3 cups chicken broth
1 (10 3/4 ounce) can cream of mushroom soup
2 cups chopped cooked chicken
6 Polish sausage, cooked and sliced
2 stalks celery, chopped
1 green pepper, chopped
1 medium onion, chopped
2 medium potatoes, chopped
2 medium carrots, diced
8 ounces fresh mushrooms, sliced
1 (14 1/2 ounce) can sauerkraut, drained & well rinsed (2 cans if you really like sauerkraut)
1/2 teaspoon pepper
1 teaspoon dill weed

Steps:

  • Put all ingredients in crock-pot; cook on low for 10 hours.
  • (You can start it on high for 3 hours to lesson cooking time.).

This dish was always showing up at pot luck dinners when I was a kid. I could eat whole bowls of this stuff and never get tired of it.

1 lb Polish sausage, cut into chunks
3 slices bacon
2 cups sauerkraut, undrained
1 medium onion, chopped
4 ounces egg noodles, cooked and drained
1 (8 ounce) can cream of chicken soup, undiluted
1 (7 1/2 ounce) can mushroom stems and pieces, undrained
1/2 teaspoon garlic powder
salt and pepper

Steps:

  • Fry bacon until crisp and set aside. In same pan with bacon grease, cook onion until tender and translucent.
  • In crock pot, add sausage, onions, garlic powder, sauerkraut, noodles, soup, and mushrooms. Stir gently until mixed while adding salt and pepper to taste.
  • Crumble bacon and layer on top of mixture in crock pot.
  • Cook on high for 4-5 hours stirring occasionally.

1/2 pound bacon strips, chopped
1 medium onion, chopped
3/4 cup white vinegar
3/4 cup sugar
2 cans (14 ounces each) sauerkraut, rinsed and well drained
1/2 teaspoon caraway seeds

Steps:

  • In a large skillet, cook bacon and onions over medium heat until bacon is crisp and onions are just tender, 5-7 minutes. Add vinegar and sugar to skillet; cook and stir 5 minutes. Add sauerkraut and caraway seeds to skillet; stir to combine. Transfer mixture to 4-qt. slow cooker. Cover and cook on low to allow flavors to blend, 1-2 hours.

MY MAMA'S SLOW COOKER SAUERKRAUT (SMALL BATCH)



My Mama's Slow Cooker Sauerkraut (Small Batch) image

She usually makes a much larger batch for holidays with the family. This was originally her mother Ruth's recipe. But she changed it to use the broth instead of just water. My preferred brand of kraut is Snow Floss. This is the only way I can eat sauerkraut. I am so picky. I'm also happy to say my two-year-old loves sauerkraut.

Number Of Ingredients 7

1 (28 ounce) can sauerkraut
1 (14 ounce) can chicken broth (or vegetable broth)
1 tablespoon brown sugar
1/2 teaspoon caraway seed (or to taste)
1 cup onion, chopped
2 tablespoons vegetable shortening
2 -3 tablespoons flour

Steps:

  • Drain and rinse sauerkraut, to taste. It depends on how tart you like it. I usually just like a bit of tartness. Make sure you taste it.
  • Place in slow cooker.
  • Pour broth over just to cover. You may or may not not use the whole can! Just pour it slow. Most times I end up using the whole can.
  • Add a few shakes of caraway seed and the tablespoon of brown sugar. Give it a stir.
  • Cook on low for about 8 hours.
  • After it's been cooking for a nice long while, saute the chopped onion over medium heat in the crisco until the onion is lightly brown.
  • Sprinkle the flour over the onions and cook for about 2 minute. (Note from my Mama: Don't add all of the flour at once, you want it to be kind of pasty but you still want to see it bubbling. And let the flour get brown, not just the onions. Watch carefully.).
  • Add the onion mixture to the sauerkraut and cook it for about 1 more hour.
