3 skinless, boneless, whole chicken breasts, about 3 pounds total weight
Salt to taste, if desired
1/2 tablespoons whole black peppercorns
3 tablespoons freshly squeezed lemon juice
1 tablespoon coarse-grained prepared mustard (moutarde de Meaux)
1/4 cup hot mustard oil (see note)
2 tablespoons freshly grated ginger

Steps:

  • Sprinkle the chicken pieces on all sides with salt.
  • Put the peppercorns on a flat surface and crush them well with the bottom of a heavy, clean skillet or saucepan. Or crush them using a mortar and pestle. Or blend them until coarse-fine in a small herb or coffee grinder.
  • Put the crushed peppercorns in a small mixing bowl and add the lemon juice and mustard. Stir to blend.
  • Heat the mustard oil in a wide skillet and add the sauce. Cook, stirring, about one minute and add the chicken breasts in one layer. Sprinkle the ginger evenly over the chicken. Cook about three minutes and turn the pieces. Cover and cook, turning the pieces occasionally, about 10 minutes.

1 3-pound rabbit, dressed weight, cut into serving pieces
Salt to taste, if desired
Freshly ground pepper to taste
6 ounces lean salt pork cut into 1/2-inch cubes
2 tablespoons corn, peanut or vegetable oil
24 pearl onions, peeled, about 1 cup
1/2 pound small white mushrooms
1/2 pound carrots, trimmed and scraped and cut into 1/4-inch cubes, about 1 cup
1 teaspoon finely minced garlic
2 tablespoons flour
1 tablespoon tomato paste
2 cups very dry white wine
1 cup fresh or canned chicken broth
2 tablespoons Dijon-style mustard
2 sprigs fresh thyme or 1/2 teaspoon dried
1 bay leaf
2 sprigs fresh parsley
1 sprig fresh rosemary or 1/2 teaspoon dried
2 tablespoons finely chopped parsley

Steps:

  • Sprinkle the rabbit pieces,including the liver, with salt and pepper and set aside.
  • Bring enough water to the boil to cover the salt pork pieces when they are added.
  • Heat the oil in a heavy skillet large enough to hold the rabbit pieces in one layer and add the salt pork cubes. Cook, stirring often, until the pieces are crisp and slightly browned.
  • Remove and set aside the salt pork pieces.
  • Set the rabbit liver aside. Add the remaining rabbit pieces to the fat in the skillet and cook about five minutes. Remove the rabbit pieces and pour off all the fat from the skillet. Return the rabbit pieces to the skillet. Add the onions, mushrooms and carrots. Add the garlic and stir to redistribute the ingredients. Cook about five minutes.
  • Sprinkle with flour and stir so that the ingredients are evenly coated. Add the tomato paste and stir. Add the wine, broth and bring to the boil, stirring from the bottom to prevent sticking. Add the mustard and stir to blend.
  • Tie the thyme, bay leaf, parsley and rosemary into a bundle and add it. Cover closely and cook 40 minutes. Add the rabbit liver and the browned pieces of salt pork. Stir. Cover and continue cooking five minutes. Sprinkle with parsley and serve with noodles or mashed potatoes.

4 cups cooked Wild Rice (see recipe)
1 turkey liver, optional
1 1/2 cups coarsely chopped pecans
8 tablespoons butter
1 cup finely chopped onion
1 cup finely chopped celery
1/4 pound mushrooms, cut into half-inch cubes, about 2 cups
Salt to taste, if desired
Freshly ground pepper to taste

Steps:

  • Prepare the wild rice and set it aside.
  • Preheat the oven to 350 degrees.
  • Finely chop the liver and set it aside.
  • Toast the chopped pecans lightly in a skillet.
  • Heat the butter in a heavy skillet and add the onion and celery. Cook, stirring, until wilted. Add the mushrooms and chopped liver. Add salt and pepper. Cook, stirring, about five minutes.
  • Add the wild rice and pecans and blend thoroughly. Let cool.
  • Stuff and roast the turkey. Heat any leftover stuffing separately in a skillet atop the stove and serve with the carved turkey.

1 carrot, trimmed, scraped and coarsely chopped, about 1 1/2 cups
2 onions, coarsely chopped, about 2 cups
2 sprigs fresh parsley
3 whole cloves
1/4 teaspoon ground cloves
2 bay leaves
1/4 teaspoon sage
12 peppercorns
2 quarts water
Salt to taste, if desired

Steps:

  • Combine all ingredients in a kettle and cook three to six hours or until the liquid is reduced to about three cups.
  • Line a sieve with cheesecloth and strain the stock. Carefully skim or pour off all trace of fat. Cook the clear broth until reduced to two cups.

3 tablespoons butter
1/4 pound shrimp, unpeeled (see note)
1 tablespoon Cognac
2 teaspoons finely chopped shallots
6 tablespoons finely chopped onion
6 tablespoons finely chopped carrots
1/4 cup finely chopped celery
1/2 teaspoon finely minced garlic
1/2 bay leaf
2 sprigs fresh thyme or 1/4 teaspoon dried
1/2 cup dry white wine
1/2 cup fish broth or bottled clam juice
2 sprigs fresh parsley
1/4 cup tomato puree
1/2 cup cored, coarsely chopped fresh tomatoes
1/8 teaspoon cayenne pepper
Salt to taste if desired
Freshly ground pepper to taste
1/2 cup fish veloute (see recipe)
1/4 cup heavy cream

Steps:

  • Heat 1 tablespoon of the butter in a small skillet, and add the shrimp in their shells. Cook, shaking the skillet and stirring, about 5 minutes. Sprinkle with Cognac, and remove from the heat.
  • Heat another tablespoon of butter in another skillet, and add the shallots, onion, carrots, celery, garlic, bay leaf and thyme.
  • Add the wine, broth, parsley sprigs, tomato puree, chopped tomatoes, cayenne, salt, pepper and veloute. Let simmer about 30 minutes. Add the cooked shrimp in their shells and liquid.
  • Pour the mixture into the container of a food processor or electric blender and process until shrimp are coarsely chopped. Do not overprocess.
  • Pour the mixture into a food mill or colander and crush to extract as much liquid as possible from the shells and solids. There should be about 1 1/2 cups. Discard the solids.
  • Return the mixture to a souce-pan and add the cream. Cook, stirring often, about 5 minutes. Swirl in the remaining tablespoon of butter.

2 teaspoons salt
½ cup cooking oil
1 ½ cups chopped onion

1 teaspoon ground turmeric
1 teaspoon ground coriander
1 teaspoon cayenne pepper
1 tablespoon water
1 (15 ounce) can crushed tomatoes
1 cup plain yogurt
1 tablespoon chopped fresh cilantro
1 teaspoon salt
½ cup water
1 teaspoon garam masala
1 tablespoon chopped fresh cilantro
1 tablespoon fresh lemon juice

Steps:

  • Sprinkle the chicken breasts with 2 teaspoons salt.
  • Heat the oil in a large skillet over high heat; partially cook the chicken in the hot oil in batches until completely browned. Transfer the browned chicken breasts to a plate and set aside.
  • Reduce the heat under the skillet to medium-high; add the onion, garlic, and ginger to the oil remaining in the skillet and cook and stir until the onion turns translucent, about 8 minutes. Stir the curry powder, cumin, turmeric, coriander, cayenne, and 1 tablespoon of water into the onion mixture; allow to heat together for about 1 minute while stirring. Mix the tomatoes, yogurt, 1 tablespoon chopped cilantro, and 1 teaspoon salt into the mixture. Return the chicken breast to the skillet along with any juices on the plate.
