My Grandma's Oatmeal Cake is an old-fashioned cake made with rolled oats and a delicious coconut almond topping.

1 cup old-fashioned rolled oats
1/2 cup butter
1 1/2 cups boiling water
2 large eggs
1 cup light brown sugar
1 cup granulated sugar
1 1/3 cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon baking soda
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
6 Tablespoons butter (, room temperature)
1 cup shredded sweetened coconut
1/2 cup evaporated milk
1/2 cup light brown sugar
1 cup nuts
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F. Grease a 9x13'' pan with non-stick cooking spray.
  • Add the oatmeal and butter to a bowl and pour boiling water on top. Set aside.
  • In a mixing bowl combine the eggs, brown sugar, and white sugar and mix well.
  • In a separate bowl sift together the flour, cinnamon, baking soda, nutmeg, and salt.
  • Add to the bowl with eggs and sugars and stir to combine.
  • Add the oatmeal mixture and stir to combine.
  • Bake for about 35 minutes or until a toothpick inserted in the center of the cake comes out clean.
  • While the cake is baking, make the topping by combining all the ingredients in a bowl.
  • Remove the cake from the oven and turn the oven to high broil.
  • Spread the topping evenly over the warm cake and place under the broiler for 2-4 minutes or until the coconut is golden brown.

CAKE
1 1/4 c water, boiling
1 c oatmeal, old-fashioned, uncooked
1/2 c butter
1 c sugar
1 c brown sugar, firmly packed
2 eggs
1 tsp vanilla
1 1/2 c all-purpose flour
1 tsp baking soda
3/4 tsp cinnamon
1/2 tsp salt
1/4 tsp nutmeg
TOPPING
1/2 c butter
2 c coconut
1 c nuts (finely chopped)
1 1/2 c brown sugar, firmly packed
8-10 Tbsp evaporated milk

Steps:

  • 1. Preheat oven at 350 degrees. Pour boiling water over oatmeal and set aside for 20 minutes.
  • 2. Cream butter and sugars. Add eggs. Beat well.
  • 3. Add vanilla and oatmeal mixture.
  • 4. Add flour, baking soda, salt, cinnamon, and nutmeg. Mix well.
  • 5. Pour into a greased 9x13 inch pan.
  • 6. Bake for 30 minutes.
  • 7. For Topping: Melt butter. Add coconut, nuts, brown sugar, and milk.
  • 8. Mix well.
  • 9. Frost cake when you take it out of the oven.
  • 10. Broil until the top is brown. Watch it carefully so it doesn't burn.

1/2 cup quick-cooking oats
3/4 cup boiling water
1/4 cup shortening
1/2 cup sugar
1/2 cup packed brown sugar
1large egg, room temperature
2/3 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
Confectioners' sugar, optional

Steps:

  • Place oats in a small bowl; add boiling water. Let stand for 20 minutes. , In a small bowl, cream shortening and sugars. Add oat mixture and egg; mix well. Combine the flour, baking soda, cinnamon and salt; add to creamed mixture and beat until combined. , Pour into an 8-in. fluted tube pan coated with cooking spray. Bake at 350° for 22-27 minutes or until a toothpick inserted in the center comes out clean. Cool for 15 minutes before removing from pan to a wire rack to cool completely. Dust with confectioners' sugar if desired.

CAKE:
1 c quick oatmeal
1 1/2 c boiling water
1 c granulated sugar
1 c brown sugar
1/2 c oleo (butter or margarine)
2 medium eggs
1 1/2 c flour
1 tsp cinnamon
1 tsp baking soda
1/2 tsp salt
FROSTING:
2 Tbsp soft oleo (butter)
1 c brown sugar
1/2 c milk or cream
1 tsp vanilla extract
3/4 c flaked coconut
3/4 c chopped pecans

Steps:

  • 1. Stir together the boiling water and oatmeal until there are no lumps, and let cool in refrigerator. (you can use leftover oatmeal if desired, use at room temperature). Combine sugars,oleo and eggs beat well then add the flour, cinnamon, soda and salt. Blend well then add cooled oatmeal and blend well. Pour into sprayed 9x13-inch cake pan. Bake in 350^ oven for 40-50 minutes. --- Frosting: In a small saucepan combine butter,sugar and milk, heat to boiling. Remove from heat add vanilla, coconut and pecans. Spread on cake while it is still warm.

1/2-1 cup butter or margarine
1 cup brown sugar
1 cup white sugar
2 well beaten eggs
1 1/3 cups flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
FROASTING
1 tsp. melted butter or margarine
1/2 cup canned cream or 1/2 cup canned milk
1 tsp. vanilla
1 cup brown sugar

Steps:

  • 1. Bring water to a boil add quick oats. Let stand 15 minutes.
  • 2. Cream together 1/2 cup butter or margarine, brown sugar, white sugar, and 2 well beaten eggs. Mix with oatmeal.
  • 3. Sift together flour, baking soda, cinnamon, salt. Add to mix and beat well.
  • 4. Pour into a 13 x 9 inch baking pan. Bake 350 for 30 to 35 minutes.
  • 5. FOR FROSTING: Mix together melted butter or margarine, canned cream /milk, vanilla and brown sugar.
  • 6. Spread on cake and brown in the oven for a few minutes. You can add coconut or raisins on top.
