4 pounds skin-on, bone-in chicken thighs (about 12), patted dry
Kosher salt, freshly ground pepper
2 tablespoons vegetable oil
8 scallions, white and pale green parts sliced into 1-inch pieces, dark green parts thinly sliced
4 dried chiles de árbol
1 (2-inch) piece ginger, peeled, thinly sliced
1 cup dry white wine
1/2 cup low-sodium soy sauce
3 tablespoons dark brown sugar
2 tablespoons toasted sesame oil
2 cups low-sodium chicken broth, divided
1 acorn squash, halved lengthwise, seeds removed, sliced 1/2-inch thick
1 bunch mustard greens, tough stems removed, leaves torn
2 tablespoons unseasoned rice vinegar
2 teaspoons toasted sesame seeds
Cooked white rice (for serving)

Steps:

  • Lightly season chicken thighs all over with salt and pepper. Heat vegetable oil in a large Dutch oven or other heavy pot over medium-high. Working in 2 batches and pouring off all but 2 Tbsp. fat between batches, cook chicken, skin side down, until skin is browned and crisp, 8-10 minutes. Transfer to a plate, placing skin side up (chicken will not be cooked through at this point).
  • Cook white and pale green parts of scallions, chiles, and ginger in same pot, stirring often, until scallions and ginger are golden, about 3 minutes. Add wine, bring to a simmer, and cook until reduced to about 3 Tbsp., 5 minutes. Add soy sauce, brown sugar, sesame oil, and 1 cup broth and bring to a simmer, stirring to dissolve sugar. Return chicken to pot, placing skin side up and overlapping if needed. Partially cover pot, reduce heat, and simmer until chicken is cooked through, 25-30 minutes. Transfer chicken to a plate.
  • Add squash and remaining 1 cup broth to pot and push in squash so it's mostly submerged. Arrange greens on top. Bring to a simmer, partially cover pot, and cook until squash is barely fork-tender and greens are wilted, 10-12 minutes. Uncover, increase heat to medium, and continue to cook until liquid is reduced by about two-thirds and has the consistency of thin gravy, 10-15 minutes.
  • Remove pot from heat and drizzle vinegar over vegetables. Taste sauce; it should be plenty salty, but season with more salt if needed. Add chicken back to pot, turning to coat in sauce, then scatter dark green parts of scallions and sesame seeds over top. Serve with rice.
  • Chicken can be braised 2 days ahead. Let cool; cover and chill. Reheat covered over low.

A braised dish originally made with rabbit in Provence, given to me by my friend Katja. I've made it many times with chicken thighs, always to rave reviews! Serve with starch of your choice-we love boiled potatoes or even egg noodles.

1 ½ pounds skin-on, bone-in chicken thighs
salt and ground black pepper to taste
1 tablespoon olive oil
2 large yellow onions, sliced and separated into rings
6 cloves garlic, chopped
3 (14 ounce) cans chopped tomatoes with juice
1 cup dry white wine
1 cup water
2 tablespoons grainy mustard
1 tablespoon chicken soup base (such as Better than Bouillon®)

Steps:

  • Season chicken thighs generously on both sides with salt and pepper.
  • Heat oil in a large Dutch oven over medium heat. Add chicken and cook until browned, 3 to 5 minutes per side. Add onions and garlic and saute until onions have softened, 3 to 5 minutes. Add chopped tomatoes and juice.
  • Mix wine, water, mustard, and soup base together in a bowl; pour over other ingredients and bring to a boil. Lower heat to a simmer, cover, and braise until chicken is tender, about 2 hours. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

8 large bone-in chicken thighs
2 medium sweet onion,peeled and chopped
2 garlic cloves,minced
2 c honey mustard,divided
1 c heavy cream
1 packet dry onion soup mix
2 Tbsp red pepper flakes
2 tsp sea salt/black pepper

Steps:

  • 1. Heat olive oil in large skillet over medium heat;cook chicken thighs in the hot oil until browned,about 5 minutes per side.Remove chicken thighs from the skillet.Transfer to a large bowl and set aside.
  • 2. Cook and stir chopped onion in the same skillet until softened,about 5 minutes
  • 3. Stir in garlic;cook and stir until fragrant,about 1 minute.

WHITE WINE-BRAISED RABBIT OR CHICKEN WITH MUSTARD



White Wine-Braised Rabbit or Chicken With Mustard image

2 pounds rabbit or chicken
3 tablespoons oil
1 cup flour
1 large onion, diced
1 cup white wine
2 1/2 cups chicken broth
1 tablespoon mustard
12 sage leaves
1/2 cup sour cream
1 tablespoon dijon mustard
1 teaspoon capers, chopped
1/4 cup chives, sliced
1 pound pasta

Steps:

  • Lay rabbit pieces on a baking sheet and season each piece generously with salt and pepper. (If you are using a pepper mill, adjust it for coarse grind.)
  • Heat oven to 375 degrees. Put a deep, heavy-bottomed, oven-safe saucepan or Dutch oven over medium-high heat and add lard or oil.
  • Put 1 cup flour on a wide plate. Dip seasoned rabbit pieces in flour and dust off excess. Gently set them in the hot oil in one layer without crowding; work in batches if necessary. Adjust heat to keep them from browning too quickly. Cook for about 3 to 4 minutes on each side until nicely browned.
  • Remove browned rabbit from pan and set aside. Add diced onion to fat remaining in pan. Keep heat brisk and cook onions until softened and lightly browned, stirring occasionally, about 5 to 6 minutes. Season with salt and pepper.
  • Sprinkle onions with 2 tablespoons flour and stir until well incorporated, then cook for a minute or so, until mixture starts to smell toasty. Add wine and 1 cup broth, whisking as the sauce thickens. Whisk in remaining broth and the whole-grain mustard and bring to a simmer. Taste for salt and adjust.
  • Return browned rabbit pieces to the sauce. Add thyme and sage. Cover pot and bake for 45 minutes to 1 hour, until meat is fork tender. (Alternatively, simmer over low heat, covered, on the stove top, for about the same amount of time.)
  • Using tongs, remove rabbit pieces from sauce, set aside, and keep warm. Put saucepan over medium heat and bring contents to a simmer. Whisk in crème fraîche, Dijon mustard and capers and simmer until somewhat thickened, about 5 minutes. Taste sauce and adjust.
  • Transfer rabbit to a warmed serving bowl and ladle the sauce over. Sprinkle generously with chives and a little freshly ground pepper. Accompany with noodles if desired.

12 chicken thighs, trimmed of excess skin and fat
1 cup thinly sliced onion
3 tablespoons plus 1 teaspoon thyme leaves
2 chiles de arbol, thinly sliced on the diagonal
2 fresh bay leaves, thinly sliced, or 2 dried leaves, crumbled
3/4 cup dry vermouth
2 cups fresh breadcrumbs
5 tablespoons unsalted butter
2 tablespoons chopped flat-leaf parsley
1/2 cup finely diced shallots
1/2 cup dijon mustard
1 extra-large egg
2 teaspoons chopped tarragon
2 tablespoons extra-virgin olive oil
3/4 cup chicken stock
Braised leeks (recipe above)
kosher salt and freshly ground black pepper
Leeks
6 large leeks - ½ to 3/4 cup olive oil - 1 cup sliced shallots - 1 tablespoon thyme leaves - 1/2 cup dry white wine - 1 1/2 to 2 C chicken or veg stock or water - salt and pepper.

Steps:

  • Place chicken thighs in a large bowl with sliced onion, 2 T thyme, chiles, bay leaves, and 1/4C vermouth. Using your hands, toss to coat the chicken well. Cover and refrigerate at least 4 hours, preferably overnight. Place the breadcrumbs in a med bowl. Heat large saute pan over med heat for 1 minute. Add 3 T butter, and cook until it's brown and smells nutty. Use a rubber spatula to scrape brown butter over the breadcrumbs. Wait 1 min, and then toss w/ parsley and 1 T thyme. Preheat the oven to 375°F.Return the saute pan to med heat for 1 min. Swirl in the remaining 1T butter, and when it foams, add shallots and remaining 1 t thyme. Saute about 2 mins, until shallots are translucent. Add remaining 1/2 cup vermouth and reduce by half. Transfer to a bowl and let cool a few mins. Whisk in the mustard, egg, chopped tarragon, and a pinch of black pepper. Bring chicken to room temperature. Discard seasonings, and pat dry with paper towels. After 15 mins, season the thighs well on both sides with salt and pepper. Return the same saute pan to high heat for about 2 mins. Swirl in olive oil, and wait 1 min. Place chicken thighs in the pan, skin side down, and cook 8 to 10 mins, until the skin is a deep golden brown. Turn the thighs over and cook a minute or two on the other side. Place chicken on the leeks. Turn off heat and discard the fat. Add chicken stock to the pan, and scrape to release the crispy bits. Pour the chicken stock over the braised leeks. Toss the chicken thighs in the bowl with the mustard mixture, slathering them completely, and then rearrange them over the braised leeks. Spoon any remaining mustard mixture over the chicken thighs. Top each thigh with breadcrumbs, patting with your hands to make sure they get nicely coated. (You want lots of mustard mixture and lots of breadcrumbs.) Bake about 40 mins, until the chicken is just cooked through. Turn the oven up to 475°F and cook the chicken thighs another 10 mins, until the breadcrumbs are golden brown.

This is a wonderful chicken recipe. It calls for all fresh herbs, but I often use the dried ones. I just use a little less. I love it with brown rice with cranberries and a salad.

1 (3 1/2 lb) chicken, cut up into pieces
3 tablespoons olive oil
2 tablespoons thyme, minced
3 teaspoons marjoram, minced
1 1/2 teaspoons dry mustard
1 tablespoon garlic, minced

2 tablespoons garlic, minced
1 cup dry white wine
1 cup chicken broth
6 tablespoons Dijon mustard

Steps:

  • Mix together - 1 T oil, 1T thyme, 1-1/2 t marjoram, 1-12 dry mustard. Rub on chicken pieces. Refrigerate chicken for 2 hours to overnight.
  • Salt and pepper chicken. Heat oil and brown chicken. Transfer to bowl. Saute onion until tender, add garlic(2min). Add wine, broth, dijon, 1T thyme, 1-1/2 marjoram, and 1/2t rosemary. Bring to boil. Return chicken to pot. Cover and simmer about 45 minutes or until done. Remove and simmer sauce until thickened. Serve over chicken.

5 tablespoons Dijon mustard
2 shallots, thinly sliced
2 garlic cloves, minced
1 cup white wine (whatever you're pouring will work best)
1/2 cup heavy cream
1/2 cup toasted sliced almonds
1/4 cup tarragon, minced • 10 ounces spinach

Steps:

  • 1. Preheat the oven to 400° F. Cover the chicken thighs in 4 tablespoons of the mustard and season with salt. Heat 2 tablespoons of cooking oil in a heavy-bottomed sauté pan over medium-high heat, then add the chicken thighs, skin side down. After the skins have browned, remove the chicken thighs and reserve. 2. Add the sliced shallots and cook until soft, around 3 to 4 minutes, then add the garlic and cook for an additional 30 seconds. Add the wine and scrape up the browned bits on the pan with a spatula. When the wine comes to a boil, reduce the heat to a simmer, then add the chicken thighs back to the pan, skin side up. Add water if necessary so that the liquid level reaches three-quarters of the way up the chicken, then place the pan in the oven for 30 minutes. 3. While the chicken is cooking, bring salted water to a boil in a medium-size pot. Add the spinach and cook until bright green, around 2 to 3 minutes, strain and reserve. 4. When the chicken is done, remove the pan from the oven, and then remove the chicken from the pan and reserve. Strain the sauce, reserving the shallots. Sauce Ingredients:
2 rabbit thighs (weighing 550g or 1.2 lbs)(Chicken can be used instead)
2 tbsp olive oil
2 large cloves of garlic, crushed and roughly chopped
1 cup or 250 ml low-sodium chicken or vegetable broth
1 tsp dried sage, crumbled
3-4 german style or smooth grainy mustard
1 heaping tbsp honey, or to taste
salt, to taste
ground black pepper, to taste

Steps:

  • Heat the oven to 200c or 390f, prepare a baking dish and set aside. Combine all sauce ingredients in a bowl until well incorporated. Taste and adjust if desired, then set aside. Using a sharp knife, gently puncture small whole into the thights. Then rub with a little bit of salt and black pepper, set aside. Heat oil until hot, then add rabbit. Allow to brown on all sides as evenly as possible. Once browned use a slotted spatula to remove and place in baking dish. In the same pan, and oil, fry the garlic just until soft, make sure it doesn't burnt. Remove the garlic from pan and add to rabbit. Pour the mustard sauce into baking dish. Place in center of oven and cook for 1 hour. Halfway through flip the rabbit and cook for 20 minutes, then flip back for the remaining 10. Sauce should have thickened and halved. Remove from oven and allow to sit for 5 minutes before serving. Serve with sauce and desired side dishes. *Serve the rabbit with steamed white rice and sautéed green beans. It can also be served with potatoes - mashed or boiled or roasted, and green vegetable of choice.*

4 bone-in, skin-on medium chicken thighs (1-1/2 to 1-3/4 lb.)
4 chicken drumsticks (1-1/4 to 1-1/2 lb.)
Kosher salt and freshly ground black pepper
2 Tbs. vegetable oil
2 medium apples such as Rome, Spy, or Mutsu, peeled, cored, and cut into sixths
2 cups dry hard apple cider
1/4 cup Dijon mustard
3 large marjoram sprigs
1/4 cup heavy cream
1 Tbs. chopped fresh marjoram

Steps:

  • Position a rack in the center of the oven and heat the oven to 350ºF. Season the chicken pieces generously with salt and pepper. In a straight-sided 10- or 11-inch ovenproof sauté pan with a lid, heat the oil over mediumhigh heat until very hot. Arrange the chicken pieces skin side down in the pan (it'll be crowded), cover with a splatter screen, if you have one, and cook until deeply browned, about 5 minutes. Turn the pieces over and cook until the other sides are deeply browned, 3 to 5 minutes more. Transfer to a plate. Pour out and discard all but 1 Tbs. of the fat from the pan. Set the pan aside to cool for a few minutes. Return the pan to medium-high heat, add the apple pieces, and cook, turning once, until both cut sides are golden brown, about 2 minutes per side. 1 tablespoon grapeseed or other neutral oil
2 medium shallots, halved and thinly sliced
2 medium garlic cloves, minced
1 tablespoon all-purpose flour
2 cups low-sodium chicken broth
1/4 cup plain whole-milk yogurt
2 tablespoons chopped fresh tarragon

Steps:

  • Heat the oven to 450°F with a rack in the middle position. In a small bowl, stir together both mustards and ½ teaspoon each salt and pepper; set aside. Season the chicken on both sides with salt and pepper. In a 12-inch skillet over medium-high, heat the oil until shimmering. Add the chicken skin side down and cook without disturbing until golden brown, 5 to 8 minutes. Remove the pan from the heat. Pour off and discard all but 2 tablespoons of fat in the skillet and return the pan to medium. Add the shallots, garlic and flour, then cook, stirring often, until the mixture is light golden brown, about 3 minutes. Add the broth and bring to a boil over medium-high, scraping up any browned bits. Return the chicken pieces skin side up to the skillet and pour in the accumulated juices. Place the pan in the oven and cook until the thickest part of the thigh reaches about 175°F, 15 to 20 minutes. Transfer the chicken skin side up to a platter. Set the skillet over medium-high (the handle will be hot) and bring the cooking liquid to a simmer. Cook, stirring occasionally, until the mixture is slightly thickened and a spoon drawn through the sauce leaves a trail, 5 to 8 minutes. Off heat, stir in the remaining mustard mixture, the yogurt and tarragon. Taste and season with salt and pepper, then spoon the sauce around the chicken.
