A delicious sugar-free pumpkin pudding recipe using Stevia In The Raw.

¼ cup Stevia In The Raw
2 tablespoons cornstarch
1¾ cups milk (or vanilla almond milk)
2 egg yolks (beaten)
1 cup canned unsweetened pumpkin
1 teaspoon vanilla extract
2 teaspoons pumpkin pie spice

Steps:

  • Combine Stevia In The Raw and the cornstarch in a medium saucepan.
  • Thoroughly mix the milk and egg yolks.
  • Place saucepan over a medium flame. Gradually add the milk mixture to the Stevia mixture, whisking constantly. Bring the mixture to a boil, then cook for 1 minute, stirring constantly. Remove from heat.
  • Combine pumpkin, vanilla, and spices in a bowl. Slowly add pumpkin mixture to milk mixture, whisking constantly. Place saucepan over low heat and cook for 3 minutes, stirring constantly.
  • Pour pudding into one large bowl and cover surface of pudding with plastic wrap. Chill.

1-1/2 cups cold milk
1 cup heavy whipping cream, divided
1 package (3.4 ounces) instant vanilla pudding mix
1 teaspoon pumpkin pie spice
1 cup canned pumpkin
Additional pumpkin pie spice for garnish
Gingersnaps, optional

Steps:

  • In a bowl, combine milk, 1/2 cup cream, pudding mix and pie spice; whisk until thickened and smooth, about 2 minutes. Stir in pumpkin. Spoon into dessert dishes. , Whip the remaining cream until stiff peaks form; place a dollop on each serving of pudding. Sprinkle with pie spice. Serve with gingersnaps if desired.

I love pumpkin pie but do not like the crust. My mom use to get mad at me because I would eat the filling of the pie and not the crust. She said that was the hardest part of the pie to make, and I would throw it away. I came up with this recipe that tastes like pumpkin pie without the crust. My family loves this.

1 (15 ounce) can pumpkin (Libby's)
1 (1 ounce) box sugar-free instant vanilla pudding mix
1 teaspoon pumpkin pie spice
1 1/4 cups milk

Steps:

  • Mix pudding mix and milk.
  • Fold in pumpkin and spices and mix well.
  • Refrigerate.
  • Top with fat free whipped topping if desired.
