BEST-EVER HOMEMADE EGG NOODLES
Yes you *can* make homemade noodles, it is that easy! I make mine on my Kitchen Aid stand mixer, the kneading time takes only about 3 minutes, but these are still wonderful made by hand --- the prepared noodles need about 25-30 drying time before using --- these make the *best* chicken soup! :)

Steps:
- In a large bowl combine the flour with salt.
- Add in eggs, milk and soft butter; mix to combine, then knead until smooth (this should take you about 5-6 minutes).
- Cover with a clean tea towel and allow to rest for 10 minutes in the bowl.
- Flour your work surface.
- Place the dough on the surface.
- Using a lightly-floured rolling pin roll out to about 1/8-inch thickness or as thin as possible.
- Using a pizza cutter slice the dough into desired size strips (I do mine about 1/2-inch).
- Allow the strands to air-dry on the counter uncovered before cooking (this should take about 30 minutes or until no longer moist and sticky).
- If not using the noodles right away, toss with a small amount of flour and store covered in refrigerator until ready to use.
- The cooking time for fresh noodles takes much lesss time than dry.

Steps:
- Combine egg, salt, milk. Add flour. (For thicker noodles add baking powder to flour before mixing.) Separate into two balls.
- Roll out dough, and let stand for 20 minutes.
- Cut into strips and spread to dry--dust with a little flour. Let dry for approximately 2 hours.
- Drop into hot soup--cook for about 10 minutes.

- In a small bowl, combine the flour and salt. Make a well in the center. In another bowl, beat the egg yolks, egg, water and oil; pour into well. Stir to form a stiff dough., Turn dough onto a well-floured surface; knead 8-10 times. Divide into thirds. Roll each portion to 1/8-in. thickness. Cut noodles into 1/4-in. strips; cut the strips into 2-in. lengths. Cook immediately in boiling broth for 5-7 minutes or until tender; drain.

MY NANNY'S HOME MADE EGG NOODLES
this is my grandmothers recipe and she has passed away in 2010 but we all make her famous noodles. She loved making these on Sunday with fried chicken. Was never any leftovers, I hope you like these and I'm sure she is smiling down on me right now saying that's my cook sharing my noodles with the world.

Steps:
- 1. Mix in medium size bowl, beat the eggs good and then add the salt. Then slowly add flour till mixture leaves the bowl and it is no longer sticky.
- 2. At this point you will want to use your hands, much easier to feel the texture. Once you have the right feeling of dough
- 3. Put on floured surface and roll out thin. I use a pizza cutter for fast cutting. If they are to fat this will turn into a dumpling type. So make sure it is even all over.
- 4. Then let your noodles dry out on newspaper, the longer they dry the better they cook. I usually add mine in a stock pot of chicken broth or you can be creative and make any flavor you desire.
