet and Smoky Barbeque Sauce image

Use this toward the end of cooking as you would for any BBQ meat such as pork, ribs, or chicken. I have even used it on beef and hamburgers, sausages, hot dogs, or anything you want, for the most part. I use it on everything from ribs to roasts to hamburgers to hot dogs. Even goes good with a good old classic grilled cheese sandwich. This is a great all-round BBQ sauce. Use right away or cool to room temperature, transfer to jars or containers, and refrigerate. The sauce will keep for several months in the fridge.

ALL-AMERICAN BARBECUE SAUCE

All-American Barbecue Sauce image

I'm very excited to show you my take on America's most popular style of barbecue sauce--which of course originated in and around Kansas City. After you make a batch of this and taste just how incredible it is, I don't think you'll ever buy that stuff from the store again. Sauce may be used right away, but for best results, wrap and refrigerate for a day or two before using to allow the flavors to develop.
